8 ounces sour cream
1 (4 ounce) can chopped jalapeno peppers, drained
8 ounces monterey jack cheese, grated

Steps:

  • Preheat the oven to 350º.
  • Mix the rice, sour cream, and jalapenos in a large bowl.
  • In a 1 quart casserole dish, layer half of the rice mixture and then half of the cheese.
  • Repeat, ending with a layer of cheese.
  • Bake, covered, for 30 minutes; then remove the cover and bake for another 10 minutes.

  • Pour enough oil to just cover bottom of pan.heat oil add veggies saute' till onion translucent add raw rice enough to cover bottom of pan and mound slightly in middle;adding more oil if needed stir toasting rice till opaque taking care not to burn add water enough to cover rice and come half way up sides of pan heat to boiling cover tightly reduce heat simmer till all liquid is absorbed

This is a super-easy, tasty, flavorful, low fat side dish that my husband & I concocted to go with our tequila lime marinated chicken (Lowry's and Super Target in the US carry a yummy 30 minute marinade). I've seen this posted with sour cream and/or cheese added, but we were going for low-fat here. Adding these would cut the heat of the peppers, but by removing many of the seeds we were able to make this just spicy enough while keeping it low fat.

1/2 cup brown rice
1 cup chicken broth (can or box, homemade or made with bullion)
2 jalapeno peppers, chopped. (Remove at least 1/2 the seeds unless you like spicy!)
1/2 onion, chopped
1/2-1 teaspoon olive oil

Steps:

  • Sautee onion in olive oil.
  • Combine all ingredients in a pot with a tight-fitting lid, bring to a boil, and then simmer until cooked (30-40 minutes).

2 tablespoons butter
1 jalapeno pepper, seeded and minced
1/2 yellow onion, finely chopped
1/2 green bell pepper, chopped
Kosher salt
1 clove garlic, minced
1 1/2 cups white rice, uncooked
1/2 cup chicken stock
Zest and juice of 1 lime

Steps:

  • Melt the butter in a large sauce pan. Then add the jalapeno, onions and green peppers, sprinkle with salt and cook over medium heat until tender, about 5 minutes. Add the garlic and stir. Add the rice and cook over medium-high heat, stirring frequently, until the rice is golden, about 5 minutes. Turn the heat up to high and add 2 cups water and the stock. Bring to a boil, cover tightly, and reduce the heat to a simmer for 20 minutes. Remove from the heat and let rest, still covered, 3 minutes longer. Sprinkle with the lime zest and juice before serving.

  • Place a medium saucepan over medium-high heat with the chicken stock and jalapeño, and bring up to a bubble
  • Add rice to pot and reduce heat to low
  • Cover pot and simmer liquid has absorbed and rice is tender, 18 minutes
  • Remove from heat and let sit for 5 minutes

Steps:

  • Tightly pack the sushi rice into a square 8x8-inch cake pan lined with plastic wrap. Chill for 2 to 3 hours in the refrigerator or 30 minutes in the freezer.
  • Heat 1/2 cup oil in a large skillet over medium heat. Cut the rice into thick, rectangular shapes, about 2 to 3 inches in length and 1 inch in width. Carefully move the pieces to the hot oil and fry until they reach a deep golden brown color, 2 to 3 minutes on each side. Drain on paper towels.
