Steps:
- Toss cubed bread with bacon, cheese, and mushrooms, and pour into a 9x13 inch baking dish. Whisk together eggs, half-and-half, and mustard until smooth, then pour evenly over cubed bread. Cover dish with plastic wrap, and refrigerate overnight.
- Preheat oven to 350 degrees F (175 degrees C).
- Remove plastic wrap from the baking dish, and bake strata in preheated oven until the top is golden brown, and the eggs are set, about 1 hour. Let stand for 10 minutes before serving.

- Spray 13x9-inch glass baking dish with cooking spray. Spread bread in baking dish. Sprinkle evenly with 1 1/2 cups of the cheese; mix lightly with bread. Sprinkle with tomatoes.
- In medium bowl, beat eggs, milk, mustard, basil and salt with fork or wire whisk; pour over bread mixture. Cover tightly and refrigerate at least 2 hours but no longer than 24 hours.
- Heat oven to 350°F. Bake uncovered 40 to 45 minutes or until knife inserted in center comes out clean. Meanwhile, in 10-inch skillet, cook bacon over medium heat 8 to 10 minutes, turning occasionally, until crisp; drain on paper towel.
- Crumble bacon. Sprinkle bacon and remaining 1/2 cup cheese over strata. Let stand 10 minutes before serving.

- Using 1/4 cup butter, spread one side of each bread slice with butter. Place half of the bread, butter side down, in a greased 13x9-in. baking dish., In a large skillet, saute the mushrooms and onions in remaining butter. Sprinkle with salt and pepper. - Crumble chorizo into a small skillet; cook and stir over medium heat until fully cooked. Drain. Stir in 1/3 cup cheese and cilantro., Preheat oven to 350°. BACON AND KALE STRATA WITH SUNDRIED TOMATOES

- Butter a 9-by-13-inch baking dish.
- Put the bacon in a large cold skillet then cook over medium heat, stirring occasionally, until crispy, about 10 minutes. Transfer to a paper towel-lined plate with a slotted spoon. Discard all but about 2 tablespoons of the bacon drippings. Increase the heat to medium high, add the kale and cook, stirring occasionally, until tender, about 5 minutes. Set aside.
- Whisk the half-and-half, Parmesan and eggs together in a bowl with 1 1/2 teaspoons salt and a few grinds of pepper.
- Layer half of the bread cubes in the prepared baking dish. Sprinkle with 1 1/2 cups of the cheese, followed by the bacon, kale and sundried tomatoes. Cover with the remaining bread cubes and pour the custard evenly over top. Cover with plastic wrap and refrigerate overnight. (This can also be assembled the day of; just let soak at room temperature 30 minutes to 1 hour before baking.)
- On the day of baking, preheat the oven to 325 degrees F. Let the strata sit at room temperature while the oven preheats. Remove the plastic and sprinkle with the remaining 1/2 cup of cheese. Bake until slightly puffed and just no longer jiggly in the center, 40 to 50 minutes. Let rest 5 minutes before serving.

- Cook bacon in a large nonstick skillet over medium heat until crisp, about 10 minutes. Remove bacon from pan, reserving drippings in the skillet. Crumble when cool enough to handle.
- Add onion to drippings in the skillet; saute for 4 minutes. Add garlic and saute for 1 minute. Remove from heat; combine onion mixture and bacon.
- Whisk milk, eggs, basil, thyme, salt, and pepper together in a bowl until well combined.
- Spray a 9x13-inch baking dish with cooking spray and arrange 1/2 of the bread cubes in the bottom.
- Top bread cubes with 2/3 cup Cheddar cheese, 1/2 of the onion mixture, and 6 tomato slices. Pour 1/2 of the milk mixture over tomatoes. Top with remaining bread cubes and 2/3 cup Cheddar. Top with remaining onion mixture, tomato slices, and milk mixture. Cover and place in the refrigerator to chill at least 8 hours or up to 24 hours.
- Preheat the oven to 325 degrees F (165 degrees C).
- Bake strata in the preheated oven, uncovered, for 55 minutes. Sprinkle with remaining Cheddar cheese and bake until cheese melts, an additional 5 minutes. Let stand 5 minutes before serving.

- Preheat oven to 350°F Spray 8x8-inch baking dish with cooking spray; set aside. Cook bacon in large skillet over medium heat until crisp. Remove bacon from skillet, reserving 2 tablespoons of the drippings in skillet. Drain bacon on paper towels; set aside. ITALIAN BACON, TOMATO & CHICKEN STRATA
I found this recipe in a cookbook I bought in Dallas last mo titled "Slow Cooker & Casserole 1-Dish Meals". The subheader was "Recipes from Grandma's Kitchen - Great for Potlucks & Family Gatherings". I decided you could not ask for a better reccommendation than that, but this turned out to be the only recipe that was new for me. I am hoping I will be able to make & photograph it soon for you ... assuming I can find some good focaccia bread which I think is the real Italian heart of this recipe. I think you could make it even moreso by using an Italian seasoning blend + perhaps a good Italian cheese instead of cheddar. Some sort of mix of Mozzarella, Asiago or Parmesan comes to mind, but I would have to do some homework to make that choice. Until then, I have entered the recipe as written & I hope you enjoy this if you manage to try it b4 I am able to do so.

- Preheat oven to 350°F.
- In a lrg skillet, cook bacon over med-heat, drain on paper towels & set aside.
- Keeping a little bacon fat in the pan, add chicken, saute till cooked through & set aside.
- Cover the bottom of a 13x9 in baking dish w/focaccia slices. Cover bread w/tomato slices & then bacon. Cut chicken into thin slices & lay over the bacon. Top w/more focaccia.
- In a lrg bowl, whisk together eggs, cream, salt & pepper. Pour mixture over strata & sprinkle top w/cheese.
- Bake 35-45 min till cheese has melted & strata feels firm to the touch. Cut into 8 squares & serve hot.
- NOTE: Altho not mentioned, I assume this could be prepared the nite b4 intended to serve. I think it would make a great brunch or luncheon dish or work as well for a dinner meal when served w/an Italian salad of your choice. Enjoy!
