Our kids request this meal every time we go camping, and seeing as we have about 15 laying chickens, it's a great way to use up eggs! Please note, this makes a LOT! You may want to consider sharing it with your camping friends or, if you're like our family and enjoy leftovers, just save the leftovers for the day you're leaving the campground and need a quick breakfast without a lot of mess and fuss. You can easily re-heat it in a microwave or in a skillet over low heat. Feel free to add more spices and personalize this recipe to suite your taste buds!

1 pound mild pork sausage (such as Jimmy Dean®)
1 onion, chopped
1 clove garlic, minced
1 red bell pepper, chopped
1 green bell pepper, chopped
1 (2 pound) package frozen shredded hash brown potatoes
12 eggs, beaten
1 (16 ounce) package shredded Cheddar cheese

Steps:

  • Build a campfire and allow the fire to burn until it has accumulated a bed of coals.
  • Cook and stir the sausage, onion, and garlic in a 12-inch cast iron Dutch oven with lid, raised over the coals to medium-high heat, until the sausage is no longer pink and the onion is tender. Stir in the red bell pepper, green bell pepper, and hash brown potatoes until evenly mixed. Cook, stirring occasionally, until the hash browns are hot and the peppers are tender, about 15 minutes.
  • Pour the beaten eggs evenly over the top of the potatoes, allowing them to sink into the potatoes. Cover the Dutch oven, and place 6 to 9 coals underneath, and 12 to 18 on top. Allow to bake until the eggs are firm, about 40 minutes. Sprinkle with Cheddar cheese, cover, and continue cooking until the cheese has melted, about 5 minutes.

2 of pounds sausage
2 of pounds frozen hash brown potatoes
8 of eggs, beaten with ¼ cup water
2 cups of cheese, grated

Steps:

  • In a 12 Inch Camp Dutch Oven over a full bed of hot coals, fry and crumble sausage.
  • Remove cooked sausage and drain on paper towels.
  • Using the sausage drippings in the pan, brown potatoes and spread them evenly in bottom of Dutch oven.
  • Place cooked sausage over potatoes. Pour eggs over sausage layer. Sprinkle top with cheese.
  • Cook with 8 coals underneath Dutch oven and 16 on top for 20 to 25 minutes, until eggs are cooked.

It's a soft, warm flour tortilla filled with a savory combination of sausage, bacon, scrambled eggs, chives and two melty cheeses, all wrapped up in wax paper and ready to travel. It's very filling and should help stave off those hunger pangs until suppertime.

1 large flour tortilla
1 slice(s) american cheese
1/4 cup(s) shredded cheddar cheese
1 tablespoon(s) real bacon bits
2 - cooked breakfast sausage links or small patties, cut or torn into small pieces
1 teaspoon(s) chives
1/2 teaspoon(s) butter or cooking spray
2 large eggs
- salt and pepper to taste

Steps:

  • Gather and prep ingredients (shred cheese, mince chives etc...)
  • Place a square sheet of wax paper on kitchen counter (to wrap burrito.)
  • Place flour tortilla in medium size fry pan over low heat; tear American cheese into several pieces and place on tortilla.
  • Evenly scatter over tortilla, cheddar, bacon, sausage and chives; cover pan with foil or lid.
  • Over medium heat, melt butter in small nonstick skillet (or spray skillet with cooking oil spray.)
  • Add 2 eggs and salt and pepper to taste; using a nylon or silicone spoon or spatula scramble eggs and cook over medium heat, until eggs are just cooked (I usually shut the heat off at about the halfway point and let the residual heat of the pan finish the job, to avoid overcooking the eggs.)
  • Spoon eggs onto one half of the tortilla; use spatula to carefully (HOT!) fold burrito-style.
  • Leave burrito in skillet, seam side down, for a few seconds.
  • Place burrito diagonally on wax paper.
  • Fold wax paper around burrito, securing wax paper with a piece of tape, if needed. There you go! Ready to go.

2 - frozen hash brown potato patties
1/2 tablespoon(s) butter
1 slice(s) american cheese
2 tablespoon(s) shredded extra-sharp cheddar cheese
2 large eggs
1 large breakfast sausage patty, cooked and warm
1-2 slice(s) fresh tomato (optional, but recommended)
- salt & pepper to taste
1 teaspoon(s) chopped fresh chives
1-2 teaspoon(s) real hickory smoked bacon bits

Steps:

  • Gather and prep ingredients; preheat toaster oven.
  • Bake hash brown patties according to package instructions for toaster oven.
  • In the last couple of minutes before hash brown patty is finished baking, melt butter or grease in a small nonstick skillet over medium heat.
  • When hash browns are finished baking, move them together so that they are touching.
  • Place American cheese slice on top; sprinkle with 1/2 of the cheddar cheese; set toaster oven to warm; return patty to oven.
  • Break each egg into prepared skillet; cook over medium/medium-high heat for 1 1/2 minutes; using egg turner, flip eggs over, cook for 30 seconds; remove from heat.
  • Immediately remove hash brown patties from oven and place on serving plate.
  • Place sausage patty on top of the hash browns and cheese; place tomato slices on top of sausage, if using.
  • Slide fried eggs onto patty; sprinkle with salt and/or pepper to taste.
  • Scatter remaining 1 tablespoon cheese over eggs; sprinkle with bacon bits and chives.
  • Garnish as desired; serve immediately.

