I found this recipe in a newspaper. I know it's not home made, but it's makes a great fast side dish. Or a great appetizer

16 ounces pierogies
1 egg
1 tablespoon water
1/3 cup Italian seasoned breadcrumbs
2 tablespoons parmesan cheese

Steps:

  • Preheat oven to 400°F.
  • Spray a baking sheet with cooking spray.
  • Beat egg in a bowl.
  • Dip the perogies in egg and then coat with the bread crumbs.
  • Sprinkle with parmesan cheese.
  • Bake till crispy about 15 minutes.

PIEROGI WITH SAUSAGE AND PEPPERS



Pierogi with Sausage and Peppers image

Kosher salt
1 pound potato-and-onion pierogi (about 12 pieces)
1 tablespoon extra-virgin olive oil
3 sweet or hot Italian sausages (about 12 ounces), casings removed and crumbled
1 8-ounce package baby bell peppers, halved or quartered lengthwise
1/2 onion, thinly sliced
3 cloves garlic, smashed
1/4 teaspoon red pepper flakes (optional)
1 tablespoon unsalted butter
1/2 cup torn fresh basil

Steps:

  • Bring a large pot of salted water to a boil. Cook the pierogi as the label directs. Reserve 3/4 cup cooking water, then drain.
  • Meanwhile, heat the olive oil in a large nonstick skillet over medium-high heat. Add the sausage and cook, breaking it up with a wooden spoon, until browned, 6 to 8 minutes. Reduce the heat to medium. Add the bell peppers, onion, garlic and red pepper flakes and cook, stirring, until the vegetables are tender, 7 to 9 minutes. Season with salt.
  • Add the pierogi to the skillet and toss. Add the butter and 1/4 cup of the reserved cooking water; cook over medium heat, stirring gently, until the butter melts, adding more cooking water as needed to loosen. Stir in the basil.

Easy Italian Pierogi image

A little different from the traditional- but you can have these ready and on the table in about a half hour. Give these a test drive at your next meal and see what you and your family think. Oh, BTW these freeze nicely. Recipe found on Facebook by Ericka.

2 c mashed potatoes
1/2 c goat cheese,crumbled or parmesan cheese
1/4 tsp pepper
1 tsp italian seasoning
1 medium onion, finely chopped
2 pkg (10 oz. each) gyoza/potsticker wrappers
1 large egg white only ,beaten
3 Tbsp butter, divided
1 small tomato, chopped for garnish
1/3 c fresh parsley, chopped ,for garnish

Steps:

  • 1. In a large saucepan, bring water to a boil. In a separate bowl, mix potatoes,Italian seasoning, cheese, onions and pepper.
  • 2. Cut potsitcker wrappers with a biscuit cutter(3 inch in size) and brush the edges of each with egg white.
  • 3. Place 1 Tablespoon of potato mixture on center of each wrapper and fold int half, making sure edges seal by pressing together. Carefully place pierogies in small batches into the boiling water. ?Cook for 3 minutes or until the pierogies begin to float. Drain and rinse in colander with cold water. Set aside.
  • 4. In a large skillet, melt 1 Tablespoon of the butter over low to medium heat. Add 10 to 12 pierogies and lightly brown on both sides. Remove and continue to brown the next batch with another 1 Tablespoon of butter. Repeat with next batch until all have been browned. Serve immediately and sprinkle with chopped tomato and parsley.

HUNGARIAN-ITALIAN PIEROGIES



Hungarian-Italian Pierogies image

Tried something similar several years back, at a little family restaurant in Painesville, Ohio. I took what little I remembered and created my own version. This has a little bit of a kick but is not spicy hot. For milder tastes, I would use mild paprika and a milder curry powder. To kick it up, I would add 1 serrano pepper, seeded and sliced thin.

1 -1 1/4 lb hot Italian sausage, cut into 4-inch links
3 tablespoons butter or 3 tablespoons margarine
1 1/2 tablespoons salad oil
2 medium white onions, sliced thinly
1 red bell pepper, seeded, sliced thinly
1/2 teaspoon kosher salt
1 teaspoon seasoned pepper
1 (1 lb) package pierogi, frozen (I used Mrs. T's Potato, Spinach & Feta)
1/2 teaspoon garlic powder
2 tablespoons Hungarian paprika (hot)
1 1/2-2 teaspoons curry powder (I used Penzey's Balti Seasoning)
1/2 lb frozen peas

Steps:

  • In a 5 quart frying pan, arrange sausage links. Heat on medium-high. When pan is hot, add ¼ C water, cover and steam sausage for 5 minutes. Uncover and brown sausage on all sides, about 12 minutes. Remove links to paper towels to drain.
  • Add butter and oil to frying pan over medium-high heat. Add onions and bell pepper, sprinkle with salt and pepper. Sauté 10 minutes or until onions are limp and beginning to color.
  • Add frozen pierogies, stir through and add garlic powder, paprika and curry powder. Continue to cook, uncovered, stirring frequently. This will cook for a total of 8 minutes. Meantime, take the cooled Italian sausage links and cut into ½" coins. Add sausage and peas to the pan after about 5 minutes.
  • Reduce heat to medium, cover and cook an additional 4 minutes. Test center of pierogies for doneness. Serve.

I found this recipe in Woman's World magazine. When I made this recipe I've baked my sausages for 30 minutes at 350 in a 1"-inch of water. During baking I've cooked my peppers, onions added the garlic for the last 5 minutes. After peppers and onions are tender I added my sliced sausages to brown them. I boiled my Pierogies for 15 minutes. I have added my pierogies to my sausage mix or I just top the pierogies with the sausage mix as serving. I skipped the mozzarella.

8 ounces sweet sausage links or 8 ounces hot Italian sausage links
2 garlic cloves, sliced
1 large red onion, chopped (1 3/4 cup)
2 green peppers or 2 yellow peppers, sliced
16 ounces frozen potato and onion pierogies
4 ounces shredded mozzarella cheese (1 cup)

Steps:

  • In large nonstick skillet over medium-high heat, cook sausage until browned, 5 minutes. Remove from skillet; cut into 1/4"-thick slices.
  • In same skillet, heat 1 tablespoon oil over medium heat. Add garlic; cook, stirring, until fragrant, 1 minute. Add onion, peppers, sausage, 1/4 teaspoon salt and pepper; cook, stirring, until sausage is cooked through and onions and peppers are tender, 5 minutes.
  • Stir in pierogies and 1/3 cup water. Cover; cook until pierogies are cooked through, 5 minutes. Gently stir; top with cheese. Cover; cook until cheese is melted, 2 minutes. If desired, serve sprinkled with chopped fresh parsley.
