Instant Pot Green Beans are quick to make and take less than 15 minutes from start to finish. One of the easiest Instant Pot side dishes!

1 pound fresh green beans
1 cup water
salt, pepper, fresh lemon, butter, etc. (as desired for serving)

Steps:

  • Wash the green beans and trim off the tough stem ends.
  • Pour 1 cup of water into the Instant Pot inner pot and add a steamer basket to the pot. Place the green beans in the steamer basket. If you do not have a steamer basket you can cook the green beans right in the water in the pot.
  • Close the Instant Pot lid and turn the steam release valve to the sealing position. Set the pressure cook time to 0 minutes at high pressure for crisp-tender green beans. Even though the pressure cook time is set to zero, the green beans will cook while the Instant Pot pressurizes. If you want your green beans softer, set the cook time for 1-3 minutes, depending on how soft you want your green beans.
  • The Instant Pot will take about 8 minutes to reach pressure. When the cook time finishes, the Instant Pot should beep a few times to let you know the cooking cycle has ended (assuming you haven't turned off the sound on your pot). Immediately quick release the pressure by carefully turning the steam release valve to the venting position. When the pin drops down carefully open the Instant Pot lid.
  • Serve green beans with butter, salt, pepper, and a squeeze of fresh lemon juice, or as desired.

1 pound fresh green beans (ends trimmed)
1 cup water
1 Tablespoon butter (melted)
salt and pepper (to taste)

Steps:

  • Rinse and dry green beans, then trim off the ends.
  • Place 1 cup water in the Instant Pot, then place the steamer rack in the Instant Pot.
  • Place green beans on top of the steamer rack, then replace lid and move vent to SEALING.
  • Cook on MANUAL, LOW PRESSURE for 0-2 minutes, depending how soft you like your green beans. For firmer green beans cook for 0, for softer green beans cook for 2. (We usually cook ours for 1).
  • QUICK RELEASE once the time has expired.
  • Open lid carefully, then remove green beans from the instant pot and toss with melted butter and season with salt and pepper. Serve warm.

Steps:

  • Turn on a multi-functional pressure cooker (such as Instant Pot®) and select Saute function. Add bacon to the hot pot and cook until browned, about 5 minutes. Add green beans and cook for 1 minute. Add water. Close and lock the lid. Select high pressure according to manufacturer's instructions; set timer for 4 minutes. Allow 10 minutes for pressure to build.

1 pound dried great Northern beans, picked though and rinsed
3 bay leaves
2 garlic cloves, peeled and gently smashed
3 tablespoons chopped rosemary
2 tablespoons extra-virgin olive oil
2 teaspoons kosher salt
1/2 teaspoon freshly ground black pepper
1 bunch Swiss chard
1 bunch Lacinato (Tuscan or dinosaur) kale
3 ounces baby spinach
3 tablespoons minced chives
Crusty French baguette, toasted

Steps:

  • Place the beans, bay leaves, garlic, rosemary, olive oil, salt, pepper and 6 cups water in a 6-quart Instant Pot® and stir to combine. Follow the manufacturer's guide for locking the lid and preparing to cook. Set to pressure cook on high (or "beans" setting) and cook for 1 hour. After the pressure-cook cycle is complete, follow the manufacturer's guide for quick release and wait until the quick-release cycle is complete.
  • While the beans cook, rinse the chard and kale. Remove the tough inner ribs from each leaf, then slice the leaves into 2-inch pieces. Set aside.
  • Being careful of any remaining steam, unlock and remove the lid of the pot. Remove and discard the bay leaves. Set the pot to normal saute. Working in batches, stir in the Swiss chard, kale and spinach. Cook, stirring occasionally, until the greens are tender and you have a thick, creamy stew, 5 to 7 minutes.
  • Taste the stew and add more salt or pepper if needed. Ladle the stew into shallow bowls, drizzle with a little olive oil, sprinkle with chives and serve with chunks of baguette.

Steps:

Take your time cooking the bacon in order to render out all the fat. Add onions and cook, stirring frequently, until soft and translucent, about 3 minutes.
  • Pour in vinegar and scrape up the brown bits from the bottom of the pot. Pour in beans and their liquid; season with salt and pepper. Stir in radishes. Close and lock the lid.
