STRAWBERRY JAM
This is by far the easiest recipe I have found for strawberry jam without using a pectin. The jam is soft, spreadable and delicious.

- In a wide bowl, crush strawberries in batches until you have 4 cups of mashed berry. In a heavy bottomed saucepan, mix together the strawberries, sugar, and lemon juice. Stir over low heat until the sugar is dissolved. Increase heat to high, and bring the mixture to a full rolling boil. Boil, stirring often, until the mixture reaches 220 degrees F (105 degrees C). Transfer to hot sterile jars, leaving 1/4 to 1/2 inch headspace, and seal. Process in a water bath. If the jam is going to be eaten right away, don't bother with processing, and just refrigerate.

HUNTER'S CHICKEN
What could be more comforting than chicken breasts wrapped in bacon with BBQ sauce and cheese? Serve this easy chicken dish with mash or roast potatoes

Steps:
- Heat oven to 200C/180C fan/gas 6. Oil a tray, put the chicken breasts on it and cover each one with 2 bacon rashers. Put the chicken in the oven for 20-25 mins until cooked through.
- While the chicken is cooking, fry the onion in 1 tbsp oil until golden brown and soft, then set aside. Put the potatoes in a large pan of boiling water and cook for 10-15 mins until soft. Put another smaller pan of water on the hob and bring to the boil while the potatoes are cooking. Once boiling, tip in the runner beans and carrots and cook for 8-10 mins until soft but with a little bite. Drain the potatoes and put them back in the pan with the milk and cream cheese, mash until smooth and stir though the fried onions.
- Once the chicken is cooked, pour over the BBQ sauce and scatter over the parmesan and return to the oven for 2 mins until the cheese has melted. Serve with the mash, carrots and runner beans.

BACON JAM
Steps:
- Add the bacon to a skillet over medium heat. Cook the bacon until it's just starting to brown slightly and render its fat, 3 to 4 minutes. Add in the chopped onions and stir to combine. Cook, stirring occasionally, until the onions are soft and almost melting into the bacon fat, 30 to 40 minutes. If the pan starts to look dry or is browning too much, add a splash of water to deglaze.
- Stir in the brown sugar, cayenne pepper and grated garlic, then add the balsamic vinegar. Cook until the sugar dissolves and the mixture is thick, about 5 minutes. Turn off the heat.
- Transfer the mixture to a food processor. Pulse until the bacon is chopped slightly finer, 5 to 6 pulses.
- To serve, top the toast with the bacon jam and garnish with chopped chives.
HUNTSMAN BURGER

- Lightly mix 6 ounces ground beef chuck with a big pinch of kosher salt. Form into a ball, then into a 3/4-inch-thick patty; make an indentation in the center. Heat a cast-iron skillet over medium-high heat; sprinkle the skillet with salt. Cook the burger 4 to 5 minutes per side. Add 2 thick slices Huntsman cheese in the last minute of cooking (cover to melt). Serve on a toasted English muffin.
HUNTSMAN'S PIE
This is a Scottish Highland version of the traditional shepherd's pie that substitutes venison for the lamb. This is from www.celtnet.org.uk with slight modifications.

- Add the oil to a large pan and saute onion for 2 minutes then add celery and carrot and cook a further 5 minutes Add the venison, garlic and chilli powder and thyme.
- Continue cooking until the venison is coloured (about 8 minutes) then add the gravy and peas. Bring to a simmer then cook for 2 minutes before tipping into a large gratin dish.
- Mix the mashed potatoes with the cinnamon and spread on top of the meat mixture, covering completely.
- Place in an oven pre-heated to 200°C and bake for about 25 minutes, or until the dish is heated through and nicely browned on top.

HAM AND JAM SANDWICH
Nothing can compare to jambon-beurre, the iconic Parisian sandwich, which is really just a baguette with salted European butter and unsmoked ham. This rendition expands on that perfect trinity with a few additional pantry ingredients: Jam plays well with ham (like in a Monte Cristo), and Dijon and black pepper bring spice and spirit. Smoked ham adds yet another layer of savoriness, but any thinly sliced ham will work. The result is a hearty, complex but still delicate meal, appetizer or pick-me-up. While ham and jam sandwich doesn't roll off the tongue quite like jambon-beurre, you have permission to call it a ham-jam-sam, if you like.

- Cut the baguette into four equal pieces by cutting the baguette in half crosswise, then cutting each half in half. Slice each piece through the middle to split it. Arrange the pieces cut-side up.
- Spread butter on the tops and bottoms of each quarter. If using unsalted butter, sprinkle lightly with salt. Spread Dijon on one side and jam on the other. Pile the ham on the bottom pieces, then season with black pepper. Top the sandwiches and press firmly. Wrapped and refrigerated, the sandwich will keep for up to 1 day.

- Cut the loaf in half lengthways and remove all the doughy bread from the base and the lid. Save the removed bread for breadcrumbs.
- In the base of the loaf, place a layer of lettuce, and top with the sliced tomato, shredded chicken (or ham or tuna, if preferred), carrot, sliced eggs, the basil and a drizzle of olive oil.
- Replace the lid of the loaf and squash down firmly. Wrap in foil or greaseproof paper and store in the fridge overnight with an even weight on top to compress.
- When ready to eat, remove wrapping and slice.

HUNTSMAN'S JAM
This is a nice Autumn Jam, which my sister told me about. She strains it to make a jelly but I'm not afraid of pips. It is only the third jam I have ever made, the first being only Blackberries and Elderberries and the second was this recipe but made with plums. Steps:
- Wash all your fruit, especially berries picked from the garden or hedgerow.
- Carefully, using a fork,strip the Elderberries from the stalk into a bowl to prevent them from going everywhere.
- Zest and juice the lemon.
- Core and peel and slice the apples.
- Put the berries, zest ands juice in a good pan and crush them together to break the berries.
- Stir in the sugar and fling in the sliced apples.
- Bring slowly to the boil and continue at boiling as slowly as possible stirring fom time to time.
- Skim the froth off as the jam boils until you reach setting point and then take from the heat.
- Boil some water and sterilise your jars with it and mind your fingers.
- Carefully pour or ladle your jam into the jars seal, label and then have a nice cup of tea with some of your jam on toast or scones as is to your liking.
