1 tbsp ground thyme or 2 tbsp thyme leaves
1 or 2 Scotch bonnet peppers (Habanero if you cannot source Scotch bonnet, but it won't be authentic) BOTH ARE EXTREMELY HOT!
1/2 teaspoon nutmeg
1/2 cup packed brown sugar
2 tbsp soy sauce
1-2 bunches green onions (6 to 12)
salt and pepper to taste (at least 1 tsp Kosher or sea salt)
1 teaspoon cinnamon
1/2teaspoon ginger minced
2 tsp allspice
6-8 garlic cloves
2 tbsp Jerk paste (above)
2/3 cup (5 oz) pineapple juice
3/4 cup (6 oz) ketchup
6 oz Red Stripe beer (you can find it at BevMo!)
one chicken, cut up into pieces (preferably organic)

Steps:

  • Place all ingredients for base in a blender or food processor and process until smooth.
  • Use to marinate chicken for at least 4 hours, but preferably overnight, before cooking on the barbecue.
  • Grill on the barbecue until fully cooked.
  • Add all ingredients listed for the Jerk sauce to a pan over low heat and allow to simmer for 30 minutes to an hour, stirring often. Add more juice or beer to thin the sauce, alternatively, simmer longer for a thicker sauce.
  • Spoon this sauce over the cooked jerk chicken, serving extra for those who want a little more.

1 small white onion (peeled and quartered)
1 lime juiced
2 tablespoons white vinegar
2 tablespoons fresh thyme (or 1 teaspoon dried)
2 tablespoons soy sauce
1 tablespoon vegetable oil
2-inch piece fresh ginger (peeled, sliced)
2 cloves garlic (minced)
2 teaspoons salt
1/2 teaspoon pepper
3/4 teaspoon ground pimento seeds (or allspice)
2 Scotch bonnet peppers (or more to taste, seeded and diced)
4 pork chops (bone-in, center cut)

Steps:

  • Place everything but the pork chops in a food processor and pulse until smooth.
  • Put pork chops in a resealable plastic bag and coat with the marinade. Let sit in refrigerator for 3 hours or up to overnight.
  • Heat grill on high heat and grill pork chops 8 minutes per side.

6 skinless, boneless chicken breast halves - cut into chunks
4 limes, juiced
1 cup water
2 teaspoons ground allspice
½ teaspoon ground nutmeg
1 teaspoon salt
1 teaspoon brown sugar
2 teaspoons dried thyme
1 teaspoon ground ginger
1 ½ teaspoons ground black pepper
2 tablespoons vegetable oil
2 onions, chopped
1 ½ cups chopped green onions
6 cloves garlic, chopped
2 habanero peppers, chopped

Steps:

  • Place chicken in a medium bowl. Cover with lime juice and water. Set aside.
  • In a blender or food processor, place allspice, nutmeg, salt, brown sugar, thyme, ginger, black pepper and vegetable oil. Blend well, then mix in onions, green onions, garlic and habanero peppers until almost smooth.
  • Pour most of the blended marinade mixture into bowl with chicken, reserving a small amount to use as a basting sauce while cooking. Cover, and marinate in the refrigerator for at least 2 hours.
  • Preheat an outdoor grill for medium heat.
  • Brush grill grate with oil. Cook chicken slowly on the preheated grill. Turn frequently, basting often with remaining marinade mixture. Cook to desired doneness.

10 habanero chile peppers, pureed
6 tablespoons mustard seeds
4 tablespoons dried rosemary
4 tablespoons chopped fresh flat-leaf parsley
4 tablespoons dried basil
4 tablespoons dried thyme
6 scallions, chopped
2 teaspoons kosher salt
2 teaspoons coarsely ground black pepper
1/2 cup yellow mustard
6 tablespoons orange juice
2 tablespoons lime juice
2 tablespoons cider vinegar
2 cans beer
2 whole chickens, 3 1/2 pounds each

Steps:

  • Paste:
  • Blend all the ingredients for the paste together in a blender. Pour into a bowl and cover with plastic wrap. Let sit for 24 hours.
  • Using a backyard grill, start your charcoal with charcoal chimney (Never use lighter fluid). When all the coals are covered in a fine grey ash, dump them on 1 side of your grill. Using a stick or spatula push all the coals into a pile. Put your grate on the grill.
  • Chicken:
  • Open the beer and pour about a quarter of the beer out of each can. Literally rub the chicken cavities and exterior of the chickens with the jerk paste. Carefully put each can of beer into the cavity of the chickens, bring the legs around the can and truss together. Put the chickens on the opposite side of the fire. Sometimes you may need to put a brick or rock on the backside of the chicken to keep it stable and upright. Put the lid on the grill and make sure the vent holes are directly above the chicken to provide adequate drafting of heat and smoke over the bird. Keep the vent holes open all the way.
  • Cook chickens for 4 to 5 hours at a temperature of 225 degrees F. You will want to rotate the birds a quarter turn every hour and add coals, when needed, to maintain the temperature. Be careful not to add too many coals at once when attempting to bring your temperature back up. You may get it too hot and will have a tough time bringing it back down. Open the lid only when you have to check the temperature.
  • Remove the chickens from the grill and set aside for 10 minutes. Discard the beer cans and refrigerate the chicken until ready to serve.

