INSTANT POT SALMON WITH GARLIC POTATOES AND GREENS

Instant Pot Salmon with Garlic Potatoes and Greens image

Provided by Food Network Kitchen

Categories     main-dish

Time 30m

Yield 4 servings

Number Of Ingredients 8

1 1/4 pounds small red-skinned potatoes, halved or quartered
4 tablespoons unsalted butter
Kosher salt and freshly ground pepper
Four 5- to 6-ounce skin-on center-cut salmon fillets (3/4 to 1 inch thick)
1/4 teaspoon paprika
1/2 teaspoon grated lemon zest, plus lemon wedges for serving
4 cloves garlic, minced
4 cups packed mixed baby spinach and arugula (about 3 1/2 ounces)

Steps:

  • Put the potatoes in the bottom of an Instant Pot. Add 1 cup water, 2 tablespoons of the butter, 1/2 teaspoon salt and a few grinds of pepper. Place the pot's steam rack over the potatoes.
  • Rub the top and sides of the salmon fillets with the paprika and lemon zest and season generously with salt and pepper. Place skin-side down on the rack. Put on the lid, making sure the steam valve is in the sealing position, and set the cooker to high pressure for 3 minutes. When finished, carefully turn the steam valve to the venting position to release the pressure.
  • Remove the salmon and rack and set the cooker to saute at normal heat. When the potatoes start sizzling, add the garlic and cook, stirring, until softened, 1 to 2 minutes; stir in the remaining 2 tablespoons butter and season generously with salt and pepper. Smash the potatoes with a fork or wooden spoon until chunky.
  • Turn off the cooker. Add the mixed greens to the potatoes and stir until wilted, 1 to 2 minutes. Season with salt and pepper. Divide the salmon and potato mixture among plates. Serve with lemon wedges.

SOY GINGER SALMON

Soy Ginger Salmon image

Salmon is marinated in soy, brown sugar, juice, spices, and fresh ginger; then broiled to perfection! My family and friends rave about this fish with every bite. Even my husband, who wouldn't eat salmon, now asks when we're having it again. Please try, for you and your family's health!

Time 3h20m

Yield 4

Number Of Ingredients 8

1 pound salmon fillets
⅓ cup brown sugar, divided
2 teaspoons lemon pepper, divided
1 teaspoon garlic powder, divided
⅓ cup low sodium soy sauce
1 tablespoon olive oil
1 (1 inch) piece fresh ginger root, minced
⅓ cup orange juice

Steps:

  • Rub salmon with about 1 tablespoon brown sugar. Lightly sprinkle with lemon pepper and garlic powder; rub seasoning into fish.
  • Into a small saucepan set over medium heat, pour soy sauce and olive oil. Stir in ginger and remaining brown sugar, lemon pepper, and garlic powder. Bring to a gentle simmer, stirring constantly until sugar has dissolved. Remove from heat, stir in orange juice.
  • Place fish and marinade into a resealable plastic bag, seal, and refrigerate overnight, or for at least 3 hours.
  • Preheat broiler. Place fish in a foil-lined baking pan. Reserve marinade.
  • Broil fish skin-side up, 2 minutes. Remove from oven, pull skin off with tongs. Baste with marinade, return to oven, and broil 2 minutes more. Turn fish, and broil until fish flakes easily, about 4 minutes. Remove from oven, and let sit 5 minutes before serving.

PRESSURE COOKER VIETNAMESE CARAMEL SALMON

Pressure Cooker Vietnamese Caramel Salmon image

Searing salmon in a tangy lime and ginger caramel that's spiked with Asian fish sauce is one of my favorite ways to cook the fish. Usually I make this in a skillet, starting it on the stovetop and finishing it in the oven. But it cooks beautifully and very quickly in the pressure cooker, turning wonderfully tender. If you like your salmon slightly rare in the center, seek out thick center-cut fillets. They are less likely to overcook than are thinner pieces. This is one of 10 recipes from Melissa Clark's "Dinner in an Instant: 75 Modern Recipes for Your Pressure Cooker, Multicooker, and Instant Pot" (Clarkson Potter, 2017). Melissa Clark's "Dinner in an Instant" is available everywhere books are sold. Order your copy today.

