Homemade Cranberry Sauce image

Our sugar free Cranberry Sauce is nearly as easy to make as popping open a can, but it's much healthier! Yield: 2 cups

12 oz cranberries, (fresh or frozen)
3/4 c pure apple cider
1/3 c pure maple syrup ((or honey for a sweeter and lighter flavor))
1 orange, (zested)
Pinch nutmeg

Steps:

  • Rinse the cranberries, if they are fresh and place them in a medium saucepan.
  • Add the remaining ingredients and mix to combine.
  • Bring the mixture to a boil. Reduce the heat and simmer, uncovered, 10 minutes, stirring often, until the mixture has thickened slightly.
  • Remove the sauce from the heat and allow it to cool completely before serving. The sauce will continue to thicken as it cools.

Sugar-Free Cranberry Sauce. Takes 15 minutes to make and sweetened with stevia.

Number Of Ingredients 6

2 - 340 g or 12 oz bags fresh cranberries. (6 cups cranberries)
2 tsp orange zest
Juice of 1 large navel orange (approx ¼ cup juice)
¼ cup + 2 Tbsp water
¼ tsp (or to taste) pure white stevia powder ( I use this one from NuNaturals. This is the most concentrated form of stevia. If using packets, add enough to taste)
½ tsp vanilla extract

Steps:

  • In a medium saucepan, add the cranberries, orange zest, orange juice and water.
  • Cover with a lid, and heat over medium to medium high heat for about 10 minutes.
  • Lift off the lid, and give the cranberries a stir with a wooden spoon, they should be sauce at this point.
  • From here, add in the stevia, tasting as you go to get it to the sweetness level you want.
  • Once you're happy with the level of sweetness, add the vanilla and stir.
  • Allow to cool to room temp. Serve at room temp or if not using, put in an airtight container and keep in the fridge. Unused portions should freeze well.

2/3 cup water
2 cups fresh cranberries or 2 cups frozen cranberries
1 cup Equal sugar substitute (or 24 packets Equal sugar substitute or 7 1/4 teaspoons Equal sugar substitute)

Steps:

  • Combine water and cranberries in a medium saucepan. Bring just to boiling; reduce heat.
  • Boil gently, uncovered, over medium heat 8 minutes, stirring occasionally (skins will pop).
  • Remove from heat mash slightly.
  • Stir in Equal; cover and chill.
