5 stalks lemongrass
4 cups water
3 green tea bags
sugar
ice cube
lemon wedge

Steps:

Coarsely chop the bottom 4 inches of the lemongrass stalks.
Trim the tops, remove the outside leaves, and save for garnish.
In a small saucepan, bring to water to a boil.
Add in tea bags and chopped lemongrass; remove from heat and let steep for 10 minutes.
Strain; sweeten to taste with sugar, refrigerate until ready to serve.
Fill tall chilled glasses with ice; pour the tea over the ice.
Garnish each glass with a lemongrass top and a lemon wedge.

12 fresh lemongrass stalks, 1 or 2 outer leaves discarded
1/2 cup sugar
8 cups water

Steps:

Trim off bottom 6 inches of lemongrass stalks. Cut enough lemongrass tops crosswise into 1/2-inch pieces (discard any discolored parts) to measure 1 cup. Bring lemongrass pieces, sugar, and 2 cups water to a boil in a 2-quart heavy saucepan, stirring until sugar is dissolved, then remove from heat and let steep, partially covered, 20 minutes.
Put remaining 6 cups water in a pitcher. Blend lemongrass mixture in a blender until lemongrass is finely chopped (use caution when blending hot liquids), then pour through a fine-mesh sieve into water in pitcher, discarding solids. Serve over ice.

Steps:

Slice the lemongrass into rings, and place into a pot with the water, leaving enough room to boil.
Boil 10-15 minutes, depending on how strong you like your tea.
Add the sugar to the just boiled water, then pour into a pitcher over Ice Cubes.
