JALAPEñO-LIME VINAIGRETTE RECIPE
Creamy, tangy, spicy and sweet - this Jalapeño Lime Vinaigrette recipe is all that and then some!*Makes about 1 1/4 cup

Steps:
- Roughly chop the roasted, peeled and seeded jalapeño peppers, and add them to a (12 to 16-ounce) wide, tall jar or ideally a 16-ounce pyrex measuring cup. (Here's How to Roast and Peel a Pepper.)
- Add the lime juice, honey, cumin, oregano, salt, cinnamon, pepper and 1/4 cup of the oil to the jalapeños and then use an immersion (hand) blender to blend it until it's as smooth as possible. (You can also do this in a standing blender, but you might need to add more of the oil at this stage to give it enough liquid to blend.)
- Now whisk in the remaining 1/2 cup of oil. And it's ready!

Steps:
- Add all ingredients to a blender and blend until combined. Drizzle in olive oil last and taste and adjust.
- Alternatively, you can muddle together the jalapeno, garlic, salt, cumin, and cilantro with the lime juice until it forms a paste. Then transfer to a bowl and whisk in other ingredients.
- Store dressing in a jar with a lid for up to a week.

- In the jar of a blender or the bowl of a food processor, combine garlic, 1 tablespoon jalapenos and mustard; pulse until pureed. Add salt, hot sauce, Worcestershire sauce, sugar, and vinegar; pulse until smooth. With the blender running, add olive oil in a slow, steady stream; mix until emulsified. Transfer mixture to a small bowl and stir in shallots and remaining jalapenos.

- Wearing rubber gloves, seed and chop jalapeño. In a blender blend jalapeño, lime juice, sugar, and salt and pepper to taste 1 minute. With motor running, add oil in a stream and blend 30 seconds, or until emulsified. Vinaigrette keeps, covered and chilled, 3 days.

My daughter passed this recipe on to me. It came from a very popular restaurant that she worked in at one time.The taste is refreshing and the colour is awesome!

- Puree all of the dressing ingredients in a blender or processor, except the oil.
- Emulsify slowly with the oil. Supposedly you can sub the oil with half buttermilk and half mayo, but I haven't tried this yet.
- Put together the coleslaw of your choice, add dressing and refrigerate for a few hours.
- I usually make half of this- depends on how many you're serving!

- Place the jalapeno pepper, garlic clove, and ginger into a food processor or blender; pulse until the jalapeno and garlic are finely chopped.
