SPECIAL ITALIAN EASTER PIZZA

My college roommate's family made this every Easter and sent a whole pie to us. I loved it and asked for a recipe but was told I could not have it. So I tweaked a few recipes I found myself, and my final result is a dish that was better than the original recipe. Enjoy!

½ pound bulk Italian sausage
olive oil
1 (1 pound) loaf frozen bread dough, thawed
½ pound sliced mozzarella cheese
½ pound sliced cooked ham
½ pound sliced provolone cheese
½ pound sliced salami
½ pound sliced pepperoni
1 (16 ounce) container ricotta cheese
½ cup grated Parmesan cheese
8 eggs, beaten
1 egg
1 teaspoon water

Steps:

  • Cook and stir Italian sausage in a skillet over medium heat, breaking the sausage into crumbles as it cooks, until well browned, 5 to 8 minutes. Drain excess grease; set sausage aside.
  • Preheat oven to 350 degrees F (175 degrees C).
  • Oil the bottom and sides of a 10-inch springform pan with olive oil.
  • Cut 1/3 of the dough off the loaf and set aside under a cloth. Form the remaining 2/3 dough into a ball and roll into a 14-inch circle on a floured work surface.
  • Line the springform pan with rolled dough, allowing dough to hang over the edge by 2 inches all around.
  • Layer half the cooked Italian sausage, half the mozzarella cheese, half the ham, half the provolone cheese, half the salami, and half the pepperoni into the pie crust.
  • Spoon and spread half the ricotta cheese over the layers of meat and cheeses.
  • Sprinkle half the Parmesan cheese over the ricotta.
  • Pour half the 8 beaten eggs over the layers; continue layering the remaining meats, sliced cheeses, ricotta cheese, and then Parmesan cheese.
  • Pour remaining beaten eggs over the last layer of Parmesan cheese.
  • Roll out remaining piece of bread dough to a circle about 12 inches in diameter; lay the piece over the pie to form the top crust. Roll and pinch the bottom crust overhang over the top crust to seal in the filling.
  • Beat 1 egg with water in a small bowl; brush the top of the pie with egg wash.
  • Bake pie in the preheated oven until the crust is golden brown and the filling is set, 50 to 60 minutes. A toothpick inserted into the middle of the crust should come out without raw egg.
  • Allow pie to cool in the pan for at least 25 minutes before releasing the spring and removing pie from the pan. Transfer to a serving platter and cut into wedges for serving.

This is a very old favorite of Aunt Dora's collection. I believe it's also called a pie, but this is a hearty dish as a snack or breakfast meal. I now have to make it twice a year, so no one can wait for Easter only in my family!

5 cups all-purpose flour
1 teaspoon salt
1 teaspoon white sugar
1 tablespoon baking powder
½ cup vegetable oil
1 cup milk
3 eggs
3 pounds mild Italian sausage
3 (16 ounce) containers ricotta cheese
5 eggs
2 teaspoons salt
2 teaspoons ground black pepper
9 hard-cooked eggs, sliced
1 egg, beaten

Steps:

  • Make the dough first. In a large bowl, stir together the flour, salt, sugar and baking powder. Combine the oil, milk and 3 eggs, pour into the dry ingredients and stir until the dough holds together well. If you have a stand mixer, use the dough hook attachment to mix until smooth.
  • Preheat the oven to 350 degrees F (175 degrees C). Divide the dough in half. Roll out one half of the dough to fit a 14x18 inch baking sheet with sides that come up at least 1/2 inch. If the dough is too stiff to roll out to that size, let it rest for a few minutes and come back to it. Fit the dough into the baking sheet. Set aside.
  • Place the sausage into a large skillet over medium heat. Cook, stirring to crumble, until no longer pink. Drain off the grease and set aside to cool. Mix together the ricotta cheese, 5 eggs, salt, pepper and hard-cooked eggs in a large bowl. When the sausage is cool, stir it into the cheese and eggs. Spread this mixture evenly over the crust in the pan. Roll out the remaining dough and place on top. Roll the edges and pinch together to seal. Brush the top crust with the beaten egg.
  • Bake in the preheated oven until the crust is golden brown and the filling is bubbly, about 1 hour. Cool for at least 10 minutes before cutting into servings. This can be served warm or cold.

This is an Easter Pizza Rustica traditional deep-dish cousin to quiche with a buttery crust. It's chock full of cheeses and meats.

Rustica Filling:
4 beaten eggs(half for brushing the meats)
15 oz container of whole milk ricotta( strain if too wet)
1/2 teaspoon each black pepper, salt
1 teaspoon minced fresh garlic or 1/2 teaspoon granulated garlic powder
1 teaspoon chopped fresh basil
1 cup of prosciutto, sliced
2 cups of genoa salami, sliced
1/2 cup capicola ham sliced
6 hard-boiled eggs sliced
1 cup cubed pepperoni,
sliced 1/2 lb of soppressata,
1 cup mixed shredded provolone and mozzarella
Note: for spicier Rustica add 1/2 teaspoon cayenne pepper
Rustica Crust:
2 cups of flour
1/4 cup milk
1 teaspoon salt
1/4 teaspoon pepper
2 eggs (1 more egg beaten for brushing the top of the dough)
1/4 cup vegetable, canola, or olive oil
1/2 teaspoon baking powder

