One 14.5-ounce can diced tomatoes, drained and juice reserved
Salt and freshly ground pepper
One 15-ounce can cannellini beans, drained and rinsed well
One 15-ounce can red beans, drained and rinsed well
2 tablespoons torn fresh basil
3 pita pockets, each cut into 8 wedges
One 8-ounce package cream cheese, softened

Salt and fresh ground pepper
1 cup Tuscan Beans, reserved from Grilled Sausage with Tuscan Beans, recipe above
1/2 medium red onion, diced

  • Preheat a grill over medium heat.
  • Place the sausages on the grill and cook until cooked through, 20 to 25 minutes, turning every 4 to 5 minutes.
  • In a large bowl, whisk together the olive oil, red wine vinegar, garlic, Italian seasoning, reserved juice from the can of tomatoes and season with salt and pepper. Reserve 3 tablespoons of the dressing for the Round 2 Recipe Three Layer Bean Dip. Add the beans, diced tomatoes and basil, and toss to coat. Reserve 1 cup of the bean mixture for the Round 2 Recipe Three Layer Bean Dip. Serve the remaining beans with the grilled sausage.
  • Round 2 Recipe - Three Layer Bean Dip:
  • Preheat the oven to 350 degrees F.
  • Spread the pita wedges on a baking sheet. Toast in the oven until crispy, about 10 minutes. Let cool completely
  • In a small bowl, combine the cream cheese and lemon zest and mix until smooth. Spread the cream cheese mixture into the bottom of a medium dip bowl.
  • In the bowl of a food processor, combine the red beans, reserved dressing and a generous pinch of salt and pepper, and puree until smooth. If the mixture is too thick, then add a few tablespoons of water to thin. Spread the bean puree over the cream cheese mixture.
  • Combine the reserved Tuscan Beans with the red onions and spoon on top of the pureed beans. Serve with toasted pita chips on the side.

SAUSAGE AND BLACK BEAN DIP

Sausage and Black Bean Dip image

This dip, packed with sausage, salsa, and cheese, is both creamy and chunky, making it a hearty snack for one or a group. Try this dip instead of ready-made queso at your next gathering (or just enjoy it solo; we won't tell).

Provided by JimmyDean

Categories     Appetizers and Snacks     Dips and Spreads Recipes     Bean Dip Recipes

Time 20m

Yield 4

Number Of Ingredients 10

2 (15 ounce) cans black beans, drained
¼ cup sour cream or plain yogurt
½ teaspoon minced garlic
¼ teaspoon salt
1 tablespoon canola or vegetable oil
1/2 (1-pound) Jimmy Dean Premium Pork Hot Sausage
2 tablespoons salsa
2 tablespoons shredded Cheddar or Mexican cheese blend
2 tablespoons sour cream
1 tablespoon roughly chopped cilantro

Steps:

  • In a food processor, mix beans, 1/4 cup sour cream, garlic, and salt. Pulse until smooth.
  • Heat 1 tablespoon of oil in a small frying pan over medium-high heat for about 30 seconds. Add Jimmy Dean sausage and cook for 8 to 10 minutes until browned, stirring frequently to break up the sausage into small pieces, then drain. Move the sausage to a separate pot and set aside.
  • Add the black bean mixture to the Jimmy Dean sausage. Bring to medium heat and stir often until dip is hot, about 5 minutes.
  • Spoon the hot dip into a bowl and top with salsa, cheese, remaining sour cream, and cilantro.
  • Serve with chips or in a tortilla, and enjoy!
