Steps:
- For the meat sauce: Heat the oil over medium heat in a large pot. Add the garlic and sweat until fragrant. Add the crushed tomatoes and tomato paste, mixing well. Add salt, pepper, basil flakes and parsley flakes and stir until well-combined. Simmer over a low flame while you cook the beef.
- Bring a pot of water to a boil. Add ground beef and boil until cooked all the way through. Strain cooked beef and add to tomato sauce. Simmer for about 1 hour.
- For the sausage: Preheat the oven to 350 degrees F. Have a meat grinder assembled with the sausage attachment and hog casing.
- Combine the pork, beef, fennel seed, black pepper, red pepper, salt and oil in a medium bowl and mix thoroughly so that all the spices are evenly incorporated. Run the meat through the sausage grinder and into the casing, twisting into sausages. Place the cased sausages on a baking sheet. Poke the sausages a few times with a toothpick or fork to create small holes (this will prevent the casing from bursting during cooking). Bake, rotating once halfway through the cooking, about 24 minutes. Set aside and let cool.
- For the meatballs: Heat oil in a cast-iron skillet over medium heat. Combine the beef, breadcrumbs, Romano, parsley flakes, garlic, pine nuts, salt, pepper and egg in a medium bowl, being sure to mix well so that all the spices are evenly incorporated. Roll the meat into 3-ounce balls. Brown the meatballs on all sides, about 4 minutes per side. Remove from heat and let cool.
- For the filling: Assemble the meat grinder and have a bowl ready to catch the ground meat and cheese. Run 3 meatballs, 3 sausages, the prosciutto, soppressata and mozzarella cubes through the grinder and into the bowl. Mix well.
- Combine the ricotta, Romano, eggs, butter, parsley, salt and pepper in a large bowl. Add the ground meat and cheese mixture. Mix well.
- For the pasta dough: Heat a large pot of water to boil on the stove. Add a splash of oil.
- Fit a stand mixer with the dough hook, then generously oil the hook to prevent dough from sticking. Whisk the egg, milk, salt and 1 tablespoon water together in a mixing bowl. Pour egg and milk mixture into the stand mixer bowl and add half the flour. Beat the dough over medium-low speed until the flour begins to incorporate into the mixture. Gradually add the rest of the flour until the dough comes together and forms a ball. Once the dough is mixed, turn out onto a floured surface.
- Divide the dough into several portions. Using a pasta machine or pasta attachment for your stand mixer, sheet the dough: Begin with the machine on the thickest setting and run one of the dough pieces through. Gradually reduce the setting number until the dough has been sheeted through the lowest number. Using a pasta cutter, cut the dough into rectangular strips. Place cut strips onto a well-floured sheet pan or tray. Repeat this process with the rest of the dough.
- Carefully add the pasta sheets to the boiling water. Cook, stirring with a spatula to prevent the pieces from sticking together, about 2 minutes. Using a large wire strainer or slotted spoon, carefully transfer the cooked pasta to a parchment-lined tray or plate, being sure to use additional parchment sheets if layering the noodles. Set aside.
- Preheat the oven to 350 degrees F and oil a 13-by-9-inch casserole dish.
- Gently drape the pasta sheets over the sides and corners of the dish, then fill in the bottom once the sides are covered (the finished lasagna will be fully wrapped in noodles). Add half the ricotta and meat filling, pressing it down into an even layer. Next, add a layer of meat sauce, putting just enough sauce to cover the ricotta and meat filling. Add another layer of noodles, this time only arranging them on top of the sauce and not draped over the sides. Add the remaining ricotta and meat filling and another layer of meat sauce. Carefully fold in the noodles that were draped over the sides and corners, then use more noodles to fill in any areas of the lasagna that are not covered.
- Cover lasagna in foil and bake for 1 hour 30 minutes to 2 hours. Cut and serve topped with a generous amount of meat sauce and fresh basil for garnish.

