SCALLOPED SWEET CORN CASSEROLE



Scalloped Sweet Corn Casserole image

This is my Grandma Ostendorf's corn recipe I grew up enjoying. Now a grandmother myself, I still serve this comfy, delicious side as a family classic. -Lonnie Hartstack, Clarinda, Iowa

Number Of Ingredients 14

4 teaspoons cornstarch
2/3 cup water
1/4 cup butter, cubed
3 cups fresh or frozen corn
1 can (5 ounces) evaporated milk
3/4 teaspoon plus 1-1/2 teaspoons sugar, divided
1/2 teaspoon plus 3/4 teaspoon salt, divided
3 large eggs
3/4 cup 2% milk
1/4 teaspoon pepper
3 cups cubed bread
1 small onion, chopped
1 cup Rice Krispies, slightly crushed
3 tablespoons butter, melted

Steps:

  • Preheat oven to 350°. In a small bowl, mix cornstarch and water until smooth. In a large saucepan, heat butter over medium heat. Stir in corn, evaporated milk, 3/4 teaspoon sugar and 1/2 teaspoon salt; bring just to a boil. Stir in cornstarch mixture; return to a boil, stirring constantly. Cook and stir 1-2 minutes or until thickened; cool slightly., In a large bowl, whisk eggs, milk, pepper and the remaining sugar and salt until blended. Stir in bread, onion and corn mixture. Transfer to a greased 8-in. square or 1-1/2-qt. baking dish., Bake, uncovered, 40 minutes. In a small bowl, toss Rice Krispies with melted butter; sprinkle over casserole. Bake 10-15 minutes longer or until golden brown. Freeze option: Cool unbaked casserole, reserving Rice Krispies topping for baking; cover and freeze. To use, partially thaw in refrigerator overnight. Remove from refrigerator 30 minutes before baking. Preheat oven to 350°. Bake casserole as directed, increasing time as necessary to heat through and for a thermometer inserted in center to read 165°.

I only wish I knew how many times I've made this dish for reunions and other get-togethers during the past 40 years. It seems no matter how much I make, there are never any leftovers. I've even gotten long-distance recipe requests from people who've moved away and miss my corn casserole.

1 pound bacon, diced
2 cups soft bread crumbs
1/2 cup chopped green pepper
1/4 cup finely chopped onion
2 cans (14-3/4 ounces each) cream-style corn

Steps:

  • In a skillet, fry the bacon until lightly browned. Remove and set aside. Pour 1/8 to 1/4 cup of bacon drippings over bread crumbs; set aside. Reserve 2 tablespoons drippings; saute green pepper and onion in reserved drippings until tender. Stir in the corn, bacon and half of bread crumbs. , Spoon into a 1-qt. baking dish; sprinkle with remaining crumbs. Bake, uncovered, at 350° for 20-25 minutes or until bubbly.

1 (14.75 ounce) can whole kernel corn, drained
1 (14.75 ounce) can cream-style corn
1 cup KRAFT Shredded Sharp Cheddar Cheese
½ cup chopped red bell peppers

Steps:

  • Heat oven to 375 degrees F.
  • Mix eggs, sour cream, milk, onion powder and chipotle chile powder in large bowl until blended. Add hash brown potatoes, whole kernel corn, cream-style corn, shredded Cheddar cheese, and chopped peppers; mix well.
  • Spoon into 13x9-inch pan sprayed with cooking spray.
  • Bake 40 to 45 min. or until potato mixture is heated through and top is golden brown.

Delicious recipe for a corn side dish, very indulgent and rich. Great potluck dish for dinners. Note: for a lower-fat version of this, use half the bacon, butter, and flour.

1 lb bacon
1/2 cup butter
1/2 medium onion, diced
1/2 cup celery, diced
1 red bell pepper, diced
1 green bell pepper, diced
5 tablespoons all-purpose flour
2 cups sour cream
2 lbs fresh corn (or frozen corn, thawed)
1 tablespoon fresh parsley, chopped
salt and pepper, to taste
bacon drippings (optional)

Steps:

  • Preheat oven to 350 degrees.
  • Dice bacon and cook. Drain and set aside. Reserve half of bacon drippings to saute the vegetables with.
  • Melt butter over medium heat in a large pot.
  • Saute onions, celery, and bell peppers until tender.
  • Stir in flour, then sour cream, until well combined.
  • Add in thawed corn and most of the bacon bits and season with salt and pepper at this time.
  • Pour mixture into 9X13" glass baking casserole dish. Sprinkle on the remaining bacon bits over the top.
  • Bake for 30-45 minutes, until top is lightly browned.
  • Garnish with chopped parsley for that extra "pop" of color.
