These ribs have the rich flavor of pork, which you can really taste, and they are also very tender and moist. Who needs all that BBQ sauce? If you can, get baby back ribs - they're best - but any pork spareribs will do.

4 pounds meaty pork spareribs
2 tablespoons salt
1 tablespoon freshly ground black pepper

Steps:

  • Preheat oven to 350°F.
  • Preparing and Roasting the Ribs
  • Rub the ribs with salt and pepper on both sides.
  • Set a roasting or broiler rack in a roasting pan. Arrange the ribs on the rack, meaty side facing up.
  • Put the pan on the center rack of the oven and bake for 30 minutes. Using a pair of tongs, turn the ribs over, and cook for another 30 minutes.
  • When the second 30 minutes are up, the ribs should be nicely browned and fairly crisp on the outside. If not, roast for another 10 minutes and check again.
  • Cutting and Serving the Ribs
  • When you are serving the ribs, cut the rack into separate racks of 3 or 4 ribs per person and place on a platter or plates. Serve hot.

  • Season the spareribs with salt and pepper.
  • Place on a broiler and broil in oven, turning once, until brown on all sides.
  • Spread the sauerkraut over the bottom of a 9"x13" pan.
  • Sprinkle onions over sauerkraut.
  • Sprinkle brown sugar over this.
  • Lay the spareribs over the top.
  • Cover with foil and bake at 350 degrees for one hour.

  • Put ribs on rack in shallow roasting pan and roast at 350 for 30 minutes. Season ribs generously with salt and pepper to taste on both sides. Continue roasting another 30 minutes. After 1 hour, ribs should be nicely browned and fairly crisp on outside. Roast another 15-20 minutes if you like meat very well done. Remove ribs to carving board and cut between ribs into small sections. Heap ribs on hot platter and serve.

8 country-style spareribs
1 1-pound can sauerkraut, drained
About one-half 18-ounce bottle barbecue sauce
No salt, no freshly ground black pepper!

Steps:

  • Preheat the oven to 300°F. Choose a baking pan that will accommmodate the ribs in pieces or all hitched together, with the kraut in the space left over. Eight country-style ribs cut into a 6-rib and a 2-rib hunk, plus the can of kraut, fit perfectly in a 9-by-13-inch pan. For more ribs, get a bigger pan and more kraut.
  • Place the ribs in the pan and the sauerkraut in a mound beside them. Cover the ribs - not the kraut - with the barbecue sauce. Use as much as you like, maybe more than half the bottle, maybe less. Cover the pan tightly withaluminum foil and bake for 3 hours. Lift a corner of the foil near the end of the time to sneak a look. The ribs should be nicely browned and glazed and your mouth should water. Serve hot.

The trick to good baked beans is cooking them very slowly with indirect heat. This recipe calls for baking them in a tightly sealed casserole in an oven barely hot enough to toast bread. As the hours pass, the beans drink up a broth flavored with brown sugar (or molasses), mustard and pepper. The gentle cooking prevents the beans from breaking up and becoming mushy. By the time they're done, the pork is falling off its bones and the beans are the classic rusty brown. Be sure to season them amply with salt so the sweetness has a sturdy counterpart. Beard's recipe calls for dark brown sugar. The alternative is to use molasses, which will render a final flavor and color more familiar to canned-bean devotees. The recipe itself requires no great cooking skills - if you can peel an onion and boil water, you're all set - but it will easily take up an afternoon. Plan it for a day when you're at home.

2 cups of white pea beans (navy beans)
1 scant teaspoon salt, plus more to taste
1 medium onion, peeled
4 pork spareribs, or 8 baby-back ribs
1/3 cup dark brown sugar or molasses
2 teaspoons dry mustard
1 teaspoon ground black pepper

Steps:

  • In a large bowl, soak the beans in 2 quarts of water for 6 hours. Drain the beans and put them in a large pot. Add the salt and enough cool water to cover 2 inches above the beans. Bring to a boil, then lower the heat and simmer gently, stirring occasionally, until the beans are just barely tender, 30 to 40 minutes. Drain well.
  • Bring another pot of water to a boil. Preheat the oven to 250 degrees. In the bottom of a large casserole with a tight-fitting lid, place the peeled onion -- yes, whole -- and spareribs (or baby-back ribs). Spread the beans on top. In a small bowl, mix together the brown sugar (or molasses), mustard and black pepper and add this to the beans and pork. Pour in just enough boiling water to cover the beans, put the lid on and bake, occasionally adding more boiling water to keep the beans covered, until they are tender but not falling apart, 4 to 5 hours.
  • Remove the casserole from the oven. Season the beans with salt. Pull the meat from the ribs. Discard the bones and excess fat and stir the meat back into the beans. With the lid off, return the casserole to the oven and let the beans finish cooking, uncovered and without additional water, until the sauce has thickened and is nicely caramelized on top, about 45 minutes more.