Categories     dinner, cookbook exclusive, seafood, main course

Time 25m

Yield 4 servings

Number Of Ingredients 11

1 tablespoon coconut oil, melted, or 1 tablespoon extra-virgin olive oil
1/3 cup packed light brown sugar
3 tablespoons Asian fish sauce
1 1/2 tablespoons soy sauce
1 teaspoon grated peeled fresh ginger
Finely grated zest of 1 lime
Juice of 1/2 lime
1/2 teaspoon freshly ground black pepper
4 skinless salmon fillets, preferably center-cut pieces, 6 to 8 ounces each
Sliced scallions (white and green parts), for garnish
Fresh cilantro leaves, for garnish

Steps:

  • Using the sauté function, whisk together the oil, brown sugar, fish sauce, soy sauce, ginger, lime zest and juice, and black pepper in the pressure cooker. Bring to a simmer and then turn off the heat.
  • Place the fish in the pressure cooker, skin-side up (if there is skin still attached, that is). Spoon the sauce over the fish, cover, and cook on low pressure for 1 minute. Let the pressure release naturally for 5 minutes; then release the remaining pressure manually. Check the fish for doneness by cutting into one of the fillets. If you prefer your salmon more well-done, cook it for another minute using the sauté function.
  • Carefully lift the salmon fillets onto a serving platter, flipping them over so the browned caramelized side is facing up. Reduce the sauce on the sauté function until it is thick and syrupy, about 3 minutes. Spoon the sauce over the salmon and garnish it with the scallions and cilantro.

INSTANT POT SOY-GINGER SALMON

Instant Pot Soy-Ginger Salmon image

Frozen salmon will cook very quickly and beautifully in the Instant Pot®. We took advantage of the pressure-cooker function, which can infuse so much flavor, by adding savory ingredients like soy sauce and lime. Make note that fattier, thicker fish fillets (preferably center cut) hold up to pressure cooking best.

Provided by Food Network Kitchen

Categories     main-dish

Time 15m

Yield 4 servings

Number Of Ingredients 10

3 tablespoons soy sauce
1 teaspoon finely grated lime zest and 3 tablespoons fresh lime juice, plus lime wedges for serving
3 tablespoons packed brown sugar
2 tablespoons sesame oil
1 teaspoon finely grated peeled fresh ginger
1/4 teaspoon freshly ground black pepper
4 frozen skinless salmon fillets, preferably thick center-cut pieces (about 6 ounces each)
2 tablespoons finely chopped scallions
3 tablespoons cilantro leaves
Cooked rice, for serving

Steps:

  • Add the soy sauce, lime zest and juice, brown sugar, sesame oil, ginger and pepper to the bowl insert of a 6- or 8-quart Instant Pot®. Set to high saute for 3 minutes (see Cook's Note), stirring the sauce with a wooden spoon to combine. Add the salmon fillets, turning them to coat with the sauce (it's fine it they overlap).
  • Follow the manufacturer's guide for locking the lid and preparing to cook. Set to pressure cook on low for 1 minute. After the pressure-cook cycle is complete, follow the manufacturer's guide for natural release. After 2 minutes, being careful of any remaining steam, unlock and remove the lid. Check one fillet for doneness by gently cutting into it. If you prefer your salmon more well done, cook for another minute using the high saute setting.
  • Carefully transfer the salmon fillets to a serving platter using a metal spatula. Set the pot to high saute for 3 minutes and reduce the sauce until syrupy, stirring frequently. Spoon the sauce onto the salmon fillets. Top with the scallions and cilantro and serve with the rice and lime wedges.

  • Pour 1 cup water into the Instant Pot and arrange the handled trivet on the bottom. Place the salmon fillets on the trivet in a single layer, skin side down. Sprinkle them generously with salt and pepper.
  • Secure the lid and move the steam release valve to Sealing. Select Manual/Pressure Cook to cook on high pressure for 0 minutes (don’t worry, the cooking actually starts during the pressure build-up and release and that’s why the timer is only set to 0 minutes). When the cooking cycle is complete, immediately move the steam release valve to Venting to quickly release the steam pressure.
  • While the fish is cooking, make the dressing. Combine the olive oil, soy sauce, vinegar, ginger, garlic, maple syrup, and sesame oil in a blender and blend until smooth, about 1 minute. Set aside until ready to serve.
  • When the floating valve drops, remove the lid and place the broccoli directly on top of the cooked fish. Secure the lid again and move the steam release valve to Sealing. Select Manual/Pressure Cook to cook on high pressure for 0 minutes (again, the cooking actually happens even before the timer starts). When the cooking cycle is complete, immediately move the steam release valve to Venting to quickly release the steam pressure.
