TOASTED PECAN AND HERBED CHEESE BALL BITES

Steps:
- Preheat oven to 350°F. Spread the nuts onto a cookie sheet and bake for 7 to 8 minutes or until the nuts begin to brown and become aromatic. Remove from oven and let cool. Coarsely chop ¼ cup of pecans; set aside. Finely chop the remaining 1¼ cups of pecans and mix with ¼ cup of chopped parsley in a medium bowl; set aside. Line a cookie sheet with plastic wrap.
- Make the cheese mix: In the bowl of a mixer fitted with the paddle attachment, mix the cream cheese, garlic and fines herbs cheese, goat cheese, salt and hot sauce until smooth. Mix in the remaining ¼ cup parsley, the scallions, pimento peppers and the coarsely chopped pecans. Use a tablespoon measure to transfer tablespoons of the cheese mixture to the prepared cookie sheet to make about 30 mounds. Refrigerate for 15 minutes. Remove the cookie sheet from the refrigerator and roll the mounds into balls. Coat the balls with the reserved pecan and parsley mixture.
- Refrigerate until ready to use. Serve with crackers, crudités or grilled bread, if desired.

Steps:
- Sift together into a medium sized bowl the flour, sugar and vanilla. Work in the margarine with a spoon or hands until well blended. Add chopped pecans and mix well.
- Shape dough into 1 inch balls and put on ungreased pans. Bake in a preheated 325 degree F (165 degrees C) oven for about 25 minutes or until pale brown. When slightly cool roll or shake in confectioners' sugar. Store in an air tight container.

HAM AND CHEESE BALL WITH ROASTED PECANS
I put this together years ago and it is a fav at all parties. Easy and can be made 2 days ahead or can be frozen for later use. I like to make enough in Oct. freeze and use for Holiday parties in Nov. and Dec. Also makes great Christmas host gifts. Serve with any crackers. Also good with pepper jelly on the side.

- Put 1 cup pecans to the side for covering cheese ball.
- Put remaining ingredients in blender.
- blend well.
- Form into a ball
- Freeze for 10 minutes.
- Roll ball in cup of roasted pecans.
- Wrap in wax paper and chill till ready to use.
- Can freeze till ready to use or give as gift.
- Serve with crackers
- Also good with Jalapino pepper jelly on top or on the side.

- In an electric food processor or blender, combine cream cheese, garlic, Worcestershire sauce and hot pepper sauce. Blend well. Add Cheddar cheese and process until the Cheddar is fine, but still very visible. Shape the mixture into balls or logs. Wrap individually in plastic wrap and place in the freezer.
- While the balls are in the freezer, combine the ground pecans and parsley in a shallow bowl. Remove the balls from the freezer and roll them in the pecan and parsley mixture.

We totally get what Deb means by the pecans on the outside of a cheese ball getting soggy. This cheese ball spread is so creamy and delicious, you'll never miss the pecans. It's savory from the cheddar and cream cheese. But, pineapple gives the dip a pop of sweetness. All of the other ingredients round out the flavors and make this very addictive. If you want a bit of heat, add your favorite hot sauce or jalapenos. The perfect appetizer for any occasion.

- Have cream cheese at room temperature. Mix together the cream cheese and cheddar cheese.
- Combine all remaining ingredients.
- Mix well with mixer.
- Chill well before serving.
- I usually use the whole jar of pimento. Mostly because I love pimento, but also because I never know what to do with the rest of the jar, lol. Or... you could double this and use the whole jar. I don't drain the pineapple. Works just fine either way. Just remember to chop the onion and bell pepper really small... tiny even.
- Originally this was a cheese ball recipe. You were supposed to divide the mixture in half and roll each portion in chopped pecans, forming 2 balls. The first time I made this, I made balls. Never again! If you don't eat it all, the pecans get rubbery in the fridge. Since then, I just make it a spread and serve it in a bowl with really good snack crackers. It is even better the second day, so can be made a day ahead.
- If you really feel the need to make this into balls, I would suggest draining the pineapple and putting the mixture in the fridge for an hour or so before trying to roll it in chopped pecans. It makes 2 cheese balls.
