1 Green ( yellow or sweet red is fine) pepper diced
2 Ribs celery diced
2 Tbs garlic diced
2 Links low fat chicken Italian sausage
1 Can "fire roasted" diced tomatoes
1/4 Cup brown sugar
2 Tbs EVOO

Steps:

  • 1- in a lRge skillet preheat EVOO 2- Sautee garlic until fragrant 3- Add onion, celery and green and cook until they begin to soften 4- Add sausage and brown 5- Add cabbage and fry until limp 6- Stir in brown sugar 7- Stir in tomatoes and stir until liquid is evaporated Serve warm

2 tablespoons butter
1 head cabbage, sliced into thin strips
1 small yellow onion, diced
1 teaspoon salt
1 teaspoon ground black pepper
1 pinch white sugar

Steps:

  • Place the bacon in a large pot or Dutch oven and cook over medium-high heat, turning occasionally, until evenly browned, about 10 minutes. Drain the bacon slices on paper towels and reserve drippings in the pot.
  • Melt butter in bacon drippings in the pot over medium heat. Stir cabbage, onion, salt, pepper, and sugar into butter and bacon drippings. Cover the pot. Cook, stirring occasionally, until cabbage and onion are tender, 15 to 20 minutes. Crumble bacon into cooked cabbage.

1 tablespoon minced garlic

Steps:

  • Combine red cabbage, parsley and capers in large bowl.
  • Whisk oil, vinegar, 2 tablespoons water and garlic in small bowl to blend. Add to cabbage mixture and toss to blend. Season to taste with salt and pepper. (Can be prepared up to 3 hours ahead. Cover and refrigerate.)

1 medium head cabbage
1/2 cup shredded carrot
1/4 cup finely chopped onion
1/4 cup egg substitute
1 can (10-3/4 ounces) reduced-sodium condensed tomato soup, undiluted, divided
1 can (10-3/4 ounces) reduced-fat reduced-sodium condensed vegetable beef soup, undiluted, divided
2 tablespoons Italian seasoning, divided
1/4 teaspoon cayenne pepper
1/4 teaspoon pepper
1 pound lean ground turkey

Steps:

  • Cook rice according to package directions. Meanwhile, cook cabbage in boiling water just until leaves fall off head. Set aside 10 large leaves for rolls. (Refrigerate remaining cabbage for another use.) Cut out the thick vein from the bottom of each reserved leaf, making a V-shaped cut., In a large bowl, combine the carrot, onion, egg substitute, 2 tablespoons tomato soup, 2 tablespoons vegetable soup, 1 tablespoon Italian seasoning, cayenne, pepper and rice.   • Place cabbage in a steamer basket; place in a large saucepan over 1 in. of water. Bring to a boil; cover and steam for 6-8 minutes or until tender. 1/4 cup olive oil
1 lb Italian sausage
1 teaspoon salt
1 teaspoon black pepper
1 tablespoon red wine vinegar

Steps:

  • In a large mixing bowl put the onions, cabbage and garlic. Set aside.
  • In a dutch oven, or other large vessel, put the olive oil. Slice the sausages (hot or mild) into bite-size pieces, adding more if you want more meat.
  • Heat the oil over high heat, and when hot, add the sausage pieces and stir-fry until well browned.
  • Add the ingredients from the mixing bowl, the salt, pepper, vinegar and water.
  • Mix well for 2-3 minutes.
  • Cover, reduce heat to medium-low, and cook for about 45 minutes, stirring occasionally. If needed, add a bit more water.
  • When the cabbage is very tender, remove cover and increase heat to evaporate any excess liquid. Check for salt.
