1 1/2 lbs. boneless skinless chicken breasts (, cut in chunks)
1/4 cup chopped cilantro
1/4 cup fresh lime juice
3 cloves garlic (, minced)
2 Tbs. olive oil
1 tsp. chili powder
3/4 tsp. kosher salt
1 avocado (, pitted, peeled and chopped)
lime wedges

Steps:

  • Arrange chicken pieces in bottom of Instant Pot.
  • Combine cilantro, lime juice, garlic, olive oil, chili powder and kosher salt. Pour over chicken.
  • Seal Instant Pot according to manufacturer's instructions and cook on Poultry cycle for 10 minutes.
  • Cool according to manufacturer's instructions.
  • Serve chicken and lime sauce over hot cooked rice or rice noodles.
  • Top with chopped avocado and serve with lime wedges.

24 ounces salsa, (whatever type you like)
1 package reduced sodium taco seasoning
1 lime juiced and zested
1/4 cup water or stock
1 can reduced sodium black beans, (rinsed and drained)
1 jalapeno, (seeded and diced)
2 lbs boneless skinless chicken breasts
handful fresh cilantro, (chopped)
cooked white rice, (serve chicken on top)
flour tortillas, (serve like tacos)
corn tortillas, (serve like tacos)
cooked quinoa, (place chicken on top)
limes, (squeezed)
colby jack cheese, (shredded)

Steps:

  • Using at least a 6qt instant pot, add all ingredients for the chicken into the pot, except the cilantro. Close the lid, seal the pressure valve, then set on manual/high for 15 minutes.
  • Once the time is up, allow the pressure to naturally release for 10 minutes (don't touch it), then manually release the rest of the pressure (by flipping the valve). Remove lid.
  • Shred the chicken breast (either remove and shred or shred in pot using 2 forks); then add the cilantro into the pot. Stir everything together to coat.
  • Serve as desired, top with desired garnishes.

Juice from 2 limes
1 bunch fresh cilantro (roughly chopped)
12 ounces frozen corn
2 garlic cloves (minced)
½ red onion (diced)
15 ounces black beans ( (drained and rinsed))
1 teaspoon cumin
salt and pepper (to taste)

Steps:

  • Place all ingredients in your Instant Pot
  • Put your lid on the pot and put the VALVE on sealing (not venting).
  • Press the MANUAL (or PRESSURE COOK) button and set timer for 20 minutes (or 25 minutes if chicken is frozen).
  • When timer is finished, do a QUICK RELEASE of the pressure by moving the valve to VENTING
  • Remove chicken from pot and shred, then add back into Instant Pot and mix with other ingredients.
  • Serve on top of nachos, salads, in tacos, wrapped in burritos - the possibilities are endless!

1 teaspoon ground cumin
½ teaspoon ground coriander

2 limes, divided
1 ½ pounds boneless, skinless chicken breasts, cut into strips
½ onion, thinly sliced
¼ cup canned diced tomatoes, undrained
6 tortilla shells

Steps:

  • Combine 3 tablespoons olive oil, garlic, cumin, coriander, cilantro, and juice of 1 lime in a gallon-sized resealable plastic bag. Add chicken and marinate for 30 minutes.
  • Turn on a multi-functional pressure cooker (such as Instant Pot®) and select Saute function. Heat remaining 1 tablespoon olive oil. Add onion rings and cook until soft and translucent. Add diced tomatoes with liquid. Drain chicken from marinade and add to Instant Pot®. Close and lock the lid.
  • Select high pressure according to manufacturer's instructions; set timer for 10 minutes. Allow 10 to 15 minutes for pressure to build.
  • Release pressure using the natural-release method according to manufacturer's instructions, for 6 minutes. Release remaining pressure carefully using the quick-release method, about 5 minutes. 1 ounce taco seasoning mix
1 lime, juice of, and zested
1/4 cup water or 1/4 cup stock
15 ounces black beans, rinsed and drained

fresh cilantro, to taste

Steps:

  • Using at least a 6 quart instant pot, add all ingredients to the chicken into the pot except cilantro.

Steps:

  • Turn on a multi-functional pressure cooker (such as Instant Pot®) and select Saute function. Add butter. Once butter is melted and hot, stir in rice. Cook, stirring occasionally, until rice becomes opaque, about 2 minutes. Stir in water, chicken broth, lime juice, and salt. Close and lock the lid.
