Instant Pot Beef and Bean Chili image

This Instant Pot Beef and Bean Chili is hearty and filling, and packed with lean ground beef and beans! Ready in 30 minutes!

2 tablespoon olive oil
2 pounds lean ground beef
1 large onion (diced)
2 cloves garlic (finely minced)
4 medium carrots (chopped)
2 stalks celery (chopped)
1 green bell pepper (diced)
1 teaspoon dried oregano
2 teaspoons smoked paprika
1 tablespoon mild chili powder
1/2 teaspoon cumin
1/2 teaspoon salt
2 cans beans in tomato sauce ((15 ounce cans))
2 cans kidney beans (drained and rinsed (15 ounce cans))
1 can diced tomatoes ((15 ounce can))
2 cups tomato puree ((tomato passata))
1 1/2 cup beef stock

Steps:

  • Start the Instant Pot on "Saute" mode and let it heat up. Wait until the screen says "Hot" and then add the olive oil and the beef.
  • Brown the beef for about 5 minutes, adding the onion, garlic, carrots, celery, bell pepper, spices, and salt.
  • Continue sauteing for a few minutes more, just until the veggies begin to soften.
  • Add the beans, canned tomatoes, tomato puree, and beef stock and stir everything together well.
  • Place the lid on the Instant Pot and seal the lid. Place the release valve on "sealing".
  • Cook for 10 minutes on "Pressure Cook".
  • When the Pressure Cook time is finished, carefully turn the release valve to "venting" using a long pair of tongs or another long kitchen tool so you don't burn your hand, arm or face. It's a good idea to do this under an exhaust fan in your kitchen, if you have one.
  • When the pressure has released, open the lid and serve in bowls with a dollop of sour cream, some cheese, and some fresh parsley or chives.

The basis for this recipe came from another site. I modified it a bit so, rather than put my changes as comments for his recipe (I hate when people do that), I am posting it as a separate recipe. I have some hints at the bottom for night-before preparations.

1 tablespoon vegetable oil
1 pound lean ground beef
1 large onion, diced
4 cloves garlic, crushed
½ teaspoon salt
¼ cup chili powder
1 tablespoon ground cumin
1 teaspoon dried oregano
1 ½ cups water
4 (15 ounce) cans kidney beans, drained
1 (28 ounce) can crushed tomatoes
2 tablespoons tomato paste

Steps:

  • Turn on a multi-functional pressure cooker (such as Instant Pot®) and select Saute function. Add ground beef. Cook and stir until browned and crumbly, 5 to 7 minutes. Drain and discard grease. Transfer cooked beef to a separate container.
  • Pour oil into the Instant Pot® and select Saute function. Add onion, garlic, and salt. Cook until softened, 5 to 7 minutes. Make a hole in the center of the mixture and add chili powder, cumin, and oregano. Let spices sit for 30 seconds, then stir into the onion. Return cooked beef to the pot and add water. Stir, being sure to scrape any browned bits from the bottom.
  • Stir beans, crushed tomatoes, and tomato paste into the beef mixture. Close and lock the lid. Select Chili function and set the timer for 10 minutes. Allow 10 to 15 minutes for pressure to build.
  • Release pressure using the natural-release method according to manufacturer's instructions, 10 to 40 minutes. Unlock and remove the lid.

  • Brown Ground Beef: Heat up Instant Pot using Sauté More function. Wait until indicator says HOT.Season ground beef generously with kosher salt and freshly ground black pepper. Add 1 tbsp (15ml) olive oil in Instant Pot. Ensure to coat the oil over whole bottom of the pot. Add ground beef in Instant Pot. The ground beef will start to release moisture. At the 5-minute mark, remove the ground beef juice and reserve it in a small mixing bowl. Allow the ground beef to brown. Stir occasionally until they are slightly crisped and browned (~5 – 7 minutes). Taste and adjust the seasoning with more kosher salt and ground black pepper.
  • Mix Chicken Stock Mixture: While the ground beef is browning, mix 1 cup (250ml) unsalted chicken stock, 2 tbsp (30ml) fish sauce, 1 tbsp (15ml) regular soy sauce, and 1 tsp (2.5g) unsweetened cocoa powder in a 500ml measuring cup.
  • Sauté Onion, Garlic and Spices: Add diced onions, minced garlic, 1 tbsp ground cumin seed, 2 tbsp chili powder, 1 tsp dried oregano. Sauté for about 5 minutes until the spices start to release their fragrance. Stir frequently.
  • Deglaze: Pour in ½ cup (125ml) of the Umami Chicken Stock Mixture, fully deglaze the bottom of the pot by scrubbing all the flavorful brown bits with a wooden spoon. Mix the brown bits with the stock mixture.

  • Season the cubed beef generously with salt and pepper to taste. Select Saute. When hot, add 2 tablespoons vegetable oil to the cooking pot. Saute the beef on one side in small batches, cooking for 3 to 5 minutes until brown. Add more oil as needed, and transfer to a plate when done. Continue until all the meat is browned on one side.
  • Add more oil to the cooking pot, along with the onion. Saute for about 3 minutes until tender. Add the garlic and saute for 1 minute more.
  • Add beef broth to the cooking pot and scrape the bottom of the pot to remove all the browned bits. Add the tomatoes, green chilies, tomato paste, chili powder, and cumin. Stir in the browned beef and any juices that may have accumulated on the plate.
