Indian Meatballs Recipe with Creamy Sauce (Whole30, Paleo) image

Perfectly spiced, tender Indian meatballs with a creamy sauce. Whole30, paleo, and dairy free, this Indian dinner recipe has hidden veggies that keep the meatballs moist.

Provided by Cheryl Malik

Categories     Main Course

Time 40m

Number Of Ingredients 21

1 pound ground pork
1 pound ground chicken (or 1 more pound ground pork)
2 cups shredded zucchini
2 cloves garlic (minced)
2 teaspoons fresh ginger (grated)
2 tablespoons fresh cilantro (chopped)
1 1/2 teaspoons garam masala
1 teaspoon salt
coconut oil or ghee (for frying)
1/4 cup Fourth & Heart Original Ghee
2 teaspoons garam masala
2 teaspoons sweet paprika
2 teaspoons ground coriander
1/4 teaspoon cayenne pepper
1 tablespoon fresh ginger (grated)
1 cinnamon stick
1 15- ounce can tomato sauce (or for a creamier sauce, use an 8-ounce can)
1 tablespoon coconut aminos or coconut sugar (if desired and not on Whole30)
2 cups coconut cream (only the solid white part from about 2 cans of Sprouts Coconut Cream)
1 1/2 tablespoon fresh lemon juice
1 1/2 teaspoon salt

Steps:

  • Combine all meatball ingredients in a large bowl. Using a small disher or tablespoon, scoop out uniformly sized balls of the mixture and place on baking pans. Roll between your palms to smooth and form round balls.
  • Heat a thin layer of refined coconut oil or ghee in a large skillet, preferably cast-iron, over medium heat. Working in batches, fry meatballs, taking care not to overcrowd, until browned. Meatballs will finish cooking in a later step, so you do not need to cook them through in this step. Transfer to a plate, and fry remaining meatballs.
  • Once meatballs are cooked, clean out skillet. Add 1/4 cup ghee to skillet and melt over medium-low heat. Add garam masala, paprika, coriander, cayenne pepper, ginger, and cinnamon stick. Stir fry 1 minute until fragrant and a smooth, incorporated paste.
  • Increase heat to medium and add tomato sauce and coconut aminos or sugar (Do not use the coconut sugar if on a Whole30). Simmer for 5 minutes or until sauce has thickened, stirring occasionally.
  • Add coconut cream, lemon juice, and meatballs and simmer for 5-10 minutes or until sauce has thickened slightly and meatballs are cooked through. Add plenty of salt to taste; using enough will cut the heavy spice flavor and round out the entire dish. Serve over cooked cauliflower rice with chopped fresh cilantro.

MEATBALL CURRY

Meatball Curry image

Provided by Aarti Sequeira

Time 40m

Yield 4 servings

Number Of Ingredients 19

1 pound ground beef
1 green serrano chile, minced
2 teaspoons minced fresh ginger
2 tablespoons minced fresh cilantro
Kosher salt
3 tablespoons coconut oil or canola oil
1/2 teaspoon brown or black mustard seeds
4 shallots, thinly sliced (about 1 cup)
5 cloves garlic, minced
1 (1-inch piece) ginger, peeled and minced
2 teaspoons ground coriander
1 teaspoon ground cumin
1/2 teaspoon cayenne pepper
2 medium tomatoes, finely diced
1 (14-ounce can) full-fat coconut milk
Kosher salt
2 tablespoons minced fresh cilantro
2 teaspoons lime juice (about half a lime)
Serving suggestions: Rice, Indian bread, such as naan or chapatti or spaghetti.

