1 small sweet onion, chopped
¾ cup feta cheese crumbles
¾ cup shredded Cheddar cheese
¼ cup Worcestershire sauce
¼ cup hot sauce
2 tablespoons minced garlic
Fresh cracked black pepper
Coarse sea salt

Steps:

  • Heat charcoal or gas grill to medium. Combine ground pork, onion, cheeses, Worcestershire sauce, hot sauce and garlic in large bowl; mix well with hands. Shape into 1-inch thick patties (9 to 12); sprinkle pepper and salt on both sides.
  • If a smokier flavor is wanted, add a small handful of pecan or oak wood chips to fire about 10 minutes before putting patties on.
  • Grill burgers approximately 15 minutes until internal temperature reaches 165 degrees F, turning every 5 minutes.

6 slices bacon, cut into bite size pieces
8 ounces cremini mushrooms, cleaned and sliced
2 pounds ground chuck
1 large shallot, diced
1 teaspoon black pepper
1 teaspoon coarse salt
2 tablespoons Worcestershire sauce
4 ounces Swiss cheese, cubed
4 sesame seed buns
2 tablespoons grapeseed oil

Steps:

  • Preheat the oven to 400 degrees F
  • Place the bacon in a large saute pan and cook until crispy, about 5 minutes. Remove the bacon with a slotted spoon and reserve 1 tablespoon of the bacon fat in the pan. Add the mushrooms and cook until caramelized, about 5 minutes. Set the mushrooms aside to cool in a bowl.
  • In a large bowl, combine the beef, shallot, black pepper, salt, and Worcestershire. Separate the mixture into 4 equal portions. Divide each portion into 2 separate patties.
  • Combine the cheese into the cooled mushrooms and bacon mixture. Take 1 patty and top with 2-ounces of the filling. Place another patty on top and pinch around the edges to make sure that the filling is totally covered. Make the rest of the patties the same way.
  • Over medium-high heat, heat a large skillet with grapeseed oil. Once hot, add the burgers and cook for 2 minutes per side. Place the pan into the oven and cook for 4 to 6 more minutes for medium burgers.
  • Remove from the oven and serve on a sesame seed bun.

1/2 teaspoon chipotle chile pepper powder
1/2 teaspoon coarse sea salt
1/4 teaspoon freshly ground pepper
1/2 cup shredded Cheddar cheese (2 oz)
4 whole-grain hamburger buns, split
4 leaves red leaf lettuce
4 slices tomato

Steps:

  • Heat gas or charcoal grill. In medium bowl, mix beef, chile pepper powder, salt and pepper. Shape mixture into 8 patties, 1/2 inch thick. In center of each of 4 patties, place 2 tablespoons cheese. Top with remaining patties; press edges to seal.
  • Place patties on grill over medium heat. Cover grill; cook 13 to 15 minutes, turning once, until thermometer inserted in center of patties (inserted in meat, not cheese) reads 160°F. Serve burgers on buns with lettuce and tomato.

1 1/2 to 2 pounds boneless lamb shoulder, in chunks
Salt and pepper to taste
About 1/4 pound smoked mozzarella, in 4 pieces

Steps:

  • Start a charcoal or wood fire or preheat a gas grill. Or, on a stove top, heat a large, heavy skillet over medium-high heat for 3 or 4 minutes.
  • Put meat and some salt and pepper in a food processor, in batches if necessary, and pulse until coarsely ground: finer than chopped, but not much. Taste and adjust seasoning. (If desired, cook a teaspoon of meat in a pan before tasting.) Divide meat into 4 sections and shape each one around a piece of cheese, enclosing it fully.
  • Cook over moderately hot fire: you will be able to hold your hand 3 or 4 inches over rack for a few seconds. Grill burgers about 4 minutes a side for medium-rare, and until cheese begins to melt. (Timing on stove top is the same.)
  • Serve on buns, toast or hard rolls, garnished as you like.

  • Heat grill to medium heat.

