HUNAN PEPPERED PORK
An authentic, mouth-burning but delicious Hunan recipe served by my grandmother, who was born and grew up in the heart of Hunan province.

Steps:
- Heat 1 tablespoon oil in a wok or large skillet over medium-high heat until smoking; saute garlic and ginger until fragrant, 30 seconds to 1 minute. Add pork to wok; cook and stir until cooked through, 5 to 7 minutes. Transfer pork to a plate.
- Pour remaining 2 tablespoons oil into the same wok over medium-high heat; saute chile peppers until well-coated with oil and fragrant, about 2 minutes. Add pork to chile peppers and generously season with salt. Cook and stir mixture until peppers are tender, 5 to 7 minutes more. Mix enough soy sauce into pork mixture to add color and taste for desired saltiness.

Steps:
- Combine all sauce ingredients, mix thoroughly and set aside.
- Heat wok over high heat for 40 seconds; add peanut oil. When wisp of white smoke appears, add sliced pork and stir until meat lightens in color.
- Add all vegetables and stir until coated, about 1 to 2 minutes. Add sauce and continue stirring until sauce thickens. Sprinkle sesame oil onto vegetables and mix.
- Place noodles on serving platter, cover with vegetable and pork mixture and serve.

Steps:
- Mix first 4 ingredients until blended.
- Heat oil in wok or large skillet on high heat. Add peppers, ginger and garlic; cook and stir 30 sec. Add meat; cook and stir 5 to 6 min. or until done.
- Stir in dressing mixture; bring to boil on medium-high heat, stirring frequently. Spoon onto platter; top with cilantro.

- 1. Trim silver colored connective tissue from pork tenderloin. Cut crosswise into two inch slices. Place slices on round side and slice again into 1/4 inch slices to make bite-sized pieces. Set aside.
- In a small mixing bowl or a measuring cup, add water, vinegar, sugar, oyster sauce, soy sauce, starch and fish sauce. Stirl until starch dissolves, set aside.
- In a large skillet, preferably cast iron or enameled cast iron (it holds more heat), add oil and heat over medium-high heat. Add pork and cook until browned on all sides. Set aside.
- In skillet, over same heat, add a drizzle of oil if needed and add peppers. Stir frequently until semi-soft. Add garlic and ginger, stir some more and cook for one minute. Be careful not to let the garlic burn.