1 6 1/2-pound pork shoulder, or 6 1-inch-thick loin pork chops
3 chicken breasts, split, with skin on
6 chicken legs
2 ounces whole allspice berries
1/4 teaspoon fresh grated nutmeg
1/2 teaspoon ground cinnamon
8 scallions (white part and 1 inch of green each), chopped
1 large garlic clove, chopped
1 teaspoon fresh serrano or other hot pepper, seeded and chopped
3 tablespoons red-wine vinegar
1/4 cup peanut or vegetable oil
1/2 teaspoon salt
1/4 teaspoon freshly ground pepper
2 bay leaves, crumbled
Pickapeppa sauce (see note)

Steps:

  • Cut away the rind and most of the fat from the pork. Remove all the meat from the bones and cut it into pieces about one-and-a-half-inches thick and three or four inches long.
  • Put the pork pieces and the chicken in a large bowl, cover and refrigerate until needed.
  • To prepare the seasoning, heat the allspice berries over medium heat in a small heavy saucepan for three or four minutes, stirring often until heated through.
  • Two tablespoons at a time, crush the berries in a mortar and pestle until all are cracked.
  • In a medium-size bowl, combine the crushed berries, nutmeg, cinnamon, scallions, garlic, pepper and one tablespoon of the vinegar. Crush into a pasty mixture.
  • Add the rest of the vinegar, oil, salt, pepper and bay leaves. Mix well.
  • Turn the mixture over the pork and chicken and rub the meat with the seasoning, coating it evenly. Cover and refrigerate for two hours or overnight.
  • Cook the jerked pork and chicken on the grill over hot coals or on a gas-heated barbecue as far away from the heat source as possible, at least six inches. Cover with the lid. Turn the meat every 10 minutes for about one hour, until done. If desired, halfway through the cooking time, toss one teaspoon of whole allspice berries into the fire.
  • Cut the cooked pork into one-third-inch slices and serve with the chicken. Accompany with Pickapeppa sauce.

½ green onion, minced
¼ cup orange juice
1 tablespoon minced fresh ginger root
1 tablespoon minced jalapeno peppers
1 tablespoon lime juice
1 tablespoon soy sauce
1 clove garlic, minced
1 teaspoon ground allspice
¼ teaspoon ground cinnamon
½ teaspoon ground cloves
1 ½ pounds boneless, skinless chicken thighs

Steps:

  • Combine green onion, orange juice, ginger, jalapeno, lime juice, soy sauce, garlic, allspice, cinnamon, and cloves in resealable container. Seal and shake to combine. Add chicken and coat; marinate for 8 hours.
  • Preheat an outdoor grill for medium heat and lightly oil the grate. Remove chicken; reserve marinade.
  • Cook chicken on the preheated grill until no longer pink in the center and juices run clear, turning halfway through, 12 to 15 minutes. An instant-read thermometer inserted into the center should read at least 170 degrees F (77 degrees C).
  • Meanwhile, bring reserved marinade to a boil in a small saucepan. Reduce heat; simmer, uncovered, until slightly thickened, about 5 minutes. Drizzle over cooked chicken.

1 1/2 teaspoons ground allspice
1 1/2 teaspoons salt
1/2 teaspoon ground black pepper
1/2 teaspoon ground thyme
1/2 teaspoon ground cinnamon
1/4 teaspoon ground nutmeg
1/8 teaspoon ground cloves
3 green onions, chopped
3 cloves garlic, minced
2 scotch bonnet peppers (these are "killer" hot so you may want to use something like a jalapeno)
1 medium onion, chopped
1 lemon, juice of
3 teaspoons oil
2 teaspoons soy sauce
2 teaspoons malt vinegar
1 teaspoon minced gingerroot
3 -4 lbs cubed pork butt (2 inch chunks)

Steps:

  • In a large bowl combine the first 7 ingredients.
  • Mix thoroughly.
  • In a food processor combine green onions and garlic, peppers, onion, lemon juice, oil, soy sauce, malt vinegar and ginger.
  • Blend until very smooth.
  • Place pork in a glass bowl or large freezer bag, combine all ingredients and coat pork well.
  • Cover and stir or flip often.
  • Marinate for at least 8 hours.
  • Take out of the fridge 1 hour before grilling.
  • Preheat grill to medium high, skewer pork, 4 cubes to a skewer.
  • Cook for 6-8 minutes on one side, flip and 6-8 minutes on the other.

2 cups hot water
1 cup kosher salt
1/4 cup brown sugar
1 teaspoon garlic powder
1 teaspoon onion powder
2 tablespoons jamaican jerk spice
4 lbs roasting chickens

Steps:

  • Dissolve salt and sugar in hot water add remaining ingredients and 2 cups of ice cubes to cool it. Place a 4 pound cleaned and dried chicken in a freezer zip lock bag pour brine over chicken and top with water to cover. Close bag trying to remove as much air as possible. Brine in refrigerator overnight 8-12 hours. If not ready to cook remove from brine rinse well and place back in the refrigerator till ready to cook.
  • Proceed with cooking method you desire.
  • Roast, Grill, Rotisserie cooking to internal temperature of 175.
  • Let rest 10-15 minutes before carving.
