PINEAPPLE ICED TEA
A refreshing beverage that's good any time of the year from TOH. I use decaf tea bags for all of my iced teas. Plan ahead as this tastes better if refrigerated overnight.

Steps:
- In a saucepan, bring water to a boil. Remove from the heat. Add tea bags; cover and steep for 3-5 minutes. Discard tea bags.
- Stir in the pineapple juice, lemon juice and sugar until sugar is dissolved.
- Refrigerate overnight for the flavors to blend.
- Serve over ice.

Steps:
- Juice 4 lemons and strain.
- Slice remaining 2 lemons.
- Stir lemon juice and pineapple juice into tea.
- Crush 6 mint springs and stir into tea.
- Stir in sugar, stirring until sugar dissolves.
- Add lemon slices to tea.
- Put ice in a large pitcher and pour tea mixture over ice.
- Pour over ice in glasses, garnishing with mint and pineapple slices, if desired.

PINEAPPLE ICED GREEN TEA

- Place 4 fresh mint leaves in a shaker glass. Add ice and equal parts iced green tea, and pineapple juice, approximately 3 ounces each. Shake well to bruise the mint leaves and strain into an ice filled wineglass. Garnish with fresh mint sprig, and orange wheel.
FRESH PINEAPPLE ICE
Steps:
- Combine water, sugar and pineapple in a large saucepan and bring to a boil over medium heat. Stir, remove from heat and let cool. Process in a food processor to a rough puree. Transfer to a shallow baking dish and freeze until hard, 4 to 5 hours. Just before serving, chop the ice into fine chunks with a fork or ice pick. Serve in large goblets.
SPICED PINEAPPLE ICED TEA
Steps:
- Combine the pineapple skin and core, allspice berries, star anise, cinnamon and 6 cups water in a 4-quart saucepan. Bring the mixture to a boil, lower the heat and simmer for 1 hour. Remove from the heat and add the tea bags; let the tea bags steep for at least 20 minutes and up to 6 hours. Strain the pineapple tea and cool completely. Serve over ice with pineapple wedges.

- In a saucepan, cook the eggs and milk over medium heat for 8 minutes or until a thermometer reads 160 degrees F and mixture coats a metal spoon. Stir in sugar until dissolved. Cool. Stir in the cream and pineapple.
- Fill cylinder of ice cream freezer two-thirds full; freeze according to manufacturer's directions. Refrigerate remaining mixture until ready to freeze. Allow ice cream to ripen in refrigerator freezer for 2-4 hours before serving. May be frozen for up to 2 months.

PINEAPPLE-COCONUT ICE CREAM
This is a recipe I came up with while I was pregnant. I couldn't find a cooked custard-based ice cream with pineapple and coconut as the main ingredients as I couldn't eat uncooked eggs. This thick and creamy ice cream is a family favorite. I can't seem to make it fast enough!

Steps:
- Whisk egg yolks and sugar in a medium bowl until thick and light yellow. Set aside.
- Heat half-and-half in a small saucepan until small bubbles start appearing around the edges. Remove from heat. Slowly drizzle into the eggs and sugar, whisking until incorporated. Return to the saucepan.
- Heat custard over medium-low heat, stirring constantly, until it coats the back of a spoon or reaches 165 degrees F (74 degrees C). Do not boil.
- Remove from heat and refrigerate for at least 4 hours, or until temperature reaches 65 degrees F (18 degrees C).
- Gently whisk in heavy whipping cream, 2 tablespoons reserved canned pineapple juice, and cream of coconut. Transfer to an ice cream maker and freeze according to manufacturer's instructions, about 20 minutes. Add crushed pineapple and flaked coconut near the end of the churning or it will all settle to the bottom. Transfer to an airtight container and freeze until firm, about 4 hours.

- Core pineapple using a pineapple corer or slicer. Break up into chunks and measure out 2 cups. Save juices.
- Combine 2 cups pineapple and juices, 2 cups water, and lemon juice in a blender. Blend until smooth. Pour into a pitcher. Add remaining 2 cups water and sweetener. Stir and serve over ice.
