CHEF JOHN'S PULLED PORK BBQ
Use your favorite dry rub and barbeque sauce to make this succulent pork. A little trick I like is to put 2 ramekins with liquid smoke flavoring in with the meat and roast it slowly. Do your patriotic American duty and serve this on the cheapest, lightest white hamburger buns you can find.

Steps:
- Preheat oven to 210 degrees F (100 degrees C).
- Sprinkle dry rub generously on all sides of pork roast and place meat into a heavy pan or Dutch oven.
- Pour 1/4 teaspoon of liquid smoke flavoring into each of two 6-ounce ramekins; fill ramekins with 1/2 cup water each. Place ramekins into the Dutch oven on either side of the roast. Place lid onto Dutch oven.
- Roast pork in the preheated oven until very tender, 12 hours. Remove roast from Dutch oven, place onto a work surface (such as a cutting board), and separate the meat from the bone using your fingers. Discard any large pieces of fat.
- Roughly chop pork with a large knife or cleaver; drizzle with 3/4 cup barbeque sauce. Season with salt and black pepper.
- Spread about 1 tablespoon barbeque sauce onto each bun and pile pork on buns to serve.

BBQ PULLED PORK SANDWICHES
This meal is one we always eat too much of. I recommend using Sweet Baby Ray's or Jack Daniel's original BBQ sauce. A good quality sauce makes a lot of difference. I serve it with my Sweet, Creamy Coleslaw #100526.

SOUTHERN YANK PULLED PORK BBQ
I'm a Yank. This is a Southern dish. We meet in the middle. Pulled pork shoulder slow-cooked in spices and sauces, great for a low-stress day, potluck, or any get-together. Put it on before work, ready when you get home! Fantastic over a bun, johnnycake, or just by itself.

Steps:
- Mix all the ingredients in a bowl using maybe 2 table spoons for the spices, but more in salt, ground garlic and brown sugar. I just estimated the amount and went with the smell and color...if it looks good and smells good, your done. Rub all over a 3-4 pound pork butt or shoulder roast. Then cover and refrigerate overnight. Cooking on high for around 5 to six hours. First spray the bottom of your crock pot or rub some olive oil on the bottom. Line the bottom with sliced onions and whole garlic cloves (crushed). Rub some more dry ingredients if desired. Pour 1 cup chicken stock or beer to bottom of pot.Put roast on bed of onion. If pork pulls easily from fork then take out of pot and pull meat apart with forks. Take any soup in pot out and reserve maybe half a cup in pot. Take shredded meat and put back in crockpot and mix with sauce.
SWEET BABY RAY'S BARBECUE SAUCE (COPYCAT)
A copycat of the famous Sweet Baby Ray's Barbecue Sauce. In my experience there is little to no need for the cornstarch slurry, but it's there as an optional step in case you want your sauce thick. Personally I just use a little of the slurry because the 10-15 minutes simmering time would already reduce the sauce and it would continue to thicken while cooling.

SARGE'S EZ PULLED PORK BBQ
Too busy to cook? A slow cooker and a can of beef broth gets you started on this recipe. 'Low and slow' cooking gives you a roast that shreds with a fork. As an added bonus you get great stock for beef gravy as a by-product! Serve with your favorite BBQ sauce and plenty of coleslaw.