10 cups large chunks of peeled potatoes
8 slices bacon
3 large onions, sliced
1 ½ teaspoons salt

Steps:

  • Place potatoes in large pot. Fill the pot with cold water until it is half an inch above the top of the potatoes. Add the salt to the water and stir briefly to dissolve. Bring water to a boil and cook until tender, about 15 to 20 minutes. Drain and set aside to cool.
  • Place bacon in a large, deep skillet. Cook over medium high heat until evenly brown. Remove bacon, drain, cool and crumble. Leave bacon fat in skillet and return to stove.
  • Add potato chunks, onion and crumbled bacon to skillet. Cook over medium high heat until potatoes begin to brown and onions are translucent, about 25 minutes.

3/4 cup barbecue sauce
1 tablespoon minced onion
1 (9 1/2 ounce) can refrigerated biscuits
1 (4 ounce) package shredded cheddar cheese (but adds a lot to it) (optional)

Steps:

  • Brown beef, drain excess fat. Stir in salt, beans, BBQ sauce and onion, heat until bubbly.
  • Pour mixture into a 2-quart casserole.
  • Cut biscuits in halves to form 20 half circles, place cut side down along the edge of the casserole on meat mixture.
  • Sprinkle with cheese.
  • Bake, uncovered at 375 for 25 to 30 minutes or until biscuits are golden brown.

We love to make this recipe when we go camping (dutch oven recipe below in notes), have overnight visitors, or just to make to feed our household of HUNGRY boys. This recipe feeds many people and is a filling & delicious start to the day. *This recipe is pretty versatile, so feel free to mix it up to your liking...you may add ham, turkey sausage, eliminate the bacon or sausage etc.. I love to add mozzarella cheese with the cheddar, so find what mixtures of cheeses you like and add them! Add or remove eggs to suit your taste and even try just using egg whites to make it healthier! The possibilities are endless! ENJOY ????

Number Of Ingredients 12

Bag of frozen diced potatoes
8 eggs
1/8 Cup of milk
1/2 Cup diced yellow onion.
3/4 Cup diced pepper (any color)
8-10 Slices of cooked bacon, crumbled
8 Cooked Sausage links (cut into 1/4" pieces) or (6 Cooked Sausage patties (crumbled)
2 cups of Shredded Cheddar
1/4 tsp of garlic salt
1/4 tsp of onion powder
Salt
Pepper

Steps:

  • Preheat the oven at 400 degrees.
  • Mix diced potatoes, peppers & onions in a large casserole dish.
  • Add bacon & sausage and mix into the potato mixture.
  • IN a mixing bowl, whip the eggs with milk and mix in the onion powder & garlic salt.
  • Pour the egg mixture over the potatoes.
  • Add salt & pepper to taste (I usually use about 1/8 tsp of each).
  • Lastly, sprinkle cheese over the top.
  • Bake for about 45-50 minutes, or until the egg is firm and the edges are browned.

10 small red potatoes (or (2 pounds frozen hash browns))
1 lb bacon (cut into bite-sized pieces)
1 lb ground breakfast pork sausage
1 white onion (chopped)
1 red bell pepper (chopped)
1 roasted poblano pepper (chopped)
Kent's Original Seasoning (to taste or salt and pepper)
1 cup shredded pepper jack cheese
1 cup shredded cheddar cheese
10 eggs (divided)

Steps:

  • Heat the oven to 350 degrees F. Lightly butter a 12- inch Dutch oven.
  • If using red potatoes, grate the potatoes into a bowl and cover with water. Set aside. Skip to the next step if using hash browns.
  • Add the bacon to a 12-inch cast iron, or oven-safe skillet, or Dutch oven over medium-high heat. Cook until browned, about 5 minutes, stirring occasionally. Remove the bacon and place on a paper towel. Leave about 2 tablespoons of bacon grease in the skillet and discard the rest.
  • Return to the skillet and crumble in the sausage and cook until it begins to brown about 5 minutes, stirring occasionally. Stir in the onion, bell pepper and poblano.
  • If using red potatoes, drain the potatoes from the water and pat dry with a towel. Stir into the sausage mixture and cook until the peppers and onions are tender, about 4 minutes. Season to taste with Kent's Original Seasoning.
  • Place 6 of the eggs in a medium bowl and whisk until smooth. Pour the eggs evenly over the sausage mixture. Sprinkle the bacon on top. Bake for about 45 minutes or until the eggs set up.
  • Sprinkle the cheeses evenly over the top and cook for another 5 minutes or until the cheese melts. Crack the remaining eggs on top and bake until the eggs are sunny side up, about 5 minutes. Serve warm.
