Alfredo Pasta with Bacon image

A decadent dinner recipe, this Alfredo Pasta with Bacon would be the perfect meal for a special night in. It tastes as good as eating out!

16 oz. spaghetti noodles, dry (or other long pasta)
1/4 lb bacon
1/4 cup butter
1/2 cup all-purpose flour
1 1/2 cups chicken broth
1 cup heavy whipping cream
1 cup grated Parmesan cheese
Parsley, for garnish (optional)

Steps:

  • Bring a large pot of water to a boil. Salt generously. Add the pasta and cook until al dente. Reserve a mug full (about 1 cup) of the pasta water then drain the pasta. Return the pasta to the pot.
  • While the pasta is cooking, cut the bacon into bite-sized pieces. Cook in a large skillet over medium-high heat until crisp. Remove the bacon with a slotted spoon to a plate lined with paper towels to drain.
  • Add the butter to the bacon grease in the skillet and cook until the butter is melted. Whisk in the flour and cook for a minute or two.
  • Slowly whisk in the chicken broth and the cream. Cook for a few minutes, until the sauce has started to thicken up. Add in the Parmesan and stir until melted.
  • Pour the Alfredo sauce and the reserved bacon over the pasta in the pot. Stir to coat. If needed, add some of the reserved pasta water to loosen up the sauce.
  • Serve topped with chopped parsley, if desired.

1 small yellow onion
1 small red onion
1 tablespoon vegetable oil
4 slices uncured bacon, diced
8 ounces guinness black lager beer
1/2 cup half-and-half cream
1/2 cup amish blue cheese
red pepper flakes, to taste
6 sprigs oregano, slapped
8 baby bella mushrooms, halved

Steps:

  • Caramelize onions in oil.
  • Render bacon until crisp.
  • Remove bacon from pan and reserve.
  • Sauté onions and bellas in bacon drippings.
  • Deglaze with beer.
  • Add half & half and reduce sauce.
  • Stir in and melt cheese.
  • Return bacon to the pan.
  • Finish with pepper flakes.
  • Serve over pasta and/ or with chicken.

1 (12 ounce) package bacon
¼ cup bacon drippings
1 small head cabbage, cored and finely chopped
ground black pepper to taste

Steps:

  • Cook bacon in a deep skillet over medium heat until crisp, 5 to 7 minutes. Remove bacon from skillet and drain on a paper towel-lined plate. Reserve 1/4 cup drippings in skillet.
  • Cook and stir cabbage in hot bacon drippings over medium heat until cabbage wilts, 5 to 7 minutes.
  • Crumble bacon over cabbage. Stir and simmer until bacon is warmed, 2 to 3 minutes. Season with black pepper.

  • Remove pan off the heat. Transfer cooked pasta into the sauce along with 1/4 cup of the reserved pasta water. Mix through well to evenly coat in the sauce.
