4 (6 inch) corn tortillas
1 cup refried beans with green chilies
1 teaspoon butter
4 eggs
1 cup shredded Cheddar cheese
8 slices bacon, cooked and crumbled
½ cup salsa

Steps:

  • Heat oil in a small skillet over medium-high heat. Fry tortillas one at a time until firm, but not crisp. Remove to paper towels to drain grease.
  • Meanwhile, combine the refried beans and butter in a microwave-safe dish. Cover, and cook in the microwave until heated through. When tortillas are done, fry eggs over easy in the skillet. Add more oil if the tortillas have absorbed it all.
  • Place tortillas onto plates, and spread a layer of beans on them. Top with cheese, a fried egg, crumbled bacon and if desired, salsa.

15 small corn tortillas, each cut into 6 wedges
3 tablespoons vegetable oil
1 1/2 teaspoons ground cumin
1/2 teaspoon chili powder
Kosher salt and freshly ground pepper
1 dried ancho chile pepper, stemmed
1 14.5-ounce can tomato sauce
1 scallion, roughly chopped
1 jalapeño pepper, thinly sliced
1/2 cup packed fresh cilantro, plus more for topping
1 16-ounce can chili beans in sauce
12 large eggs
1 ripe avocado, chopped
1/2 cup crumbled Cotija cheese
Lime wedges, for serving

Steps:

  • Preheat the oven to 425 degrees F. Line a rimmed baking sheet with foil. Add the tortilla wedges, drizzle with the vegetable oil and sprinkle with 1/2 teaspoon cumin, the chili powder, 1/2 teaspoon salt and a few grinds of pepper; toss until well coated. Spread on the baking sheet in a single layer and bake, stirring occasionally, until crisp, 20 to 30 minutes.
  • Meanwhile, combine the ancho chile and 1/4 cup hot water in a blender. Let stand until the chile is softened, about 5 minutes. Add the tomato sauce, scallion, half the jalapeño slices, the cilantro, remaining 1 teaspoon cumin, ½ teaspoon salt and a few grinds of pepper; puree until smooth. Lightly mash the chili beans in their sauce in a medium bowl until chunky.
  • Remove the tortillas from the oven. Drizzle with about 1/2 cup of the ancho sauce and top evenly with the mashed beans. Crack the eggs on top, spacing them out; season with salt and pepper. Gently run a rubber spatula through any thick egg whites to break them up and help the eggs cook more evenly. Bake until the egg whites are opaque, 15 to 20 minutes.
  • Drizzle with 1 cup more ancho sauce. Top with the avocado, cheese, remaining jalapeño slices and more cilantro; serve with lime wedges and the remaining ancho sauce.

The eggs in this beloved breakfast dish are sauced with a ranchero-style sauce of roasted tomatoes, spicy ancho chiles and smoky chipotles. To make breakfast easier, make the sauce ahead of time and reheat to serve, adding a bit of water to thin if necessary.

1 pound ripe plum tomatoes
3 large cloves garlic, unpeeled
1 small onion (about 6 ounces), quartered
2 ancho chiles, stems and seeds removed
1/2 to 3/4 teaspoon chopped chipotle in adobo, plus 1/2 to 3/4 teaspoon adobo sauce
Kosher salt
1 tablespoon vegetable oil
One 15-ounce can pinto beans, drained with liquid reserved
1 tablespoon vegetable oil
Kosher salt
2 to 3 tablespoons vegetable oil
8 corn tortillas
8 large eggs
Kosher salt
1/2 cup crumbled Cotija cheese
1/4 cup fresh cilantro leaves, roughly chopped
2 tablespoons finely chopped white onion

Steps:

