BBQ JACKFRUIT SANDWICHES
These BBQ Jackfruit Sandwiches feature a "meaty" mix of jackfruit and chickpeas tossed in spices, garlic, and a bit of BBQ sauce. Pile it all on top of a toasted bun with slaw and dinner is ready!

- Heat the olive oil in a pan over medium high heat. Add the jackfruit and break it apart into "shreds" with the back of a spoon.
- In a small chopper or food processor, pulse your chickpeas and garlic until they have a finely chopped texture. Add the mixture to the pan, along with the brown sugar and spices. Stir it all up to get it seasoned and happy. Add barbecue sauce and let it get a little roasty. More undisturbed time in the pan = more meat-like browning.
- Serve your jackfruit BBQ on a bun topped with slaw and anything else you like! Add a pile of salt & pepper chips to your plate and you are in delicious business.

BBQ PULLED JACKFRUIT SANDWICHES
This recipe will have everyone fooled! Simmered in barbecue sauce, jackfruit looks just like pulled pork. Stuff it in a potato roll and top it with a bright, easy slaw and you won't even miss the meat.

- Combine the coleslaw mix, cider vinegar, 1/2 teaspoon salt and several grinds of black pepper in a medium bowl. Cover with plastic wrap and refrigerate until ready to serve.
- Combine the jackfruit with the chili powder and 1/2 teaspoon each salt and pepper in a large bowl. Heat 2 tablespoons oil in a large skillet over medium high heat until shimmering. Add the jackfruit and cook, tossing occasionally, until the spices are fragrant 2 to 3 minutes.
- Add the barbecue sauce to the skillet along with 3 cups water, stir, cover and reduce the heat to low. Cook, stirring occasionally, until tender, 45 to 50 minutes. Uncover the skillet, turn the heat to high and simmer until the color has deepened and the sauce is thick, 4 to 5 minutes. Remove from the heat.
- Using a potato masher or wooden spoon, smash the jackfruit until it resembles a pulled pork consistency and season to taste with salt, pepper and light brown sugar if you would like it sweeter. Serve on the potato buns topped with the coleslaw.

- Remove all seeds from jackfruit. Combine jackfruit and BBQ sauce in a slow cooker. Cook on High for 3 to 4 hours.
- Use a fork to shred jackfruit meat. Spread margarine on hamburger buns and place a scoop of jackfruit "meat" on top. Serve immediately

This was the first recipe I've tried with jackfruit, and it was a hit. This has the meaty satisfaction of a pulled pork sandwich, without the pork. Very easy, forgiving recipe.

- Drain and rinse jackfruit to remove salt and brine. Break up with fingers or a fork into strips.
- Caramelize onions in olive oil over medium heat.
- Add to crockpot with jackfruit, wine,and barbecue sauce.
- Cook on low 6-8 hours.
- Serve on toasted buns.
