ITALIAN SAUSAGE AND PEPPER STRATA
Bake up breakfast, lunch or dinner with this cheesy, eggy sausage-and-pepper casserole.

Steps:
- Butter a 9-by-13-inch baking dish.
- Heat the olive oil in a large skillet over medium-high heat. Add the sausage and cook, breaking up any clumps with a wooden spoon, until brown, about 5 minutes; transfer to a bowl with a slotted spoon. Add the bell peppers to the skillet with 1/4 teaspoon salt and cook, stirring occasionally, until tender, about 4 minutes. Set aside.
- Whisk together the half-and-half, Parmesan, parsley, eggs, 1 1/2 teaspoons salt and a few grinds of pepper in a medium bowl.
- Layer half of the bread cubes in the prepared baking dish. Sprinkle with 1 1/2 cups of the mozzarella, followed by the sausage and peppers. Cover with the remaining bread cubes and pour the custard evenly over the top. Cover with plastic wrap and let soak at room temperature 30 minutes to 1 hour. (To make ahead, after adding the custard, cover with plastic wrap and refrigerate overnight and then let the strata sit at room temperature while the oven preheats.)
- Preheat the oven to 325 degrees F. Remove the plastic and sprinkle with the remaining 1/2 cup mozzarella. Bake until slightly puffed and no longer jiggly in the center, 40 to 50 minutes. Let stand 5 minutes before serving.
ITALIAN PUMPKIN STRATA
Got this from a Carnation Evaporated Milk can. I have adapted slightly for my family's taste. One of my favorite Fall meals.

- In a large skillet, cook sausage, onion, peppers, and garlic in oil; crumble sausage into pieces.
- Cook until sausage is no longer pink; drain.
- Combine bread, cheese, and sausage mixture in a large bowl.
- Mix together milk, pumpkin, eggs, salt, pepper, and seasonings.
- Pour over bread mixture and stir gently until bread is moistened.
- Pour into a greased 13x9 inch baking dish.
- Bake at 350 degrees for 30-35 minutes or until set.
- Serve warm.
PANZANELLA STRATA

- Grease a casserole dish with some butter, set aside.
- Heat a large skillet over medium-high heat with the EVOO. Add the garlic, cubanelles, sweet peppers, onions and chiles, then stir. Cook to tender-crisp, 5 minutes. Add the tomatoes, and season with salt and pepper. Remove from the heat and cool.
- Whisk together the eggs, cream, half of the cheese, the parsley, basil and some salt and pepper.
- Arrange the bread and cooled vegetables in the casserole dish, it will mound up a bit. Pour the eggs over top of the casserole and top with the remaining cheese and a few dots of butter. Cover and chill overnight or a couple of days ahead.
- To serve, bring the casserole to room temperature. Then bake at 375 degrees F until cooked through, 1 hour to 1 hour 15 minutes.

- Cut bread into 1/2 inch cubes.
- In a large bowl, combine sausage, bread and mushrooms.
- Put in prepared pan.
- In same large bowl, whisk together eggs, milk and seasonings.
- Pour over bread mixture.
- Cover with plastic wrap and refrigerate overnight.
- In the morning, preheat oven to 350°F.
- Bake uncovered 1 hour. Sprinkle evenly with cheeses.
- Bake 15 minutes longer.
- Let stand 10 minutes before serving.
