Instant Pot Pinto Beans Recipe (Charro Style) image

Tasty pinto bean recipe that are great on their own or as in another recipe. Beans are the perfect "instant pot" food! Give this recipe a try!

8 slices bacon (sliced into lardon (or chopped))
1 lb dry pinto beans
1 medium onion (chopped)
1 - 4 oz Can Green Chiles (mild or hot, to your taste)
4 cups water
2 cups beef stock (homemade if you have it)
2 cloves garlic (smashed & minced)
1/2 fresh jalapeno (minced)
1 tbsp Cumin
1 tsp Garlic Powder
1 tsp Chili Powder
Salt & Pepper to Taste

Steps:

  • Set your pressure cooker to "Browning" setting and start the bacon browning
  • While bacon is browning, rinse your dry beans and pick through for any stones or other smutz you might find.
  • When bacon is crispy, drain and reserve 1-2 Tbsp of your bacon fat, add it back to the instant pot and saute the onions in the bacon fat (or use olive oil if you're health conscious).
  • When onions are soft, add back in the bacon then addin the pinto beans, water, stock, garlic, seasoning, green chiles.
  • Place lid and set to high pressure and 45 minutes.
  • When done, let pressure come off naturally - this will likely take about half an hour. Be patient - if you do a quick pressure release, you'll likely end up with some tough beans.
  • When you can remove the lid, sample and then salt and pepper to your taste.
  • Enjoy!

3 slices bacon
4 cups chicken broth
1 pound dried pinto beans, rinsed
1 ½ cups water
½ cup chopped onions, or to taste
2 green chile peppers
1 ¼ teaspoons garlic powder
1 ¼ teaspoons kosher salt
1 teaspoon chili powder
½ teaspoon ground cumin
½ teaspoon paprika

Steps:

  • Turn on a multi-functional pressure cooker (such as Instant Pot®) and select Saute function. Add bacon and cook, 4 to 6 minutes, turning once. Add chicken broth, pinto beans, water, onions, chile peppers, garlic powder, salt, chili powder, cumin, and paprika. Close and lock the lid.
  • Select high pressure according to manufacturer's instructions; set timer for 45 minutes. Allow 10 to 15 minutes for pressure to build.
  • Release pressure using the natural-release method according to manufacturer's instructions, 10 to 40 minutes. Unlock and remove the lid. Remove bacon and chile peppers. Mash beans with a potato masher until they reach desired consistency.

8 oz dried pinto beans
1 quart water
1.5 tbsp salt (divided)
1 tbsp olive oil
1 onion (diced)
2 cloves garlic (minced)
2 cups chicken or vegetable broth
1/4 cup guajillo sauce or red enchilada sauce
1 tbsp fresh cilantro (optional)

Steps:

  • Combine beans, water and 1 tbsp of salt in a large bowl. Soak for at least 8 hours or overnight. Drain and rinse the pinto beans.

½ cup roughly chopped cilantro, or to taste
1 jalapeno pepper, minced

2 teaspoons tomato-flavored bouillon
2 teaspoons vegetable bouillon
½ teaspoon chili powder
½ teaspoon ground paprika
½ teaspoon ground cumin
½ teaspoon ground black pepper

Steps:

  • Combine water, pinto beans, onion, salsa, cilantro, jalapeno pepper, garlic, tomato bouillon, vegetable bouillon, chili powder, paprika, cumin, and black pepper in an electric pressure cooker (such as Instant Pot®). Close and lock the lid. Select Bean/Chili function; set timer for 45 minutes. Cooker will reach high pressure in 10 to 15 minutes.
  • Release pressure using the natural-release method according to manufacturer's instructions, 10 to 40 minutes. Unlock and remove lid.

  • With Instant Pot set to sauté mode, cook the bacon pieces until fat is fully rendered. For this recipe, I will cook the bacon until it is crispy. Be sure to stir frequently to prevent burning. Once done, remove cooked bacon pieces and set aside to be used later. Keep the grease in the Instant Pot.
