1 onion, diced
2 cloves garlic, minced
1 ½ pounds boneless chicken breasts
2 teaspoons chili powder
2 teaspoons ground cumin
1 teaspoon paprika
1 teaspoon salt
½ teaspoon ground black pepper
2 cups frozen corn kernels
½ cup shredded cabbage
1 cup cooked quinoa
1 tablespoon lemon juice
1 (8 ounce) package tortilla chips
1 tablespoon fresh cilantro

Steps:

  • Turn on a multi-functional pressure cooker (such as Instant Pot®). Add chicken stock, tomatoes, onions, and garlic to the pot. Place chicken breasts on top and sprinkle with chili powder, cumin, paprika, salt, and pepper. Add corn and cabbage on top; do not stir. Close and lock the lid. Select high pressure according to manufacturer's instructions; set timer for 8 minutes. Allow 10 to 15 minutes for pressure to build.
  • Release pressure carefully using the quick-release method according to manufacturer's instructions, about 5 minutes. Unlock and remove lid. Remove chicken from pot and place in a plate; shred with 2 forks. Put chicken back into the pot with cooked quinoa, lemon juice, and tortilla chips. Sprinkle with chopped cilantro.

2 tablespoons butter
1 large yellow onion, diced
2 tablespoons minced garlic
4 cups sliced carrots
4 cups sliced fresh mushrooms
14 ounces pre-cooked brown rice (such as Boil-in-Bag®)
2 cups tri-colored quinoa (such as Boil-in-Bag®)
3 frozen skinless, boneless chicken breasts
1 (48 ounce) container chicken broth
½ tablespoon seasoned salt (such as Lawry's®)
½ tablespoon red pepper flakes
½ tablespoon dried parsley
1 teaspoon chili powder
1 pinch salt and ground black pepper to taste

Steps:

  • Turn on a multi-functional pressure cooker (such as Instant Pot®), select Saute function, and add butter. Add onion and garlic to melted butter, stirring until onion begins to soften, 5 to 7 minutes. Add carrots, mushrooms, rice from package, and quinoa. Place frozen chicken on top and add chicken broth, seasoned salt, pepper flakes, parsley, and chili powder. Cancel Saute function.
  • Close and lock the lid. Select high pressure according to manufacturer's instructions; set timer for 8 minutes. Allow 10 to 15 minutes for pressure to build.
  • Release pressure carefully using the quick-release method according to manufacturer's instructions, about 5 minutes. Unlock and remove the lid.
  • Remove chicken breasts to a plate and use two forks to shred meat. Return shredded chicken to the pot and season soup with salt and pepper.

2 tablespoons olive oil
1 tablespoon minced garlic
2 teaspoon fresh grated ginger
2 teaspoon fresh grated lemongrass*
3 large carrots (sliced and halved (~2 heaping cups))
3 large celery stalks (sliced (~2 heaping cups))
1/2 medium yellow onion (finely diced)
8 cups chicken broth
3/4 cup uncooked quinoa
1 tablespoon Frank's Hot Sauce
bundle of rosemary*
1 15-oz. can great northern beans (drained and rinsed)
1 lb. boneless (skinless chicken breast)
3 bay leaves
1/4 teaspoon salt
1/8 teaspoon ground black pepper
1 medium lemon (juiced)
Fresh parsley (for serving)

Steps:

  • First, prepare veggies by slicing and halving 3 large carrots. Then, slice 3 large celery stalks and finely dice a 1/2 medium yellow onion.
  • Heat 2 tablespoons of olive oil in a large stockpot over medium/high heat. When olive oil is fragrant, add in minced garlic, grated ginger, grated lemongrass, carrots, celery, and onion.
  • Sauté veggies for about 5-7 minutes, or until the onions are translucent.
  • Then, add in chicken broth, uncooked quinoa, hot sauce, bundle of rosemary, great northern beans, raw chicken breast, bay leaves, salt, and pepper.
  • Mix and bring to a rolling boil.
  • Once boiling, turn heat down to low and cover. Let simmer for 30 minutes.
  • Once the soup has cooked for a full 30 minutes, remove the rosemary bundle and discard. Remove chicken breast and use 2 forks to shred. Place the shredded chicken back in the stockpot and mix.
  • Turn off heat and squeeze in a full lemon worth of lemon juice and mix.
  • Serve with a lemon wedge and fresh parsley.

1 teaspoon fine ground sea salt

Steps:

  • Preheat an electric pressure cooker using the SAUTE function. When the cooker display reads HOT, add the onion, bell pepper, and jalapeño. Stir until the vegetables begin to soften and the onion becomes translucent.
  • Add the garlic, chicken, vegetable broth, black beans, quinoa, salsa, cumin, cayenne pepper, and sea salt. Stir until combined.
  • Place the lid on the cooker and make sure the vent valve is in the SEALING position. Using the display panel, select the MANUAL/PRESSURE COOK function and HIGH PRESSURE, and use the +/- buttons until the display reads 10 minutes.
  • When the cooker beeps to let you know it's finished, switch the vent valve from the SEALING to the VENTING position, administering a quick release. Use caution while the steam escapes- it's hot.
  • Serve warm with a leafy green side salad or your favorite corn tortilla chips.

1 teaspoon turmeric
1 teaspoon ground cumin
½ teaspoon kosher salt
¼ teaspoon black pepper
1 ½ pounds chicken thighs (6 thighs) (boneless & skinless, or skin-on & bone-in)
3 tablespoons olive oil, divided
2 garlic cloves, minced
1 small yellow onion, finely diced
1 teaspoon ginger, minced
1 cup uncooked quinoa
1 can (14.5 ounce) chickpeas, rinsed and drained
½ cup dried cherries
1 ½ cups chicken broth
optional: finely chopped cilantro leaves or parsley leaves

Steps:

  • In a small bowl, mix together paprika, turmeric, cumin, salt, and pepper.
  • Coat chicken with spice rub as evenly as possible on all sides. Set aside on a plate.
  • Add 2 tablespoons olive oil to the bottom of the Instant Pot pan.
  • Press SAUTE mode on the Instant Pot.
  • Add chicken to Instant Pot and sauté until slightly brown. Then flip over each piece of chicken and continue cooking until that side is slightly browned. Remove from Instant Pot and set aside on a plate.
  • Add remaining 1 tablespoon olive oil to the bottom of the pot.
  • Stir in garlic, onions, and ginger. Sauté for 2 minutes, stirring slowly.
  • Mix in the quinoa (or couscous), dried cherries (or dried apricots), chickpeas, chicken broth, and the browned chicken.
  • Close the Instant Pot lid and be sure the pressure release valve is in SEALING.
  • Press POULTRY (or Manual) and set time to 10 minutes.
  • Instant Pot will bring contents to pressure and the display will say ON during this time. Once the contents have reached pressure (this can take up to 10 minutes), the Instant Pot will beep and start counting down 10 minutes. At the end (when those 10 minutes are up), use tongs to very carefully turn the knob to VENTING in order to Quick Release.
  • Once the float valve pin is down, and steam stops being released through the valve (this can take a few minutes; your time may vary), press CANCEL and carefully open the lid.
  • Chicken is done when a thermometer inserted into the meat registers 165° F.
  • Plate, garnish with optional cilantro or parsley leaves, and serve immediately.