12 bacon strips, chopped
2 whole garlic bulbs
2 tablespoons Worcestershire sauce
2 teaspoons pepper
1 teaspoon salt
5 pounds ground beef
12 slices Swiss cheese, quartered
2 large onions, halved and thinly sliced
12 kaiser rolls, split

Steps:

  • In a large skillet, cook bacon over medium heat until crisp. Remove to paper towels with a slotted spoon; drain, reserving 1/2 cup drippings., Remove papery outer skin from garlic (do not peel or separate cloves). Cut tops off of garlic bulbs. Brush with 1 tablespoon bacon drippings. Wrap each bulb in heavy-duty foil. Bake at 425° for 30-35 minutes or until softened. Cool for 10-15 minutes., Squeeze softened garlic into a large bowl; add the Worcestershire sauce, pepper and salt. Crumble beef over mixture and mix well. Shape into 24 patties. 2 tablespoons canola or olive oil
1 hamburger bun, optional

Steps:

  • Divide ground beef into approximately 2 equal portions. Set aside. Line a round mold, such as the lid to a peanut butter jar, with plastic wrap. Pat half of the ground beef into the round mold. Layer with cheese and bacon, being careful not to go too close to the edges. Cover with other half of the ground beef. Press together the edges of ground beef together to seal. Remove the patty from the mold.
  • Heat the oil in a skillet or over high heat. Cook the patty to desired doneness. Serve plain or on a bun, as desired.

1 tablespoon cider vinegar
1 teaspoon smoked paprika
1 1/3 pounds ground pork
-- Kosher salt and ground black pepper, to taste
1/4 cup + 2 tablespoons grated smoked gouda cheese
3 tablespoons minced green onions
4 hamburger buns, lightly toasted
-- Butter lettuce leaves, for garnish
-- Avocado, for garnish

Steps:

  • Combine the barbecue sauce, vinegar and smoked paprika in a small bowl; set aside. Using your hands, lightly mix the ground pork with plenty of salt and pepper, and 1/4 cup of the barbecue sauce mixture. Heat a grill or grill pan over medium heat. Roll about 1/4 of the meat mixture into a ball; flatten with your palm until the patty is about 1/2-inch thick. Scoop 1/4 of the cheese and 1/4 of the green onions into the center, then gather the meat up and around the filling, squeezing the meat together at the top and then rolling again into a ball. Flatten again with your palm, this time to make about a 1-inch patty. Repeat with the remaining meat and ingredients. Cook the patties on the grill or grill pan about 3-4 minutes on each side, until the cheese inside is melted and the pork is cooked. Serve topped with lettuce, sliced avocado, and extra sauce on the toasted buns.

5 slices bacon, chopped
4 scallions, cleaned and trimmed
extra virgin olive oil, for drizzling
1 1/3 lbs ground sirloin
1 tablespoon Worcestershire sauce, eyeball it
1 tablespoon steak seasoning (or coarse salt and black pepper)
1/2 lb extra sharp white cheddar cheese, crumbled
1 cup mayonnaise or 1 cup low-fat mayonnaise
1 teaspoon ground cumin
salt and pepper
4 crusty kaiser rolls, split
4 leaves crisp romaine lettuce

Steps:

  • Preheat grill pan over high heat.
  • In a medium pan brown bacon over medium high heat and drain on paper towel lined plate.
  • Brush scallions with a little oil and grill on hot grill pan 2 or 3 minutes on each side; remove from heat to cool.
  • To make the burgers, combine ground beef with Worcestershire and steak seasoning or salt and pepper; divide meat into 4 equal parts.
  • Combine cheese crumbles and cooked bacon.
  • Take 1/4 of the meat in your hand and make a well in the center of it.
  • Pile in cheese and bacon, then carefully form the burger around the cheese and bacon filling; make sure the fillings are completely covered with meat.
  • When all 4 patties are formed, drizzle burgers with oil and place on hot grill pan.
  • Cook 2 minutes on each side over high heat, reduce heat to medium low and cook burgers 7 or 8 minutes longer, turning occasionally.
  • Do not press down on burgers as they cook.
  • Transfer burgers to a plate and let them rest 5 minutes before serving.
  • To make the green onion mayonnaise, chop cooled, grilled green onions and add to a food processor.
  • Add mayonnaise and cumin to the food processor and pulse the onions and mayonnaise.
  • Season with salt and pepper, to your taste.
  • Pile burgers on crusty buns and top with crisp lettuce leaves and a slather of green onion mayonnaise.
  • As you bite into the burgers, you will find a smoky, cheesy surprise at the center.