Steps:

  • For the meatballs: In a large bowl, mix the ground beef, chile, ginger, cilantro and 1 teaspoon salt together using your hands until just combined. (Don't mix any more than this or you'll end up with tough meatballs!) Make 16 balls like this: divide the mixture in half, and then in half again. Take each quarter and divide it into 4 small portions. Roll each portion between your palms until smooth. Set aside and repeat for all 16 meatballs
  • For the curry: In a large skillet over medium-high heat, warm the coconut oil until nearly smoking. Add the mustard seeds, covering the pan with a lid so you don't get popping seeds all over you.
  • When the spluttering subsides, add the shallots, garlic and ginger and cook until golden brown. Then add the ground coriander, cumin and cayenne pepper. Stir, and cook 30 seconds. Add the tomatoes and cook until they soften, about 5 minutes.
  • Add the coconut milk, 1/2 cup of water, 1/2 teaspoon salt and bring to boil. Turn down to a simmer and add the meatballs. Simmer until the meatballs are cooked through, 15 to 20 minutes.
  • To finish, add the cilantro and lime juice. Shake the pan gently to mix them in, and then taste for seasoning. Serve over rice, with Indian bread (naan or chapati) or over spaghetti!

1 pound ground chicken
1 cup panko bread crumbs
2 tablespoons olive oil
2 tablespoons minced onion
1 teaspoon ginger paste
1 teaspoon minced garlic
1 teaspoon curry powder
¼ teaspoon salt
¼ teaspoon ground black pepper
2 tablespoons olive oil
1 ½ cups diced onions
1 tablespoon minced garlic
1 tablespoon ginger paste
1 tablespoon white sugar
1 tablespoon garam masala
1 tablespoon ground cumin
2 teaspoons ground ginger
2 teaspoons curry powder
1 teaspoon ground cinnamon
1 teaspoon chicken bouillon granules

1 (14.5 ounce) can diced tomatoes

  • Preheat oven to 350 degrees F (175 degrees C). Line a baking sheet with foil and coat with cooking spray.

  • Meanwhile, heat olive oil in a large saucepan over medium-high heat. Add onions, garlic, and ginger paste; saute until onions become soft, about 5 minutes. Add sugar, garam masala, cumin, ginger, curry powder, cinnamon, chicken bouillon, paprika, cayenne, turmeric, onion powder, and salt; stir to combine. Stir in tomato sauce, diced tomatoes, heavy cream, and water. Cook until warmed through, about 5 minutes. Add butter and stir to melt.

NORTHERN INDIAN LAMB MEATBALLS

Northern Indian Lamb Meatballs image

Simmered in a silky tomato-based sauce, these delicate lamb meatballs have sweet prune centers. Indian flatbread and pickled carrots are, respectively, mild and mouthpuckering foils for the curry.

Provided by Martha Stewart

Categories     Food & Cooking     Ingredients     Meat & Poultry     Lamb Recipes

Number Of Ingredients 18

2 small garlic cloves
1 piece (1 inch) peeled fresh ginger, sliced
2 tablespoons vegetable oil
1 large onion, finely chopped
1/2 teaspoon ground turmeric
3/4 teaspoon cayenne pepper
2 tablespoons plus 1 teaspoon ground coriander
1 can (8 ounces) plain tomato sauce
1 dried bay leaf
Coarse salt
12 ounces ground lamb
1 cup fine fresh breadcrumbs
1/3 cup finely chopped fresh cilantro
1 large egg
6 prunes, quartered
1/2 teaspoon garam masala
Pickled vegetables, for serving
Indian flatbread, for serving

Steps:

  • Process garlic, ginger, and 1 1/2 teaspoons water in a food processor until a chunky paste forms; set aside.
  • Heat oil in a medium saucepan over medium heat until hot but not smoking. Add onion; cook, stirring, until translucent, about 3 minutes. Set aside one quarter of onion in a large bowl.
  • Add 1 tablespoon garlic paste, 1/2 cup water, the turmeric, 1/2 teaspoon cayenne, and 2 tablespoons coriander to onion in skillet. Cook 3 minutes, stirring. Add tomato sauce, 1 1/2 cups water, and the bay leaf. Season with salt. Bring to a boil. Reduce heat to medium-low; simmer.
  • Mix reserved onion, lamb, breadcrumbs, cilantro, egg, 1 teaspoon each garlic paste and salt, and remaining teaspoon coriander and 1/4 teaspoon cayenne. Divide into 24 pieces; roll into balls. Stuff each meatball with a prune quarter; roll to enclose.
  • Add meatballs to simmering sauce (add water if meatballs are not covered by sauce). Cook until sauce has thickened, about 40 minutes. Stir in garam masala.
