PASTA ALLA NORMA (EGGPLANT PASTA)



Pasta alla Norma (Eggplant pasta) image

Recipe video above. This is a traditional Italian pasta dish from Sicily, usually begun by cooking eggplant on the stove in a hefty amount of oil. I prefer roasting the eggplant - less oil plus the eggplant holds its shape better, especially when you roast at a high temp to caramelise the surface!Finishing with a good amount of fresh basil is traditional but even if you don't have any, there's other alternatives to add a touch of other flavour - such as fresh thyme, or extra dried herbs in the sauce.This is an excellent and satisfyingly "meaty" vegetarian main dish that will have even card-carrying carnivores asking for seconds!

800g / 1.6 lb eggplant (, cut into 2.5cm/1" cubes (2 medium/large ones))
2 tbsp extra virgin olive oil
1/2 tsp each salt and pepper
2 tbsp extra virgin olive oil
2 garlic cloves (, finely minced)
1/2 small onion (, very finely chopped (or 2 eschallots))
1/4 cup dry white wine (, anything not too sweet or woody (Note 1))
700g / 24 oz tomato passata ((aka tomato puree, Note 2))
1/4 cup water
1 tsp dried Italian herbs (or oregano)
1/2 tsp red pepper flakes (, optional (for a hint of heat))
1/2 tsp each salt and pepper
300g / 10 oz spaghetti or other pasta, long or short ((macaroni, rigatoni, penne, ziti, fettucini, bucatini))
1/2 cup basil leaves (, roughly chopped (Note 3))
Parmesan cheese (, grated (or ricotta salata if you have it - more traditional))

Steps:

  • Preheat oven to 240°C / 450°F (220°C fan). Line a tray with baking / parchment paper.
  • Toss eggplant with oil, salt and pepper. Spread on the tray and roast for 20 minutes.
  • Flip, then roast for a further 5 minutes. Cool on tray (this helps the eggplant hold its shape when tossing).
  • Bring a large pot of salted water to the boil. Start cooking the pasta a couple of minutes after you start making the sauce (next section), until al dente or to your liking.
  • Heat oil in a very large skillet over medium heat. Add garlic, cook for 20 seconds until golden, then add onion and cook for 2 to 3 minutes until translucent and cooked through.
  • Increase heat to medium-high and add wine, if using. Let it simmer, scraping the base of the pan to deglaze, until the wine mostly evaporates.
  • Add tomato passata. Now pour the water into the passata bottle, screw on the lid, shake, and pour that in too (waste nothing!)
  • Add dried herbs, red pepper flakes, salt and pepper. Stir and simmer 5 minutes.
  • Stir in eggplant, then add cooked and drained pasta. GENTLY toss until pasta is coated in the sauce (so the eggplant doesn't turn into complete mush!).
  • Serve immediately, garnished with a good pinch of fresh basil and parmesan.

Never have button mushrooms been more delicious than in this veg-packed spicy dip recipe, also ideal as a sandwich spread or finisher for simply prepared vegetables.

Yield Makes about 1 1/2 cups

Number Of Ingredients 6

1 small globe eggplant, halved lengthwise
2 tablespoons plus 1/2 cup olive oil
4 ounces button mushrooms, trimmed
1 small head of garlic, plus 1/2 small garlic clove, finely chopped
1/4 cup tomato sauce
2 tablespoons Calabrian chile paste or 1 fresh Fresno chile, chopped

Steps:

  • Preheat oven to 425°F. Lightly score eggplant flesh with the tip of a knife. Place skin side down on a rimmed baking sheet and drizzle with 1 Tbsp. oil; season with salt. Toss mushrooms and head of garlic with 1 Tbsp. oil on another rimmed baking sheet; season with salt. Cover tightly with foil. Roast vegetables on both sheets until very tender, 30-35 minutes. Let cool.
  • Scoop eggplant flesh from skin; discard skin. Chop eggplant and mushrooms until a coarse purée forms. Squeeze garlic cloves from skins; chop until mashed. Transfer both purées to a small bowl and mix in tomato sauce, chile paste, chopped fresh garlic, and remaining 1/2 cup oil; season with salt.
  • Serve with bread for dipping.
  • Sauce can be made 2 weeks ahead. Cover and chill.

1 medium eggplant, cut in half lengthwise sprinkled with salt, drained on paper towels 30 minutes, and rinsed
3 garlic cloves
1/4 cup olive oil
1 medium yellow onion, finely chopped
1 (28 ounce) can whole tomatoes, with their juice, crushed (or same size can of crushed tomatoes)
1 (6 ounce) can tomato paste
12 ounces fresh mushrooms, sliced
3 tablespoons dry red wine
1 1/2 teaspoons dried oregano (or marjoram)
3 tablespoons minced fresh flat-leaf parsley
salt
pepper

Steps:

  • Preheat oven to 400°.
  • Place eggplant and garlic cloves on an oiled baking sheet.
  • Brush with olive oil and bake about 20 minutes or until tender.
  • Let cool; then remove the skin from the eggplant and coarsely chop the pulp; smash teh garlic to squeeze teh cloves out of their skins.
  • Heat the oil in a skillet over medium heat; stir/saute the onion for about 5 minutes or until softened.
  • Transfer onion mixture, roasted eggplant, and smashed garlic to the slow cooker.
  • Add in the tomatoes, tomato paste, mushrooms, wine, and oregano; stir to combine.
  • Cover and cook on LOW for 7-8 hours.
  • Add in parsley and season to taste with salt and pepper during the last hour.
  • The sauce will hold on LOW for a few hours.
  • It will keep, refrigerated, for 3-5 days.
  • Serve over hot cooked ziti.

