GRANDMA'S BLUEBERRY BUCKLE

This is the recipe that my Grandmother handed down to me. I always make it during blueberry season. My guests just love it!

1 ½ cups white sugar
½ cup butter, softened
2 large eggs
4 cups all-purpose flour
4 teaspoons baking powder
½ teaspoon salt
1 cup milk
4 cups fresh blueberries
1 ⅓ cups white sugar
1 cup all-purpose flour
1 teaspoon ground cinnamon
⅔ cup cold butter, cut into cubes

Steps:

  • Preheat oven to 375 degrees F (190 degrees C). Grease a 9x13-inch baking pan.
  • Prepare buckle: beat sugar and butter in a bowl using an electric mixer until creamy and smooth. Beat in eggs. Whisk flour, baking powder, and salt together in a separate bowl. Stir flour mixture into creamed butter mixture, alternating with milk, until batter is just combined; fold in blueberries. Pour batter into the prepared pan.
  • Prepare topping: combine sugar, flour, and cinnamon together in a bowl. Cut in cold butter using a pastry blender or 2 knives until topping is crumbly. Sprinkle topping over batter.
  • Bake in the preheated oven until a toothpick inserted into the center comes out clean, 40 to 45 minutes. Cool buckle on a wire rack.

1/2 cup unbleached all-purpose flour (2 ½ ounces)
1/2 cup packed light brown sugar (3 ½ ounces)
2 tablespoons granulated sugar
1/4 teaspoon ground cinnamon
pinch table salt
4 tablespoons unsalted butter (1/2 stick, cut into 8 pieces, softened but still cool)
1 ½ cups unbleached all-purpose flour (7 ½ ounces)
1 ½ teaspoons baking powder
10 tablespoons unsalted butter (1 ¼ stick, softened but still cool)
2/3 cup granulated sugar (about 4 ¾ ounces)
1/2 teaspoon table salt
1/2 teaspoon grated lemon zest
1 ½ teaspoons vanilla extract
2 large eggs (room temperature)
4 cups fresh blueberries (about 20 ounces)
4 ounces cream cheese
1/3 cup confectioners' sugar
pinch table salt
1/2 teaspoon vanilla extract
1 cup heavy cream

Steps:

  • For the streusel: In the bowl of a stand mixer fitted with the paddle attachment, combine flour, sugars, cinnamon, and salt on low speed until well combined and no large brown sugar lumps remain, about 45 seconds. Add butter and mix on low until mixture resembles wet sand and no large butter pieces remain, about 2 1/2 minutes. Transfer streusel to small bowl;set aside.
  • For the cake: Heat oven to 350 degrees. Spray eight-8 ounce (240 ml) ramekins with nonstick cooking spray.
  • In a small bowl, whisk together the flour and baking powder; set aside.
  • In the bowl of a stand mixer fitted with the paddle attachment, cream butter, sugar, salt, and lemon zest at medium-high speed until light and fluffy, about 3 minutes; using rubber spatula, scrape down bowl. Beat in vanilla until combined, about 30 seconds. With mixer running at medium speed, add eggs one at a time; beat until partially incorporated, then scrape down bowl and continue to beat until fully incorporated. With mixer running on low speed, gradually add flour mixture; beat until flour is almost fully incorporated, about 20 seconds. Disengage bowl from mixer; stir batter with rubber spatula, scraping bottom and sides of bowl, until no flour pockets remain and batter is homogenous; batter will be very heavy and thick.
  • Spread about 1/4 cup of batter into the bottom of each ramekin, smoothing the tops. Evenly divide the blueberries between the ramekins. Squeeze a handful of streusel in hand to form a large cohesive clump; break up clump with fingers and sprinkle streusel evenly over one ramekin. Repeat with remaining streusel.
  • Place the ramekins on a baking sheet and bake until deep golden brown and toothpick or wooden skewer inserted into center of each ramekin comes out clean, about 30 to 35 minutes. Cool on wire rack 15 to 20 minutes.
  • While the buckles are cooling, make the whipped cream. In bowl of a stand mixer fitted with whisk attachment, whisk cream cheese, confectioners' sugar, and salt at medium-high speed until light and fluffy, 1-2 minutes, scraping down bowl with rubber spatula as needed. Add vanilla and beat at medium speed until combined, about 30 seconds; scrape down bowl. With machine running at low speed, add heavy cream in slow steady stream; when almost fully combined, increase speed to medium-high and beat until mixture holds soft peaks when whisk is lifted, another 1-2 minutes, scraping down bowl as needed. Top each buckle with a dollop of whipped cream.

1/4 cup packed light brown sugar
1/4 teaspoon ground cinnamon
1/4 teaspoon allspice

4 tablespoons unsalted butter, cut into small cubes
1/2 cup chopped pecans
1 1/4 cups all-purpose flour
1 teaspoon baking powder
1/2 teaspoon kosher salt
1 stick butter, at room temperature
3/4 cup granulated sugar
2 large eggs, at room temperature
3/4 cup buttermilk, well shaken
1 1/2 teaspoons vanilla extract
2 cups fresh blueberries (thawed, if frozen)

Steps:

  • Heat the oven to 350 degrees F. Coat an 8 by 8-inch baking pan with butter or nonstick spray.
  • Topping: Mix the flour, brown sugar, cinnamon, allspice and salt in large bowl. Blend the butter into the mixture until it forms pea-size lumps. Stir in the pecans.
  • Cakes:
  • In a medium-sized bowl, whisk together the flour, baking powder, and salt.
  • In another bowl, add the butter and sugar and beat with a hand mixer until the mixture is light and fluffy, about 3 to 4 minutes. Add the eggs, 1 at a time. Stir in the buttermilk and the vanilla. Slowly add the dry ingredients and stir until completely incorporated. Fold in the berries with a rubber spatula, then add the batter to the baking pan. Sprinkle the streusel topping over the batter. Bake for 45 to 50 minutes. Remove from oven and let cool for before serving.

2 tsp. lemon zest

3 c. fresh blueberries, divided

Steps:

  • Preheat the oven to 375°.
  • For the streusel: Stir together the melted butter, brown sugar, granulated sugar, and cinnamon in a medium bowl. Add the flour and salt, stirring until combined. Set aside while making the cake.
  • For the buckle: Stir together the flour, baking powder, and salt in a medium bowl. Beat the butter and sugar at medium speed using a handheld mixer or stand mixer until creamy in a large bowl. Add eggs, one at a time, beating until just combined after each addition. Gradually add the flour mixture to the butter mixture, alternating with milk, beating until just combined after each addition. Stir in the lemon zest and vanilla, then gently fold in 2 cups of the blueberries.
  • Spray a 9-by-9-inch baking dish with nonstick cooking spray. Spread the batter evenly in the prepared pan; sprinkle the top of the batter with the remaining 1 cup blueberries. Using your fingers, crumble the streusel mixture and sprinkle it evenly over the berries and batter.
  • Bake until a tester comes out clean, 40 to 45 minutes. Let cool 20 minutes before slicing.

In another bowl, combine the flour, baking powder and salt; add to creamed mixture alternately with milk, beating well after each addition. Fold in blueberries. Spread into greased 9-in. square baking pan., For topping, in a small bowl, combine the sugar, flour and cinnamon; cut in butter until crumbly. Sprinkle over blueberry mixture. , Bake until a toothpick inserted in the center comes out clean, 40-45 minutes. Cool on a wire rack. If desired, serve with whipped cream and additional blueberries.
