Steps:
- Rinse the peanuts in cool water. Place them in the Instant Pot or electric pressure cooker.
- Add the salt and vinegar. Add enough water to just cover the peanuts. For me, that was about 10 cups. Be cautious to not exceed the max fill line on your appliance.
- Place the lid on and seal. Cook on high pressure for 60 minutes than turn the appliance off and allow the pressure to release naturally. Carefully remove the lid and enjoy!

- Wash and drain the raw peanuts to remove any dirt.
- Add the peanuts to the pressure cooking pot along with the salt, Cajun seasoning and water to cover. If you like, you can place the trivet that comes with the Instant Pot over the peanuts to make sure they stay immersed in the water.
- Place the lid on the Instant Pot and turn the valve to seal. Cook on high pressure for 30 minutes, if you prefer tender and crunchy peanuts. For soft peanuts, cook for 60 minutes at high pressure. When the cook time ends, let the pressure release naturally for 30 minutes.
- Open the lid and allow the peanuts to sit in the cooked salty water for an hour. Serve and enjoy.

- Add peanuts to a colander and rinse them under cold water until the water runs clear.
- Add peanuts to the Instant Pot, slow cooker or a large stock pot.
- Add in the salt and the water.
- Place a steamer basket or trivet on top of the peanuts to force them under the water. Cover the pot and lock lid into place. Turn valve to sealing. Set the manual/pressure cook button to 65 minutes. When time is up let the pot sit for at least 30 minutes before removing the lid. The longer they sit the more tasty they'll be. Slow Cooker: Cover and cook on high for 12 hours. Stove: Bring water to a boil and then turn the heat down to low. Cover the pot and let the peanuts simmer for 3 ½ hours.
- Pour the peanuts into a colander in your sink and drain the water.
- Shell the peanuts with your fingers or teeth, eat and enjoy.
- Store leftovers in and airtight container in the refrigerator for up to 7 days.
INSTANT POT® CAJUN BOILED PEANUTS
I love boiled peanuts but in the past they've been a bit of hassle to make. They've got to be soaked in water overnight, then you have to wait for the giant pot of water to boil, the water evaporates so you have to add more water every hour, and then every time you do that you have to wait for the water to start boiling again. I knew there had to be a way to simplify the process and the Instant Pot® is the solution. While they still take time, the method is hands-off and they are still done quicker than the 8 hours alone it takes to soak them overnight using the stovetop method.

- Rinse and sort the peanuts, discarding any debris or severely cracked shells.
- In the insert pot of the Instant Pot, combine peanuts, salt, star anise, and ginger. Add enough water to cover.
- Place trivet on top of the peanuts and use a heatproof dish to weigh down the trivet. This will help the peanuts stay submerged in liquid.
- Close lid and set the vent to the sealed position. Select a cook time of 80 minutes at high pressure. Once the cook time is complete, allow a natural pressure release.

- Sort through the peanuts, removing any debris. Rinse peanuts well and place into the Instant Pot.
- Add salt to the insert pot.
- Add enough water to cover the peanuts and stir. Keep in mind that they will float, so you will need to place a weight on top of them to keep them submerged. I simply place the trivet that came with the Instant Pot on top of the peanuts, then place a small Pyrex bowl (if you don't have Pyrex, any heatproof bowl/mug should work) on top of the trivet to keep it weighted down. Be sure to not overfill the Instant Pot--refer to your particular model's guidelines on maximum fill.
- Lock the lid in place and close the vent. Using the manual setting, cook on high pressure for 80 minutes.
- When cooking is complete, turn the pressure cooker off of the Keep Warm setting and allow the pressure to completely release naturally.