  • For the ranchero sauce: Preheat the oven to 500 degrees F and put the tomatoes, garlic cloves and onion on a rimmed baking sheet. Roast the vegetables, turning occasionally, until blistered and charred in spots, about 35 minutes. When cool enough to handle, remove the papery skins from the garlic.
  • Meanwhile, bring a small pot of water to a boil. Add the ancho chiles, cover, and remove from the heat. Let sit for 10 minutes, then drain and pat dry.
  • Put the vegetables and any juices from the baking sheet into a blender. Add the ancho chiles, 1/2 teaspoon each chopped chipotle and adobo sauce and 1/2 teaspoon salt and blend until fairly smooth. Taste; if you want the sauce spicier, stir in the remaining chopped chipotle and adobo sauce.
  • Heat the oil in a medium pot over medium heat. Add the sauce (it will sizzle) and 1/3 cup water and cook, stirring, until thickened but pourable, about 5 minutes. Taste and season with salt as necessary. Cover and keep warm over low heat. If the sauce thickens too much, add 1 tablespoon of water at a time to thin it out.
  • For the refried beans: Put the beans in a medium bowl with about half of their reserved liquid and mash with a potato masher until smooth. Heat the vegetable oil in a medium nonstick skillet over medium heat until shimmering, then add the mashed beans and a big pinch of salt and mash again until smooth. Cook, stirring and scraping with a rubber spatula, until heated through. If the beans seem dry, add some more of the reserved liquid until they are creamy. Taste, season with salt if necessary and cover and keep warm over low heat.
  • For serving: Preheat the oven to 200 degrees F and line a baking sheet with paper towels. Heat 2 teaspoons vegetable oil in a medium skillet over medium heat until shimmering. Add 1 tortilla and cook until the underside blisters, about 15 seconds. Flip the tortilla with tongs and continue to cook until the underside blisters, about 15 seconds. Remove from the pan to the lined baking sheet. Repeat with the remaining 7 tortillas, adding more oil if necessary. Spread about 2 tablespoons of the refried beans on each tortilla and keep warm in the oven.
  • Using the same skillet the tortillas were fried in, heat 1 tablespoon oil until shimmering, about 1 minute. Crack 4 eggs into the skillet and cook until the edges are crispy and whites are almost set. Cover the skillet with a big pot lid and cook until the whites are completely set, 1 more minute. Remove the tortillas from the oven, top four with an egg, then return to the oven and repeat with the 4 remaining eggs.
  • Top the remaining tortillas with the remaining eggs. Sprinkle each with a pinch of salt, some ranchero sauce, Cotija cheese, cilantro and onion. Serve immediately.

1 1/2 cups dried black beans
3 large cloves garlic
1 dried chipotle chili
Sea salt, to taste
5 tablespoons lard, goose or duck fat, or corn oil
6 large, ripe tomatoes (about 2 1/2 pounds)
2 serrano chilis
2 poblano chilis
1 large white onion
1 bunch cilantro, plus a bit for garnish
Butter, for frying
8 large eggs
Sour cream, for garnish

Steps:

  • Place the beans, two of the garlic cloves and the chipotle chili in a saucepan, cover with water in a saucepan and simmer until the beans are very soft. Drain, season with salt to taste, and discard the chili. (The beans may be prepared in advance and refrigerated, but should be allowed to return to room temperature prior to frying.)
  • Melt three tablespoons of the lard over medium heat in a heavy bottomed frying pan. Mash the cooked beans with a potato masher or large spoon, to prevent spattering, and add to the pan. Fry until the beans have a firm but fairly smooth consistency; set aside and keep warm.
  • Place the tomatoes in a heavy pan or on a griddle, either under the broiler or on top of the stove, and roast until the skin blisters and blackens. Do not peel.
  • Over an open flame or under the broiler, roast the poblano and serrano chilis until their skin blisters and starts to blacken. Peel the poblanos and slice them into long, thin strips. (The smaller serranos need not be peeled.)
  • Finely chop the onion and the remaining garlic, melt the remaining lard in a heavy-bottomed frying pan, and add the onions and garlic to it. Cook over medium to low heat until cooked through but not browned. Core the roasted tomatoes. In a food processor or mill, make a rough puree of the tomatoes, with their skins, and the roasted serrano chilis. Add the puree to the cooked onion and garlic. Firmly tie the bunch of fresh cilantro and add it. Cook for 15 minutes over medium heat, or until the sauce thickens a little. Season to taste with salt. Remove and discard the cilantro.
  • Fry the eggs sunnyside up in a little butter. Spoon generous quantities of salsa ranchero onto plates and place two fried eggs on top of each serving. Criss-cross strips of roasted poblano chili on top of the eggs. Serve the beans on the side and garnish with a spoonful of sour cream and a sprig of cilantro.

5 corn tortillas, cut 4 of them in half
14 oz black beans, 1 can
1 cup mexican blend cheese
1 ½ cups pico de gallo
6 eggs
½ cup red enchilada sauce
fresh cilantro, to taste
cotija cheese, to taste
1 cup cream mexicana, or sour cream

Steps:

  • Preheat your oven to 375˚F (190˚C)
  • In vegetable oil, lightly fry your corn tortillas. Drain on a paper towel.
  • In a 9 inch (25cm) cast iron skillet, arrange your lightly fried tortillas so they cover the bottom of the skillet.
  • Add black beans evenly over tortillas. (Some will fall in-between the tortillas, thats ok!)
  • Sprinkle Mexican blend cheese over the black beans.
  • Add pico de gallo on top of the cheese.
  • Using the back of a large spoon, create 6 wells in the pico de gallo for the eggs to rest in.
  • Crack one egg into each well (6 wells for 6 eggs).
  • Pour enchilada sauce over everything!
  • Bake for 20-25 minutes. Check on it often to make sure your yolks don't overcook!
  • Top with your favorite huevos rancheros toppings.
  • Enjoy!

