Creamy, tangy, spicy and sweet - this Jalapeño Lime Vinaigrette recipe is all that and then some!*Makes about 1 1/4 cup

2 (3 to 4-inch) roasted jalapeño peppers (seeded)
1/4 cup plus 1 tablespoon fresh lime juice ((from about 3 large limes))
2 tablespoons honey
1 teaspoon ground cumin
1/2 teaspoon ground oregano
1 teaspoon salt
1/4 teaspoon ground cinnamon
a few turns freshly ground black pepper
3/4 cup extra virgin olive oil, (divided)

Steps:

  • Roughly chop the roasted, peeled and seeded jalapeño peppers, and add them to a (12 to 16-ounce) wide, tall jar or ideally a 16-ounce pyrex measuring cup. (Here's How to Roast and Peel a Pepper.)
  • Add the lime juice, honey, cumin, oregano, salt, cinnamon, pepper and 1/4 cup of the oil to the jalapeños and then use an immersion (hand) blender to blend it until it's as smooth as possible. (You can also do this in a standing blender, but you might need to add more of the oil at this stage to give it enough liquid to blend.)
  • Now whisk in the remaining 1/2 cup of oil. And it's ready!

1 jalapeno, stem and seeds removed
1 clove garlic
1 teaspoon cumin seeds
1/4 cup cilantro
2 limes, juice about 1/4 cup
2 tablespoons honey
1/2 cup olive oil
1 tablespoon apple cider vinegar
1/2 teaspoon kosher salt
1/2 teaspoon black pepper

Steps:

  • Add all ingredients to a blender and blend until combined. Drizzle in olive oil last and taste and adjust.
  • Alternatively, you can muddle together the jalapeno, garlic, salt, cumin, and cilantro with the lime juice until it forms a paste. Then transfer to a bowl and whisk in other ingredients.
  • Store dressing in a jar with a lid for up to a week.

5 cloves garlic
1 heaping tablespoon chopped pickled jalapenos, plus 1 or 2 whole pickled jalapenos, minced
1 tablespoon Dijon Mustard
1/4 teaspoon coarse salt
1/4 teaspoon hot sauce
1/4 teaspoon Worcestershire sauce
1 tablespoon sugar
1/4 cup apple cider vinegar
1/2 cup olive oil
1 shallot, finely chopped

Steps:

  • In the jar of a blender or the bowl of a food processor, combine garlic, 1 tablespoon jalapenos and mustard; pulse until pureed. Add salt, hot sauce, Worcestershire sauce, sugar, and vinegar; pulse until smooth. With the blender running, add olive oil in a slow, steady stream; mix until emulsified. Transfer mixture to a small bowl and stir in shallots and remaining jalapenos.

1/2 cup fresh lime juice
lime zest
4 tablespoons honey
1 tablespoon garlic, pureed or minced
1 tablespoon salt
1/4 cup rice vinegar
6 jalapenos, chopped
1 teaspoon coriander (optional)
2 1/4 cups canola oil
cabbage
carrot
onion
celery (whatever you want)

Steps:

  • Puree all of the dressing ingredients in a blender or processor, except the oil.
  • Emulsify slowly with the oil. Supposedly you can sub the oil with half buttermilk and half mayo, but I haven't tried this yet.
  • Put together the coleslaw of your choice, add dressing and refrigerate for a few hours.
  • I usually make half of this- depends on how many you're serving!

  • Place the jalapeno pepper, garlic clove, and ginger into a food processor or blender; pulse until the jalapeno and garlic are finely chopped. Turn the food processor or blender on, and slowly drizzle in the olive oil until incorporated into the dressing. Season to taste with salt before serving.