Steps:

  • Heavily spray the pan with cooking oil or line with parchment then set aside.
  • For the crust:
  • In a medium-sized bowl mix flour, salt, pepper, 2 eggs, milk and oil, and baking powder.
  • Cut the dough in half.
  • Roll out bottom crust and place in two deep-dish pie plates, a disposable 12 x 9 pan or you can use a springform pan.
  • For the filling (this is layered however you want and a guideline):
  • Add to a large bowl two of the eggs, ricotta, salt, garlic, and pepper, and set aside.
  • Place some of the prosciutto and half the ricotta on the crust.
  • Next, add the salami and brush with a little beaten egg.
  • Place the boiled eggs next then pepperoni, brush with more egg e.
  • Add the soppressata and hot ham, add the remaining ricotta and salami.
  • Brush with more egg., add the mozzarella and provolone.
  • Top with remaining thinly rolled out crust either full sheet or lattice top, and more egg wash.
  • Bake at 375 degrees for 55 minutes or until the top is nicely browned.

3 large eggs
3 tablespoons cold water
3 cups all-purpose flour, plus more for dusting
1 1/4 teaspoons kosher salt
12 tablespoons (1 1/2 sticks) chilled unsalted butter, cut into 1/2-inch pieces, plus more for the pan
22.5 ounces full-fat ricotta cheese
1/2 teaspoon kosher salt
Freshly ground black pepper
7 large eggs
1 tablespoon olive oil
1 pound ground spicy or sweet sausage
8 ounces asparagus, sliced 1/2 inch thick
10 thin slices Genoa salami
10 thin slices capicola
8 thin slices provolone cheese

Steps:

  • For the dough: In a medium bowl, whisk together the eggs and water; set aside. In the bowl of a food processor, combine the flour and salt and pulse a couple of times. Add the chilled butter and pulse about 10 times until pea-size pieces remain. Add the egg mixture and pulse 15 to 20 times until a dough ball forms. Place the dough ball on a floured surface and knead until smooth and elastic, about 1 minute. Divide into 2 balls, wrap each ball with plastic wrap and rest in the fridge for at least 1 hour.
  • For the filling: While the dough is resting, whisk together the ricotta cheese, salt, some pepper and 6 of the eggs in a medium bowl and set aside. In a 10-inch skillet over medium heat, add the oil and brown the sausage, breaking up the pieces while it's cooking, 5 to 8 minutes. Drain the sausage on a paper towel-lined plate, leaving behind any fat. Add the asparagus and cook until beginning to soften, 4 to 5 minutes. Set aside.
  • Preheat the oven to 375 degrees F. Grease a 9-inch cake pan with butter.
  • On a well-floured counter, roll out each dough ball into a thin 14-inch circle. Cover one circle with plastic wrap until ready to use. Loosely roll the other dough circle around a rolling pin and unroll over the prepared cake pan, letting the excess hang over the side. Press the dough gently into the sides of the pan so there is no gap between the pan and the dough. Shingle the salami over the bottom of the dough, creating an even layer. Then, add the asparagus in an even layer on top of the salami. Next, add half of the egg mixture and spread it out evenly, then top with the capicola in an even layer. Layer in the sausage and top with the remaining egg mixture, then finally the provolone cheese.
  • Whisk the remaining egg with 1 tablespoon water and brush the outside rim of the dough with the egg wash. Add the remaining dough circle to the top of the pie and cut off the excess dough. Press both circles together to create a seal. Brush the remaining egg wash over the entire top and slice a couple slits in the top of the pie. Bake until golden brown, 45 to 55 minutes. Let stand 10 minutes before slicing.

Pizza Piena Dough
8 large eggs
2 pounds fresh ricotta cheese
7 ounces sweet Italian dry sausage, very finely chopped
1 cup grated Parmesan cheese
1 pound fresh unsalted mozzarella cheese, chopped
1 teaspoon freshly ground black pepper
1/2 cup chopped fresh flat-leaf parsley
1 large egg yolk, beaten

Steps:

  • Preheat oven to 375 degrees.
  • On a lightly floured work surface, roll out larger disk of dough into an 1/8-inch thick rectangle about 19 by 15 inches. Fit into a 13-by-9-inch baking dish leaving a 1-inch overhang; set aside.
  • Roll out second smaller disk of dough to about 1/8 inch thick and cut four 15-by-1-inch strips; set aside. Cut remaining dough into three 11-by-1-inch strips; set aside.
  • Place eggs and ricotta in the bowl of an electric mixer fitted with the paddle attachment; mix until well combined. Add sausage, parmesan, mozzarella, pepper, and parsley; continue mixing until well combined. Pour mixture over dough in baking dish.
  • With the long end of the baking dish facing you, place the three 11-inch strips of dough vertically over the top of the filling, spacing evenly apart. Starting in the middle, weave one of the 15-inch strips over and under the vertical strips (folding back every other vertical strip makes this easier). Continue weaving the remaining three 15-inch strips until lattice is complete. Fold over the overhanging pieces of dough and press with a fork to seal.
  • Brush dough with egg yolk and transfer to oven. Bake until golden brown, about 1 hour and 10 minutes. Serve warm.