1 small onion, finely chopped

Fried eggs on warm corn tortillas, topped with cooked tomato salsa - it's a classic dish, though I probably make it a little differently than they do at your neighborhood Tex-Mex restaurant. This recipe makes for an easy supper or a great Mexican breakfast.

8 corn tortillas
2 pounds fresh ripe tomatoes, peeled and coarsely chopped
2 to 3 serrano or jalapeño chiles, seeded for a milder sauce, and chopped
2 garlic cloves, peeled, halved, green shoots removed
1/2 small onion, chopped
2 tablespoons canola oil
Salt to taste
4 to 8 eggs (to taste)
Chopped cilantro for garnish

Steps:

  • Wrap the tortillas in aluminum foil, and heat in a 350-degree oven while you prepare the salsa and fry the eggs.
  • Place the tomatoes, chiles, garlic and onion in a blender and puree, retaining a bit of texture.
  • Heat 1 tablespoon of the canola oil over high heat in a large, heavy nonstick skillet, until a drop of puree will sizzle when it hits the pan. Add the puree and cook, stirring, for four to ten minutes, until the sauce thickens, darkens and leaves a trough when you run a spoon down the middle of the pan. It should just begin to stick to the pan. Season to taste with salt, and remove from the heat. Keep warm while you heat the tortillas and fry the eggs.
  • Warm four plates. Fry the eggs in a heavy skillet over medium-high heat. You won't need much oil if you have another nonstick skillet. Use the remaining tablespoon of oil if necessary. Cook them sunny side up, until the whites are solid but the yolks still runny. Season with salt and pepper, and turn off the heat. Place two warm tortillas on each plate, overlapping if you are only serving one egg. Top with one or two fried eggs. Spoon the hot salsa over the whites of the eggs and the tortillas, leaving the yolks exposed if possible. Sprinkle with cilantro and serve.

2 mild to medium-hot dried chilies (such as New Mexico or Anaheim), cut in half lengthwise, seeds removed
1 small yellow onion, cut lengthwise into 6 wedges with a bit of root end attached
2 tablespoons canola oil
3 cloves garlic, skin on
1 jalapeno chile
2 canned chipotle peppers in adobo sauce
5 whole canned tomatoes, without juice
1/2 teaspoon dried oregano
1/2 teaspoon ground cumin
1 teaspoon coarse salt
1/4 teaspoon freshly ground black pepper
1 teaspoon honey
1 tablespoon freshly squeezed lime juice
8 large eggs
8 corn tortillas (6 inches each), warmed
Cotija, Chihuahua, or Monterey Jack cheese, shredded, for serving
Cilantro, coarsely chopped, for serving
Sour cream, for serving

Steps:

  • Preheat oven to 450 degrees.
  • Place a large cast-iron skillet over high heat. Add dried chiles to dry skillet and toast on all sides, pressing down on them with a spatula, about 1 minute per side. Remove from heat and place in a large bowl; pour 1 1/2 cups boiling water over chiles, and place a small heatproof plate on top to keep them submerged. Let soak for 20 minutes.
  • Add a teaspoon of oil to the skillet and swirl to just coat the bottom. Add onion, garlic, and jalapeno. Cook until charred on all sides, about 8 minutes, removing garlic if skins begin to burn. Remove skins from garlic and place in the jar of a blender. Cut jalapeno in half lengthwise, removing ribs and seeds; add to blender along with onion, chipotle peppers, tomatoes, oregano, cumin, salt, pepper, honey, chiles, and their soaking liquid. Blend until smooth. In the same skillet over high heat, heat remaining 5 teaspoons canola oil until almost smoking. Add sauce to the pan, being careful as it will splatter. Bring to a boil, reduce heat and simmer about 2 minutes. Stir in lime juice, and remove the skillet from the heat. Crack eggs into the skillet and transfer to oven. Cook until egg whites are cooked through and yolks are still runny, about 5 minutes.
  • Place 2 tortillas each on 4 individual plates. Top each with 2 eggs and sauce. Garnish as desired with cheese, cilantro, and sour cream.