1 peeled eggplant, cut into 1/4-inch-thick slices (about 1 1/4 pounds)
cooking spray
1 cup chopped onion
1/2 teaspoon dried Italian seasoning
1/4 teaspoon salt
2 garlic cloves, chopped
1 (8 ounce) package presliced mushrooms
1/4 teaspoon black pepper, divided
1 (8 ounce) can no-salt-added tomato sauce, divided
2/3 cup about 3 ounces shredded part-skim mozzarella cheese, divided
1/4 cup grated fresh parmesan cheese

Steps:

  • Preheat broiler. Arrange the eggplant slices on a baking sheet coated with cooking spray; broil 3 minutes on each side or until lightly browned.
  • Preheat oven to 375°.
  • Heat a large nonstick skillet coated with cooking spray over medium heat; add onion and next 4 ingredients (onion through mushrooms). Cover and cook 7 minutes or until tender, stirring mixture occasionally. Increase heat to medium-high; uncover and cook for 2 minutes or until liquid evaporates.
  • Spread half of mushroom mixture in bottom of a 1 1/2-quart round baking dish coated with cooking spray. Arrange half of eggplant slices over mushroom mixture; sprinkle with 1/8 teaspoon pepper. Top with 1/2 cup tomato sauce and 1/3 cup mozzarella. Spread remaining mushroom mixture over mozzarella; top with remaining eggplant slices. Sprinkle with 1/8 teaspoon pepper; top with remaining tomato sauce.
  • Cover and bake at 375° for 1 hour.
  • Sprinkle with 1/3 cup mozzarella and Parmesan. Bake, uncovered, 5 minutes or until cheese melts. Let stand 10 minutes.

MASALA MUSHROOM AND EGGPLANT (AUBERGINE)

I took techniques from different things I'd read, and came up with this fantastic dish. It's relatively easy for a weeknight meal, or beginner cook. We ate this with tortillas in place of chapati, but you could eat it with naan, roti, or even rice. This is almost like baingan bharta. *Note: this IS spicy, so adjust the red chili if it you need.

1 tablespoon oil
1 eggplant, cut into 1-inch cubes with skin on
8 ounces sliced fresh mushrooms
1 large onion, chopped
1 garlic clove, chopped
3 garlic cloves, crushed
1 (14 ounce) can diced tomatoes
2 teaspoons garam masala
1 teaspoon red chili powder
1 teaspoon turmeric
2 tablespoons nonfat yogurt
salt
6 cups water, for boiling

Steps:

  • Boil eggplant cubes and chopped garlic clove in water for 10-12 minutes. Drain.
  • While the eggplant is boiling, heat oil in skillet over med-high heat.
  • Add onion, sauteing until clear/golden, about 5 minutes
  • Add crushed garlic cloves and saute for added 2 minutes.
  • Mix in tomatoes (don't drain them) and garam masala, red chili, turmeric. Mix this all well, and stir it occasionally. Cook it for about 8-10 minutes. You really want to do this for the allotted time to get the spices melded with the tangy tomatoes. Otherwise, the tomatoes taste raw.
  • Add eggplant, mushrooms and salt to taste. Cook, stirring occasionally, for 6 minutes.
  • Remove from heat.
  • Stir yogurt in a bowl to remove lumps and add the creamy yogurt to skillet quickly so it doesn't get chunky.
  • Serve hot and enjoy!

1/2 cup finely chopped onion
2 tablespoons minced fresh parsley
1 garlic clove, chopped

1 can (14-1/2 ounces) Italian stewed tomatoes, cut up
1/2 cup dry red wine or chicken broth
1 can (6 ounces) Italian tomato paste
1 can (4-1/2 ounces) sliced mushrooms, drained
1 teaspoon sugar
1 teaspoon dried oregano
1/2 teaspoon salt
3/4 pound thin spaghetti
Grated Parmesan cheese

Steps:

  • In a Dutch oven, saute the eggplant, onion, parsley and garlic in oil until tender. , Stir in the tomatoes, wine, tomato paste, mushrooms, sugar, oregano and salt. Bring to a boil. Reduce heat; simmer, uncovered, until thickened, 10-15 minutes, stirring occasionally., Meanwhile, cook pasta according to package directions. Drain pasta. Serve with sauce. Sprinkle with cheese.
