Idaho Potato Cake image

Potato in a cake that isn't a latke? You bet! Mashed potato gives this dessert body and a super moist texture. Martha made this on episode 704 of Martha Bakes.

Number Of Ingredients 13

1/2 cup (1 stick) unsalted butter, room temperature, plus more for pan
Cocoa powder, for dusting pan
1 large baking potato (about 10 ounces)
1 3/4 cups cake flour (not self-rising)
1 teaspoon coarse salt
1 teaspoon baking powder
1/4 teaspoon baking soda
2 cups sugar
2 large eggs
1 teaspoon pure vanilla extract
4 ounces semisweet chocolate, melted and slightly cooled
1/2 cup sour cream
Whipped cream, for serving (optional)

Steps:

  • Preheat oven to 350 degrees. Brush a 12-cup Bundt or tube pan with butter. Dust with cocoa, tapping out excess.
  • Peel potato and coarsely chop. Place in a small saucepan and add enough water to cover. Heat over medium-high, bring to a boil, and cook until tender. Drain, then mash until no lumps remain. Measure out 3/4 cup for the recipe; set aside. Reserve the remainder for another use.
  • Whisk together flour, salt, baking powder, and baking soda. In the bowl of an electric mixer fitted with the paddle attachment, combine butter and sugar and beat on medium speed until light and fluffy, about 3 minutes. Add eggs, 1 at a time, beating well after each addition. Add vanilla and melted chocolate and beat until thoroughly incorporated. Add potato and beat to combine. Reduce speed to low. Add flour mixture in 2 batches, alternating with sour cream, beating until just combined.
  • Transfer batter to prepared pan and smooth top with an offset spatula. Bake until a cake tester comes out clean, about 50 minutes. Transfer to a wire rack to cool for 20 minutes. Turn out onto rack to cool completely. (Cake can be wrapped in plastic and stored at room temperature up to 1 day or frozen up to 1 month.)
  • When cake has completely cooled, slice with a serrated knife, and serve with a dollop of whipped cream, if desired.

1 (0.71 ounce) package McCormick® Grill Mates® Montreal Steak Marinade, divided
½ cup milk
1 cup sour cream
1 cup shredded sharp Cheddar cheese, divided
6 slices cooked bacon, chopped, divided
1 tablespoon finely chopped green onion

Steps:

  • Preheat oven to 350 degrees F. Place potatoes in large saucepan. Cover with water. Add 1 tablespoon of the Marinade Mix to water. Bring to boil. Reduce heat to low; cover and simmer 10 to 15 minutes or until potatoes are fork tender. Drain and return potatoes to saucepan. Add milk, sour cream, 1/2 cup of the cheese, 1/2 of the bacon and remaining Marinade Mix to saucepan.
  • Mash potatoes using a potato masher or electric mixer until potatoes are smooth and creamy. Spoon into 2-quart baking dish. Sprinkle with remaining 1/2 cup cheese and bacon.
  • Bake 15 minutes or until heated through. Sprinkle with green onion.

1/4 cup grapeseed oil
2 medium red onions, small dice
1 teaspoon liquid smoke seasoning sauce
2 (24-ounce) bags frozen corn
1 quart chicken stock
3 pounds Idaho potatoes (about 12 potatoes), well scrubbed and cut into 1-inch pieces
Salt and freshly ground black pepper
1/2 cup chopped scallions, for garnish

Steps:

  • Preheat the oven to 375 degrees F. Heat the oil in a large skillet and saute onion until it begins to turn translucent. Remove from heat and stir in liquid smoke. Toss corn in mixture to coat and then transfer to a baking sheet. Roast for a few minutes until golden brown, then remove and set aside. Bring stock to a boil in a large pot and add potatoes. Reduce heat to medium and cook until fork tender. The potatoes will absorb some of the liquid. Stir in onion and corn mixture and season with salt and pepper, to taste. Let simmer until stew like consistency. Garnish with scallions.

1 cup cold mashed potatoes
1 teaspoon vanilla extract
2 cups all-purpose flour

Steps:

  • In a large bowl, cream butter and sugar until light and fluffy. Add eggs, one at a time, beating well after each addition. Beat in potatoes and vanilla. Combine the flour, cocoa and baking soda; add alternately with milk, beating well after each addition. Stir in nuts. , Pour into a greased 13x9-in. baking pan. Bake at 350° for 40-45 minutes or until a toothpick inserted in the center comes out clean. Cool on a wire rack.

1 lb idaho russet potato, peeled and quartered
2 packages yeast
1 1/2 cups warm milk (112 degrees)
1/2 cup vegetable oil
1/2 cup sugar
2 eggs
1 teaspoon salt
7 1/2 cups flour
oil (for deep frying)
1/3 cup water
4 cups powdered sugar
1 teaspoon vanilla

Steps:

  • Cook potatoes in water until tender.
  • Drain, reserving 1/2 cup of the water.
  • Set the 1/2 cup water aside.
  • Cool to 110 degrees.
  • Mash potatoes well.
  • In lg bowl, dissolve yeast in reserved cooking water.
  • Add mashed potatoes, milk, oil, sugar, eggs and salt.
  • Add enough flour to make a soft dough.
  • Place in greased bowl, turn to grease top.
  • Cover and let rise for 1 hour, until doubled.
  • Punch down, let rise again until doubled, about 25 minutes.
  • Roll out on floured surface to 1/2 inch thick.
  • Cut with floured cutter.
  • Heat oil to 375*.
  • Fry until golden brown.
  • Mix water and powdered sugar until smooth.
  • Add vanilla.
  • Dip warm doughnuts in glaze.
  • Cool on wire racks.
  • Try not to eat all of them at once!

  • In another large bowl, mix the eggs and minced onion. With your hands grab handfuls of the grated potato and squeeze over the bowl with all the potatoes in them, squeezing out as much liquid as possible back into the bowl. Transfer the squeezed potatoes into the bowl with the eggs. Repeat until all of the potatoes have been squeezed and transferred. Stick your finger into the liquid left in the other bowl. You’ll feel a firm layer of potato starch at the bottom. What you need to do is carefully pour off the liquid and then scrape up all that valuable starch from the bottom of the bowl and mix it well with the egg and potato mixture (best to use your hands). This natural starch helps bind together the potatoes. If there is only a tablespoon or so of the starch, you’ll also want to blend in the matzoh meal or flour. Add salt and pepper (be liberal, the pancakes will be quite bland without enough seasoning).
  • In a large skillet (or use two large skillets to make the cooking go faster), heat a couple of tablespoons of olive oil and a teaspoon or so of butter until the butter has melted and the fat is hot. Swirl the pan, and then add spoonfuls of the potato mixture -- as big or small as you wish -- and gently press them into round flat shapes in the pan. Cook until golden brown and crisp for about 4 to 5 minutes on each side. You’ll need to keep a close eye on the heat; too low and they won’t brown properly, too high and the oil will start smoking. Adjust it as needed.
  • Drain briefly on paper towels, and transfer to a serving platter. Repeat until all of the potato mixture is used up, adding more oil and bits of butter as you need it (periodically you may want to dump out the pan, give it a quick wipe, and start over if you’re finding that the oil is getting kind of dark and that too many bits of charred potato and onion are floating around). The potatoes will continue to release liquid as they sit; as you get to the bottom of the bowl, just give the potato mixture a quick squeeze before putting it in the hot pan to avoid splattering. And they will also start turning darker as they site, but when you cook them up it won’t be very noticeable.