- Preheat your oven to 350 degrees F. Coat a 13 by 9-inch baking dish with nonstick cooking spray and set aside.
- Melt the butter in a saucepan over medium heat. Add the onion and cook until soft, about 5 minutes; season with salt and pepper. Stir in the flour and cumin and cook for 1 minute to remove the raw starchy taste of the flour. Gradually add the broth, stirring to prevent lumps. Once all of the broth is added, stir in the milk. Continue to stir constantly until the sauce thickens, about 8 to 10 minutes.
- Add half of the grated cheese and stir the sauce until the cheese has melted. Turn off the heat and transfer the sauce to a bowl. Place a piece of plastic wrap directly on the surface of the sauce to prevent a skin from forming.
- Heat a large skillet over medium-high heat and add the chorizo. Cook and stir until it starts to brown, about 4 minutes, using a wooden spoon to break up any large pieces while it cooks. Add the turkey and continue to cook until both meats are browned 8 to 10 minutes. Drain out excess oil from the pan, if needed. Stir in the Worcestershire sauce, lemon juice, oregano; season with salt and pepper.
- Line the bottom of the prepared baking dish with 1 layer of plantains (about 1/3 of the plantain slices), making sure that they don't overlap. Top the plantains with half of the meat mixture, spreading it out into an even layer so it covers the plantains. Top with half of the cheese sauce, spreading evenly with a spatula. Add another single layer of plantain slices side by side and cover with the remaining meat mixture and the remaining sauce. Add the final layer of plantains and sprinkle with the remaining cheese and a dusting of paprika over the top. Bake until the sauce is bubbly, about 45 to 60 minutes. Let cool for 10 minutes before cutting and serving.
THE BEST LASAGNA
A long-simmered beef ragu lets the brightness of the tomatoes shine through while developing a meaty richness. Our ricotta is mixed with nutty Parmesan that tempers the sharp garlic and adds flavor. We worked hard to get the right balance of the ricotta and tomato sauce in the layers since each element has their own voice. Our lasagna also uses less mozzarella than many other recipes - we prefer the creaminess of ricotta over the stringiness of melted mozzarella. Look for the shorter noodles - you won't need to cut them when assembling the lasagna.

- Place the beef in a large bowl and "pull" it apart with two forks as if you were shredding pulled pork, breaking up the clumps and loosening the meat without compacting it.
- Heat the oil in a Dutch oven or large heavy pot over medium-high heat. Add the pancetta and cook, stirring occasionally, until the fat has rendered and the meat is golden brown, 5 to 7 minutes. Transfer the pancetta to a large bowl with a slotted spoon, leaving the fat in the pot.
- Spread the beef in an even layer in the same pot and cook undisturbed until lightly browned, about 3 minutes. Toss and continue to cook, breaking up any clumps and scraping up any browned bits from the pot, until the meat is browned and completely cooked, 5 to 6 minutes. Transfer the browned meat with a slotted spoon to the bowl with the pancetta, leaving the fat in the pot.
- Reduce the heat to medium. Add the carrots, celery, onions, half the garlic, the bay leaf, oregano, red pepper flakes, nutmeg, 2 teaspoons salt and 1/4 teaspoon black pepper to the pot and cook, stirring occasionally, until the vegetables are tender but not browned, 6 to 8 minutes.
- Add the tomato paste and cook, stirring constantly, until it's very fragrant and brick red colored, about 2 minutes. Stir in the wine, bring to a boil and reduce until the liquid is very thick and no smell of alcohol remains, 6 to 8 minutes. Add the tomatoes and the reserved pancetta and beef, bring to a boil and then reduce the heat to low. Add the basil and Parmesan rind and simmer, stirring occasionally, until most of the liquid has evaporated and the sauce resembles sloppy joes, 2 to 2 1/2 hours. There shouldn't be any rapid bubbles while cooking. Instead, the ragu should release occasional small bubbles. If the ragu reduces too quickly, add 1/2 cup of water and continue cooking. Repeat if necessary. The ragu needs the full 2 to 2 1/2 hour cook time to develop the flavors.
- Discard the bay leaf, basil and Parmesan rind. Break up any remaining clumps of meat with the back of a spoon, making an even textured sauce. Season with salt and set aside until ready to assemble.
- Arrange a rack in the center of the oven and preheat to 350 degrees F.
- Bring a large pot of salted water to a boil over high heat. Cook the noodles, stirring occasionally and separating them to prevent sticking, until softened and bendable but are still hard and chalky in the center, about 5 minutes. Transfer the noodles to a large bowl of cold water and set aside until ready to assemble.
- Stir together the ricotta, 1 cup of the Parmesan, the remaining grated garlic and 2 teaspoons salt in a medium bowl until thoroughly combined. Set aside until ready to assemble.
- Lightly oil a 13-by-9-inch glass or ceramic baking pan. Spread 1 cup of the ragu evenly in the bottom of the pan. Lay a single layer of noodles over the ragu (if you're using long noodles, you will need to cut some noodles to fill the gaps). Spread 1 1/2 cups of the ragu over the noodles. Dollop 3/4 cup of the ricotta mixture over the ragu and spread lightly with a small offset spatula. Sprinkle with 1/2 cup of the mozzarella, followed by another layer of noodles. Repeat with the remaining pasta, ragu, ricotta mixture and mozzarella, creating 4 layers of pasta and ending with the remaining 1/2 cup mozzarella. (The lasagna should come just above the top of the pan but it will sink down slightly as it cooks.) Top with the remaining 1/4 cup Parmesan.
- Lightly oil a piece of foil and cover the pan. Put the pan on a rimmed baking sheet to catch any drips. Bake the lasagna until bubbling gently around the edges, about 1 hour.
- Remove the lasagna from the oven and increase the oven temperature to 450 degrees F. Remove the foil and then continue to bake the lasagna until the top is browned and crisp around the edges, 15 to 20 minutes.
- Let sit 10 minutes before serving.

