I made this for my children to take to school on St. Patrick's Day. Everyone loved it. It can be made right before you eat it or a few hours before hand. -Rosanna Fowler, Bedford, Indiana

1 package (8 ounces) cream cheese, softened
1 cup confectioners' sugar
1-1/2 cups whipped topping
1 package (3.4 ounces) instant pistachio pudding mix
10 pecan shortbread cookies, coarsely crushed

Steps:

  • In a small bowl, beat cream cheese and confectioners' sugar. Fold in whipped topping; set aside. Prepare pudding according to package directions; set aside., Spoon 1 tablespoon cookie crumbs into each of eight parfait glasses. Top with half of the pudding and whipped topping mixture. Repeat layers. Top with remaining cookie crumbs. Chill until serving. ,

1 (14 ounce) can sweetened condensed milk
1 ⅔ cups Irish whiskey
1 teaspoon instant coffee granules
2 tablespoons chocolate syrup
1 teaspoon vanilla extract
1 teaspoon almond extract

Steps:

  • In a blender, combine heavy cream, sweetened condensed milk, Irish whiskey, instant coffee, chocolate syrup, vanilla extract, and almond extract. Blend on high for 20 to 30 seconds. Store in a tightly sealed container in the refrigerator. Shake well before serving.

RASPBERRY & PISTACHIO PARFAIT



Raspberry & pistachio parfait image

Sweet and nutty, this delicate dessert is ideal for after a big Sunday dinner, serve chilled and covered in blitzed pistachios for some crunch

500g raspberries
6 large egg yolks
100g golden caster sugar
125g golden caster sugar
2 large egg whites
oil , for greasing
300ml double cream
300g pistachios , 100g chopped, 200g blitzed to a crumb
100g raspberries , halved, plus extra to serve

Steps:

  • Grease a 900g loaf tin with oil, then line with baking parchment. To make the purée, blitz the raspberries to a pulp in a blender, then pass through a fine sieve into a saucepan. Gently reduce the purée on a low heat for 30 mins, stirring occasionally, until the colour has intensified and the purée has reduced to about 200ml. Remove from the heat and leave to cool.
  • While the purée cools, put the egg yolks and sugar in a glass bowl and whisk over a pan of simmering water for 10 mins until the eggs are pale, thick and doubled in volume. Set aside.
  • Next, put the sugar for the meringue in a saucepan with 2 tbsp water and heat until the syrup reaches 120C on a thermometer. While the sugar is coming up to temperature, use a mixer or electric whisk, to whisk the egg whites on the lowest setting. Once the sugar has reached 120C, carefully pour onto the egg whites and turn the mixer or electric whisk up, continuing to whisk until the whites are cool.
  • Next, in a clean bowl, whisk the cream until it has soft peaks. Add the purée and chopped pistachios, then fold in the yolks. Once combined, fold in half the whites. Add the raspberries with the remaining whites, gently fold together, then pour into the lined loaf tin. Put in the freezer overnight.
  • The next day, remove the parfait from the tin. Cover it completely in the blitzed pistachios, then place on a tray, cover in cling film and return it to the freezer. When you're ready to serve, slice the parfait and serve with a few fresh raspberries.

1/2 cup butter, softened
1 teaspoon sugar
1/4 teaspoon salt
1 cup all-purpose flour
4 large eggs, room temperature
1 package (3.4 ounces) instant pistachio pudding mix
1-3/4 cups whipped topping

Steps:

  • In a large saucepan, bring water, butter, sugar and salt to a boil. Add flour all at once; stir until a smooth ball forms. Remove from heat; let stand for 5 minutes. , Add 1 egg at a time, beating well after each addition. Beat until mixture is smooth and shiny. Drop by rounded teaspoonfuls 2 in. apart onto ungreased baking sheets. , Bake at 400° until golden brown, 15-20 minutes. Remove to wire racks. Immediately cut a slit in each puff to allow steam to escape; cool. Split puffs; remove soft dough from inside with a fork. Prepare pudding according to package directions for pie; fold in whipped topping. Spoon into cream puffs.

A decadent dessert to make for company when you haven't got a lot of time. These really need to 'set' for at least 4-5 hours before serving (so they're an ideal make-ahead), and life can be made even simpler by using a good-quality, purchased pound cake.

1 cup baileys' irish cream
8 ounces cream cheese, softened
1 cup whipping cream
1/2 cup sugar
1/2 cup bittersweet chocolate, grated
4 -5 slices of thick poundcake, cut into cubes
3/4 cup chocolate curls (approximately)

Steps:

  • In a medium bowl, beat all custard ingredients, except for chocolate, until thick and creamy, about 3-4 minutes.
  • Fold in the grated chocolate.
  • To assemble parfaits: In a tall parfait or sundae glass, pour a tablespoonful or so of the custard.
  • Top with a few cubes of pound cake.
  • Repeat this procedure, layering custard and pound cake, until you have as many layers as the glass can hold, ending with a custard layer.
  • Cover tops with plastic wrap and refrigerate for 4-5 hours to 'set'.
  • Top with chocolate curls.

180 ml cream
250 g chocolate, coarsely chopped
6 egg yolks
2 eggs
110 g caster sugar
400 ml cream, extra
125 ml Baileys Irish Cream, liqueur
150 g shelled roasted pistachios
300 g frozen mixed berries
2 tablespoons caster sugar
1 tablespoon water

Steps:

  • Combine cream and chocolate in a medium saucepan, sir over low heat until smooth.
  • Beat the eggs, the egg yolks in a small bowl with an electric mixer until thick and creamy; with the motor operating, gradually beat hot chocolate mixture into egg mixture.
  • Transfer parfait mixture to a large bowl, cover, refrigerate for 30 minutes, or until mixture thickens slightly.
  • Meanwhile. cut 8 30cm squares of baking paper; fold each paper square into a triangle; then roll one point over to meet the centre point.
  • Twist the second point over to meet the other two points and form a cone shape.
  • Staple or tape the paper cones securely to ensure that they hold their shape. Stand each cone, upright in a tall glass, place glasses on a tray.
  • beat the extra cream in a small bowl of an electric mixer until soft peaks form; fold the extra cream, liqueur and nuts into the parfait mixture.
  • Divide the mixture between the cones.
  • Cover the cones loosely with plastic wrap; freeze; overnight.
  • BERRY COMPOTE:.
  • Combine all the ingredients in a small saucepan; stir over low heat until all the sugar has dissolved.
  • Cool 10 minutes.
  • Place the parfaits on individual serving dishes; carefully remove and discard the paper from each.
  • Serve with Berry Compote.
