1 lb shrimp (in shell and heads on)
3 hot peppers (scotch bonnet or chilli peppers)
7 cloves garlic
4 tbsp butter
1 lime
1 tbsp olive oil

Steps:

  • Devein shrimp. Rinse with water then squeeze lime juice over shrimp Add water to shrimp and "wash" Pour water off and set aside Blend hot peppers and 3 cloves of garlic (do not use seeds of peppers if you need to reduce heat) Add olive oil and mix Mix hot pepper mix into shrimp and leave to sit for at least 45 minutes Heat pot on medium heat and add butter till melted Add remaining garlic crushed Add shrimp along with any liquid created while marinating Stir and cook for no more than 8 minutes Remove from heat Add chopped green onions Leave to cool.

3 quarts water
1 teaspoon salt
2 pounds uncooked medium shrimp, peeled and deveined
1/3 cup olive oil
1/4 cup white wine vinegar
3 tablespoons lime juice
1 jalapeno pepper, seeded and finely chopped
4 teaspoons honey
3 teaspoons Caribbean jerk seasoning
1 medium mango or 2 medium peaches, peeled and cubed
1 small red onion, thinly sliced and separated into rings
1 medium lime, quartered and sliced

Steps:

  • In a large saucepan, bring water and salt to a boil. Add shrimp; boil for 3 minutes or until shrimp turn pink, stirring occasionally. Drain and rinse with cold water; transfer to a large resealable plastic bag., In a small bowl, whisk the oil, vinegar, lime juice, jalapeno, honey and jerk seasoning. Pour 3/4 cup marinade over shrimp. Seal bag and turn to coat; refrigerate for 1-2 hours. Refrigerate remaining marinade., Just before serving, drain and discard marinade from shrimp. On a large serving platter, layer with shrimp, mango, onion and lime. Drizzle with remaining marinade.

2 Tbsp Coconut oil
1 Tbsp Salt
2 Tbsp Jerk seasoning
2 Stalks Scallions (Chopped)
1 Tsp Annatto seeds
1 Tsp Pickling spice
6 Whole Allspice seeds (crushed)
2 Tbsp Vinegar
2 Tbsp Jamaican White Rum

Steps:

  • In a bowl combine shrimp with salt, Jerk sauce, and scallions. Let marinate for 30 minutes.
  • In a large heavy skillet over low heat, place coconut oil, and annatto seeds, in skillet, oil will turn a bright orange.
  • Remove seeds from oil and turn the stove on high, add pimento seeds and pickling spice.
  • Place seasoned shrimp in hot skillet and stir swiftly until shrimp is incorporated with seasoned oil (approximately 5-6 minutes). Do not overcook. Turn heat off.
  • Splash with vinegar and white rum.
  • Transfer to a serving bowl, let cool....peel, eat and enjoy!!!!

5 lbs shrimp (left in shells)
2 garlic cloves (minced or thinly sliced)
1 cup cooking oil
2 teaspoons salt
2 scotch bonnet peppers (seeded and sliced....wear gloves!)
2 tablespoons vinegar
3 jamaican allspice seeds (crushed or ground)

Steps:

  • Heat oil, garlic, salt and peppers in dutch oven over medium to medium high heat.
  • Add shrimp and stir for 5 minutes.
  • Sprinkle allspice into the mixture.
  • Add vinegar and cook for an additional 5 minutes.
  • Heap finished shrimp on a platter along with lemon wedges and/or your favorite dipping sauce -- and let everyone help themselves!

1 lb jumbo shrimp, with shell but deveined
1 lime
3 garlic cloves, crushed
1/2 scotch bonnet pepper, seeds removed
5 sprigs thyme, finely chopped
1 tablespoon butter
1/2 teaspoon salt
1 tablespoon canola oil
1 scallion, finely chopped

Steps:

  • Squeeze ½ of lime over shrimp and rinse. Heat canola oil in a large frying pan over medium heat. Add thyme and pepper, heat for 1 minute. Add garlic and shrimp, stir. Cook for 3 minutes then turn shrimp. Add butter and salt, cook for an additional 2 minute. Squeeze the other half of lime over the shrimp, remove from heat. Sprinkle with scallion to garnish.

Steps:

  • Combine all ingredients except shrimp in a 4-quart heavy pot and bring to a boil, then reduce heat and simmer, covered, 20 minutes.
  • Stir in shrimp, making sure they are just covered by liquid, and remove pot from heat. Cool shrimp in liquid to room temperature, uncovered, about 1 hour. Transfer shrimp with a slotted spoon to a plate or bowl and drizzle some of cooking liquid on top.