- Preheat oven to 350°F (175°C) Gas Mark 5.
- In a medium skillet over medium heat, cook the meat until brown. Once cooked, drain and leave to the side.
- Mix your ricotta, egg, basil, thyme, garlic and oregano and half of the mozzarella cheese.
- In a 9x13 baking dish with a little of the spaghetti sauce. Place three of the lasagne sheets over the sauce. Spread a layer of the cheese mixture and then a layer of the meat mixture over it and repeat until mixtures are all gone. Top the lasagne with the left over mozzarella and parmesan cheese.
- Cover with foil and bake in a preheated oven for 30 minutes, remove foil and bake for a further 15 minutes until the cheese browns and the lasagne appears bubbly.

- Bring a large pot of water to the boil.
- Add the noodles and cook according to package directions.
- Drain well.
- When cool enough to handle, separate the noodles.
- Note: I much prefer to use fresh pasta sheets.
- In a large skillet, heat the olive oil over medium heat.
- When hot, add the onion and garlic; saute 2 minutes.
- Then add ground veal and beef; saute until almost cooked through.
- Drain well and put back on the stove.
- Add the oregano, rosemary, about 1/2 teaspoon salt and 1/4 teaspoon pepper.
- Saute until the meat is cooked through.
- Remove from the heat and set aside.
- In a bowl, stir together the ricotta, parsley, half-and-half, 1/4 teaspoon salt and pepper; set aside.
- In a separate bowl, combine the mozzarella and fontina; set aside.
- You will need a large casserole dish for this recipe.
- A deep (at least 2 inches) 9-by-13-inch pan will work.
- Spread a thin layer of the marinara in the bottom.
- Put down a layer of noodles, overlapping slightly.
- Cover with half of the meat, half of the cheese mixture and about 1/2 cup marinara.
- Place another layer of pasta on top and repeat with the remaining meat and cheese.
- Spread all of the ricotta mixture on top.
- Add a final layer of pasta and spread the remaining marinara on top.
- Sprinkle top with the Parmigiano and Romano.
- Place dish on a baking sheet.
- Bake on center oven rack in a preheated 375-degree oven until golden on top and heated through in the center, about 25 to 35 minutes.
- Let cool 10 minutes before cutting.
BROKEN LASAGNA PASTA
Super quick and easy! This was yummy and not overly sauced. Fresh and light with colorful vegetables and shrimp. Love the combo of pesto and shrimp. Serve with a green salad and crusty bread.

- Bring 12 cups of salted water to a boil in a pot over medium-high heat. Add pasta and cook for 12 minutes, adding shrimp and peas to water during final 2 minutes of cook time. Drain pasta mixture, reserving 1/2 cup cooking water in a glass measuring cup. Return pasta mixture to pot.
