1/4 cup lard (preferred) or neutral oil
4 eggs
Salt and pepper
2 tablespoons mint, preferably spearmint
2 tablespoons chopped onion

Steps:

  • Heat the lard or oil in a 10-inch cast-iron or nonstick skillet. Meanwhile, beat the eggs with the remaining ingredients.
  • When the oil is shimmering but not quite smoking (you can test it with a drop of the egg - it will sizzle and puff up), add the egg mixture all at once. It will puff up and begin to brown. As it does, turn it (in sections, though you can try to turn it all at once), so that uncooked parts brown as well.
  • Serve hot, with tomato salsa if you like.

Variations of this hearty fried egg-and-potato dish can be found throughout Spain, including the Canary Islands, where it's said to have originated. There's always a runny egg, but whether it sits atop fried potato rounds, French fries or crunchy chips varies by region and personal preference. The potatoes are often served with chorizo sausage or Serrano ham, but in this vegetarian version, smoked paprika and red-pepper flakes mimic chorizo's flavor and heat. Pierce the eggs just before serving so the golden yolks coat the potatoes with a glossy sauce. Serve with sautéed greens or a crisp salad dressed with a lemon vinaigrette. This one-pan meal is good with a cup of coffee or a beer - it's breakfast, lunch or dinner material.

1/3 cup extra-virgin olive oil, plus more as needed
2 teaspoons smoked paprika
1/2 teaspoon red-pepper flakes or 1/4 teaspoon ground cayenne
Kosher salt and black pepper
2 pounds new potatoes, cut into 1-inch pieces if necessary
1 medium onion, finely chopped
4 garlic cloves, finely chopped
4 eggs
Lemon wedges, for serving
Flaky sea salt, for serving

Steps:

  • In a measuring cup, combine the olive oil, paprika, red-pepper flakes, 1 1/2 teaspoons salt, a generous grind of pepper and 1 cup water. Put the potatoes in a large skillet and pour the olive oil mixture over them. Bring to a boil, then cover and cook on high until the potatoes are fork-tender, 6 to 9 minutes.
  • Uncover and turn the heat to low. If the potatoes are sticking or dry, add more olive oil. Arrange the potatoes in an even layer, cut side down if halved, then add the onion and garlic surrounding the potatoes. Cover and cook until the potatoes are golden-brown and the onions are softened, 4 to 6 minutes.
  • Stir the potatoes (if they're sticking, add more oil). Make 4 nests in the potatoes and crack an egg into each. Season with salt and pepper. Cover and cook until the whites are set and the yolks are still runny, 4 to 6 minutes.
  • To serve, break the yolks gently with a serving spoon, then scoop some potatoes and an egg onto plates or into shallow bowls. Serve with a squeeze of lemon and flaky salt.

The name pretty much says it all: This is a simple breakfast dish of eggs scrambled with chorizo. As with most simple dishes, the quality of ingredients really matters, so try to find good -- in this case, fatty and spicy -- chorizo to carry the dish. The amount of fat it renders while frying will determine how much extra oil you'll need to add. Mexican chorizo is sold either loose or in links; if yours is the latter, remove it from the casing to fry.

2 plum tomatoes, diced
1/2 jalapeno, diced (seeded if desired)
1/2 small red onion, diced
1/2 cup fresh cilantro leaves, roughly chopped (reserve some for garnish)
Juice of 1/2 lime
Kosher salt and freshly ground black pepper
2 to 3 tablespoons vegetable oil
1 pound fresh Mexican chorizo, casings removed
1 small white onion, finely chopped
8 large eggs
1 tablespoon unsalted butter
Eight 6-inch flour tortillas, warmed, for serving
2 avocados, peeled, pitted and sliced

Steps:

  • For the pico de gallo: Combine the tomatoes, jalapeno, onion, cilantro and lime juice in a small bowl. Season with salt and pepper. Set aside.
  • For the eggs: Heat 2 tablespoons oil in a large nonstick skillet over medium-high heat. Add the chorizo and cook, breaking up the meat into big chunks, until well-browned, about 4 minutes. If the mixture seems dry, add another tablespoon of oil. Add the onion and cook, stirring, until tender (reduce the heat if the onion browns too quickly), about 3 minutes. Turn the heat to medium-low.
  • Beat the eggs in a bowl until frothy. Stir the butter into the skillet. When it has just melted, pour the eggs over the chorizo and stir constantly with a wooden spoon or rubber spatula until they are just set. Garnish with the reserved cilantro and serve with the tortillas, avocado and pico de gallo.

Huevos Revueltos - With Prawns and Baby Spinach image

A variation of a popular tapas dish from Seville, the southern Spanish city acknowledged as the birthplace of the tapas tradition. When "Australian Vogue + Travel" magazine writer Terry Durack ate at his favourite tapas bar, the house specialty 'cola de toro' (bull's tail) was unavailable and he found that everyone was eating 'huevos revueltos acelgas y agulas' which he described as "a juicy, loose dish of scrambled eggs with silver beet and tiny elvers (baby eels)". Now as an ingredient, tiny elvers are probably hard for most of us to track down! Terry Durack now makes his 'huevos revueltos' with spinach and prawns. This is my adaptation of his recipe which I found in the August/September 2005 issue of "Australian Vogue + Travel". He described the 'huevos revueltos' he ate in Seville as 'divine'. An apt description of this dish, and as an added bonus it's a quick and easy one to whip up. If the list of ingredients appeals to you, you'll love this recipe.

400 g baby spinach leaves
2 tablespoons olive oil
sea salt, to taste
fresh ground black pepper, to taste
6 medium eggs or 5 large eggs
1 tablespoon flat leaf parsley, roughly chopped
1/2 teaspoon spanish paprika
1/2 teaspoon oregano
3 garlic cloves, crushed
1 onion, finely chopped
200 g cooked prawns, peeled

Steps:

  • Wash the baby spinach leaves, then steam in the water still on the leaves, for about 1 minute or until the leaves are just beginning to wilt.
  • Drain the baby spinach leaves well, lightly squeeze dry, then toss in a bowl with a little olive oil, and sea salt and freshly ground pepper to taste.
  • Break the eggs into a separate bowl, add the parsley, paprika, oregano, sea salt and freshly ground pepper to taste, then lightly whisk together.
  • Heat the oil in a non-stick pan and sauté the finely chopped onion and crushed garlic until it begins to soften but not brown.
  • Add the prawns for a minute or two, tossing or stirring.
  • Add the spinach, and continue to toss the ingredients in the pan.
  • Pour the seasoned eggs into the spinach mixture, and stir gently over a medium heat, pausing for several moments at a time to allow the mixture to begin to set.
  • If you want to be faithful to the spirit of the original Sevillian recipe, remove the pan from the heat while the eggs are still a little runny; or if - like me - you really do prefer your eggs not to be runny, leave them over the heat for just that bit longer.
  • Serve immediately with warm crusty rolls.
  • Variations: I have not tried these variations, but I think this basic recipe would also taste great with proscuitto, ham or bacon, which most of us are more likely to have on hand at all times. Or even with left-over chicken.

Steps:

  • Place chorizo sausage in a skillet over medium-high heat; cook and stir until sausage is browned and cooked through, about 5 minutes.
  • Stir eggs into the sausage; cook and stir until eggs are set and scrambled with the chorizo, 3 to 5 minutes.
  • Warm corn tortillas on an electric skillet until they are heated through, about 2 minutes.
  • Place egg and chorizo into corn tortillas.
