Tender and juicy chicken that kids like better than McNuggets®! But they don't know it's better for them.

2 eggs
2 tablespoons ranch dressing
2 cups seasoned bread crumbs
1 tablespoon garlic powder
1 teaspoon paprika
salt and pepper to taste
6 skinless, boneless chicken thighs

Steps:

  • Preheat an oven to 375 degrees F (190 degrees C). Grease a baking sheet with cooking spray.
  • Beat the eggs and ranch dressing together in a bowl; set aside. Stir together the bread crumbs, garlic powder, paprika, salt, and pepper in a large bowl until evenly combined. Dip the chicken thighs into the egg mixture, then press into the breadcrumbs to coat all sides; place the chicken onto the prepared baking sheet.
  • Cook the chicken thighs until no longer pink in the center and the juices run clear, 50 to 60 minutes. An instant-read thermometer inserted into the center should read at least 165 degrees F (74 degrees C).

4 bone-in chicken thighs (about 1-1/2 pounds), skin removed
1/2 cup chicken broth
1/4 cup apple cider or juice
1/4 cup balsamic vinegar
2 tablespoons lemon juice
1/2 teaspoon salt
1/2 teaspoon garlic powder
1/2 teaspoon dried thyme
1/2 teaspoon paprika
1/2 teaspoon pepper
2 tablespoons butter
2 tablespoons all-purpose flour

Steps:

  • Place chicken in a 1-1/2-qt. slow cooker. In a small bowl, combine the broth, cider, vinegar, lemon juice and seasonings; pour over meat. Cover and cook on low for 4-5 hours or until chicken is tender., Remove chicken; keep warm. Skim fat from cooking liquid. In a small saucepan, melt butter; stir in flour until smooth. Gradually add cooking liquid. Bring to a boil; cook and stir for 2-3 minutes or until thickened. Serve with chicken.
