Italian Stew with Spinach Dumplings image

Savor hot and hearty dumplings Italian style, with spinach and beefy red sauce.

1 lb lean (at least 80%) ground beef
1 jar (26 oz) primavera spaghetti sauce
1 jar (4.5 oz) sliced mushrooms, drained
1 cup water
2 cups Bisquick Heart Smart® or Original Bisquick™ mix
1/4 cup frozen chopped spinach, thawed, squeezed to drain
1/4 cup grated Parmesan cheese
1/2 cup milk

Steps:

  • In 4-quart Dutch oven, cook beef over medium heat, stirring occasionally, until thoroughly cooked; drain. Stir in spaghetti sauce, mushrooms and water. Heat to boiling; reduce heat.
  • In medium bowl, mix Bisquick mix, spinach, cheese and milk until soft dough forms. Drop dough by 10 spoonfuls onto hot spaghetti mixture.
  • Cook uncovered over low heat 10 minutes. Cover; cook 10 minutes longer.

Bonnie is a lady I met in Pittsburgh, PA and this recipe is based on her enthusiastic description of a family favorite passed down to her. It's meat and potatoes Italian style - meatballs and potatoes in red sauce with green beans. YUM-O! Bonnie cooks the meatballs as dumplings in in sauce. I brown mine a bit in the oven first to make them a little more stable for a make ahead meal - they won't break up as easily with a crust on them when you reheat them.

Whole milk, enough to just cover bread
Two 1-inch slices good-quality white bread, crust trimmed
1 1/2 pounds ground beef
About 1/2 cup grated pecorino cheese or Parmigiano-Reggiano
About 3 tablespoons EVOO
1 teaspoon fennel seed
1 teaspoon crushed red pepper flakes
2 to 3 cloves garlic, grated or finely chopped
1 large egg
A generous handful fresh flat-leaf parsley, finely chopped
Salt and freshly ground black pepper
Olive oil cooking spray
2 tablespoons EVOO, plus more for serving
4 cloves garlic, thinly sliced
2 medium onions, chopped1 fresh bay leaf
Salt and freshly ground black pepper
3 tablespoons tomato paste
1 to 2 cups beef stock
Two 28-ounce cans Italian tomatoes
A handful fresh basil leaves, torn
2 pounds small to medium white or red skinned potatoes, cubed
12 ounces green beans, trimmed and cut into thirds on an angle
Grated Parmigiano-Reggiano or pecorino cheese for serving

Steps:

  • Preheat the oven to 450 degrees F.
  • For the meatballs:
  • Pour the milk over bread and soak to soften.
  • Place the meat in a mixing bowl and add the cheese, EVOO, fennel, crushed red pepper, garlic, egg, parsley, salt and pepper.
  • Squeeze the excess milk from the bread and crumble into crumbs as you add it to the meat. Combine the meatball mix and roll into 2-inch balls. Place the meatballs on nonstick baking sheet sprayed with olive oil spray and roast until browned but not fully cooked, 10 to 12 minutes.
  • For the stew:
  • Meanwhile, heat the EVOO in a large Dutch oven over medium heat. Add the garlic, onions and bay, and season with salt and pepper. Cook until translucent, stirring occasionally, 10 to 15 minutes. Then add the tomato paste and stir until fragrant. Add the beef stock and tomatoes, then break up the tomatoes with a potato masher. Add the basil, potatoes and meatballs and bring to a boil. Reduce the heat back to medium, partially cover and cook 10 minutes. Add the green beans and cook 7 to 8 minutes more.
  • Serve, or cool completely and store for make-ahead meal. Reheat over a medium-low flame, partially covered, stirring occasionally (or reheat in a 325 degree F oven) until sauce is bubbly.
  • To serve, top shallow bowls of stew with cheese and an extra drizzle of EVOO.

1 (4 1/2-ounce) jar sliced mushrooms
2 tablespoons purchased creamy garlic or creamy Italian dressing
1/4 cup water
DUMPLINGS
1 cup all-purpose flour
2 teaspoons baking powder
1/4 teaspoon salt
1 cup frozen cut leaf spinach (from 1-lb. pkg.), thawed, squeezed to drain
1/2 cup grated Romano or Parmesan cheese
2 tablespoons oils
1 egg
1/4 to 1/3 cup milk

Steps:

  • In large skillet, brown ground beef in oil until thoroughly cooked drain. Add spaghetti sauce, mushrooms, salad dressing and water mix well. Bring to a boil. Reduce heat simmer while preparing dumplings, stirring occasionally.In medium bowl, combine flour, baking powder and salt blend well. In small bowl, combine spinach, cheese, 2 tablespoons oil, egg and 1/4 cup milk mix well. Add to dry ingredients stir until dry ingredients are just moistened, adding more milk if necessary to form a soft dough. Drop dough by rounded tablespoonfuls onto hot stew mixture. Cover tightly. Simmer 12 to 15 minutes or until dumplings are fluffy and no longer doughy on bottom.HIGH ALTITUDE - Above 3,500 feet: Prepare as directed above. 2 lb lean or extra lean ground beef
salt and pepper to taste
1 medium cooking onion, chopped
6 carrots, cut in small, consistent sized pieces
5 medium potatoes, peeled and cut (1 - 1 1/2")
1 pkg frozen green peas (small pkg)
water to cover beef
1 can(s) beef broth (plus 1 can water)
1 c diced tomatoes, drained of liquid
all purpose flour
bisquick or other similar biscuit mix, follow directions

Steps:

  • 1. In a 3 quart pot, heat meat slowly on stove till browned, NOT fried. I think Mum said med. heat and adjust lower, if needed. Add a little salt and pepper.
  • 2. When meat is browned, cover with water to about 1/2" over the meat, add onion and simmer for 20 mins. Mum never drained the meat first. (watch and stir if necessary to prevent sticking).
  • 3. Add both the can of broth and can of water and simmer for ½ hr - 45 mins. Stir occasionally to prevent any sticking.
  • 4. Add cut veggies and a little more salt and pepper to taste. Let simmer slowly till all veggies are done, about 45 mins to 1 hr. Thicken with flour gradually to consistency you prefer.
  • 5. This is a THIN stew so you need something to sop up the juices. Make small to medium size Bisquick dumplings and plop on top of stew about 15 mins before you eat. Make sure you have enough liquid in the stew, because dumplings will absorb moisture. You turn back the temp so that the dumplings basically steam. Cover for 15 mins and serve. Crusty bread works too :)
