Instant Pot peach muffin bites are such delicious little bites.

Number Of Ingredients 13

Ingredients

1 cup flour
2 teaspoons baking powder
1/8 teaspoon salt
1/2 teaspoon cinnamon
1/2 cup brown sugar
1 egg
1/4 cup oil
1/4 cup peach juice (from canned peaches)
1/4 cup milk
1/4 teaspoon vanilla
1/2 cup canned peaches (chopped)
Topping
brown sugar

Steps:

1. Combine flour, baking powder, salt cinnamon and brown sugar in a bowl. 2. In a separate bowl combine egg, oil, peach juice, milk and vanilla. 3. Mix wet ingredients into dry ingredients and add chopped peaches. 4. Stir muffin batter just until peaches are mixed into batter. 5. Sprinkle brown sugar in the bottom of each egg bite mold. Scoop mixture filling the mold halfway. 6. Pour 1 cup of water in the bottom of the Instant Pot. Place egg bite mold on the trivet. Pressure cook for 14 minutes with a natural pressure release. 7. Allow muffins to cool slightly and then remove from the mold. 8. Bite in and enjoy!
