SNOWMAN EGGNOG

Give this comforting drink some extra personality with whipped cream, a few chocolate chips and a dried apricot. With the kids' help, you can make an adorable snowman. Add a little booze and the adults will love it too!

2 large eggs plus 1 large egg yolk
1/2 cup sugar
2 1/2 cups milk
2 cups heavy cream
1/2 teaspoon pure vanilla extract
1/4 teaspoon freshly grated nutmeg
1 ounce mini chocolate chips, plus 8 mini chocolate chips for garnish
1/2 cup cold rum or brandy (optional)
1 dried apricot, cut into 4 wedges

Steps:

  • Whisk the eggs, egg yolk and sugar in a bowl until combined. Heat the milk and 1/2 cup heavy cream in a medium saucepan over medium heat until steaming; do not boil. Remove from the heat. Whisk 1 cup of the hot milk mixture into the egg mixture, then whisk the egg mixture back into the saucepan. Cook over medium heat, stirring constantly with a wooden spoon, until the mixture is thick enough to coat the back of the spoon and a thermometer registers 165 degrees F, about 5 minutes. (Do not boil or the eggs will curdle.)
  • Strain the mixture through a fine-mesh sieve into a medium bowl and stir in the vanilla and nutmeg. Let cool at room temperature, about 1 hour. Cover and refrigerate until cold, at least 2 hours or up to 1 week.
  • Place the chocolate chips in a microwave-safe bowl; microwave, stirring every 20 seconds, until just melted. Arrange four 8- to 10-ounce glasses (or lowball glasses) on a workspace. Using the tip of your pinky or a small paintbrush dipped in chocolate, paint 3 buttons and two arms on the inside of each glass.
  • If desired, stir rum into the chilled eggnog mixture. Divide the eggnog evenly among the glasses. Whisk the remaining 1 1/2 cups heavy cream in a large bowl until stiff peaks form. Fit a pastry bag with a large star tip, and fill the bag with whipped cream. Pipe a generous swirl of whipped cream on each glass of eggnog to make the snowmen's heads. Directly above each row of snowman buttons, place an apricot wedge into each whipped cream head to form a nose. Place two mini chips above each nose to form eyes. Serve immediately.

54 miniature candy-coated chocolate candies
3 to 4 rolls Betty Crocker™ Fruit Roll-Ups® chewy fruit snack (any flavor), cut up as desired

Steps:

  • Heat oven to 200°F. Line 2 cookie sheets with cooking parchment paper.
  • In large bowl, beat egg whites, cream of tartar and almond extract with electric mixer on medium speed until soft peaks form. Gradually add sugar, 2 tablespoons at a time, beating on high speed until stiff glossy peaks form and sugar is almost dissolved.
  • Spoon meringue mixture into large decorating bag fitted with 1/2-inch plain tip. For each snowman, squeeze and release bag in place to form 2-inch ball on cookie sheets. Lift bag; squeeze and release bag to form middle layer of snowman. Lift bag; squeeze and release bag to form top section of snowman. Insert pretzel stick pieces into sides of snowmen for arms. Place chocolate chips on snowmen for eyes, candy corn tips for noses and 3 miniature candies on each snowman for buttons.
  • Bake 2 hours or until set and dry but not brown. Turn off oven; leave meringues in oven with door closed 8 hours. Decorate with fruit snacks for caps.

shredded coconut
candy corn
mini chocolate chip
chocolate wafer cookie
marshmallows
powdered cocoa mix

Steps:

  • To make the body of your snowman, make sure the ice cream isn't too soft, so it won't melt as you try to do this.
  • First, cover your plate with a piece of waxed paper.
  • Now use an ice cream scoop or a spoon to make three round scoops of vanilla ice cream. Make a small scoop for the head, a medium scoop for the middle of the body and a big scoop for the bottom of the body.
  • Put all three scoops on a plate.
  • Now put your ice cream balls in the freezer for about 15 minutes, or until they're nice and frozen.
  • Once they're completely re-frozen, roll them in coconut.
  • Then, stack them on your plate in this order: big, medium, small. Now put the scoops back in the freezer for 15 more minutes.
  • While you're waiting for the ice cream to freeze, make a hat for your snowman. Roll the marshmallow in some cocoa and use some ice cream as glue to stick it to your chocolate wafer cookie.
  • To decorate your snowman, use mini chocolate chips for his eyes, mouth, and buttons. Use a piece of candy corn, with the pointy-end sticking out, for his nose. Now put the wafer and marshmallow hat on his head.

COCONUT SNOWMEN



Coconut Snowmen image

Our snowman is made of vanilla ice cream rolled in coconut. His eyes, mouth, and buttons are licorice candies, his carrot nose marzipan, and his hat a toasted marshmallow atop a chocolate cookie. To make these snowmen, you will need three ice-cream scoops in varied sizes. Shoestring licorice cut into small pieces can also be used for the buttons, eyes, and mouth.

2 1/2 pints best-quality vanilla ice cream
Two 7-ounce packages coconut
Orange food coloring
1 tablespoon marzipan (1/4 ounce)
40 Sen Sen licorice candies
4 marshmallows
4 chocolate wafers
Sifted confectioners' sugar

Steps:

  • Line a baking pan that fits in your freezer with parchment paper. Scoop the vanilla ice cream, rounding scoops as much as possible, until you have 4 of each size, and place on the prepared baking pan. Place the pan in the freezer to harden for 15 minutes.
  • Remove the ice cream from the freezer, and roll in coconut. Return to pan, then return the pan to the freezer. Add orange food coloring to marzipan until carrot color is attained. Shape marzipan into small carrot shapes, using a paring knife to make ridges. Remove 1 small scoop of ice cream at a time from the freezer, and make faces using Sen Sen for eyes and mouth and marzipan carrots for the nose. Return to freezer until ready to serve.
  • Remove middle-size scoops from the freezer one at a time; place Sen Sen in a row down the front to create buttons. Remove remaining scoops from freezer, and stack to create snowmen, pressing slightly to adhere. Return snowmen to freezer.
  • Make the top hats by roasting marshmallows on skewers over a gas burner. Alternatively, place marshmallows on a baking sheet under the broiler, and cook until browned, rotating every few seconds. Place the toasted marshmallow on the chocolate wafer, and dust with sifted confectioners' sugar. Place the hat on the snowmen just before serving.