4 red potatoes, quartered
1 (16 ounce) jar sauerkraut, drained

Steps:

  • Preheat the oven to 450 degrees F (230 degrees C). Coat a 9x13 inch baking dish with cooking spray. Season the ribs with salt and pepper, and arrange them in the greased baking dish.
  • Roast for 20 to 25 minutes in the preheated oven. Remove from the oven, and reduce the temperature to 350 degrees F (175 degrees C).

4 country-style pork ribs (optional)
2 lbs sauerkraut
2 cups chicken broth

Steps:

  • Place sauerkraut in a large roasting pan.
  • Place ribs on top of kraut and add the chicken broth- pouring it over the ribs.
  • Cover roaster and slow roast in 300 degree oven for about 2 1/2 hours. Shorten cooking time by raising temperature to 375 degrees for 1 1/2 hours if you are in a hurry.
  • Watch out when you remove the lid because the aroma may drive you to dig in before it's out of the oven!
  • Serve individually with mashed potatoes, placing some of the kraut and juice on the potatoes. Or serve family style with ribs on top of kraut.
  • Extended cooking tends to melt the kraut into the broth so if you are cooking it for a long time, add even more kraut. It's good as a leftover too.

2 -4 tablespoons vegetable oil (depending on the amount of fat on the meat)
2 large onions, peeled and sliced
salt & freshly ground black pepper
1/2 cup water, boiling
2 lbs sauerkraut (1 quart)
1/2 teaspoon caraway seed
1 apple, peeled cored and grated

Steps:

  • Heat oil in a Dutch oven over medium high heat; saute ribs until well browned on all sides.
  • Reduce heat to medium, add onions, and saute until translucent; season with 1/4 teaspoon salt and 1/4 teaspoon pepper.
  • Add water, cover, reduce heat to simmer one hour.
  • After an hour, push ribs to one side of Dutch oven and add sauerkraut, caraway seeds, and apple to the other side; cover and cook 20 minutes.
  • Season to taste.

CROWN ROAST OF PORK WITH SAUERKRAUT

  • The crown is sometimes made with two rib ends of the loin and sometimes with the entire loin, which makes a most spectacular roast. Wrap the ends of the rib bones with foil to keep them from charring. Rub the meat with freshly ground black pepper, a bit of sage and rosemary, or just sage and garlic. Make a heavy cushion of foil to fill the center of the crown while roasting. Place on a rack and roast in a 325°F. oven, allowing about 25 minutes per pound. Baste from time to time with white wine.
  • While the roast is cooking, wash 3 pounds sauerkraut, and place it in a kettle lined with strips of bacon. Add 1 teaspoon freshly ground black pepper, a few juniper berries, and enough white wine to barely cover the sauerkraut. Bring it to a boil and simmer. A half-hour before the roast is done, add a Polish or a garlic sausage to the sauerkraut and let them cook together. When the roast has reached an internal temperature of 170°F., remove it to a hot platter. Discard the foil and replace with paper frills.
  • Remove the foil from the center, fill the center with the sauerkraut, and garnish with slices of the sausage. Serve with boiled parsley potatoes and a salad of Bibb lettuce and grated beets. Drink a fruity Alsatian wine such as a Gewürztraminer.

4 slices bacon
1 pound sauerkraut, drained
2 cups dry white wine

  • Preheat the oven to 365 degrees F (185 degrees C). Cut slab of ribs into 3 equal segments.
  • Heat a saute pan over medium-low to low heat. Lightly toast caraway seeds until fragrant, about 30 seconds. Transfer seeds to a coffee grinder or mortar and pestle and grind until powdered; set aside.
  • Place bacon in a Dutch oven and cook over medium-high heat, turning occasionally, until evenly browned, about 10 minutes. Drain bacon slices on paper towels and let cool enough to handle, about 5 minutes. Leave the bacon fat in the pot. Mince the bacon.
  • Season rib pieces with 1/2 of the powdered caraway seeds, salt, and pepper. Set remaining powdered caraway aside.
  • Heat the Dutch oven over medium-high heat. Brown the rib pieces in the hot pot, working in batches and turning as needed, 3 to 5 minutes per piece. Set ribs aside on a plate. Add sauerkraut to the pot with remaining caraway powder and additional salt and pepper. Cook and stir for 5 to 8 minutes. Add bacon and white wine; cook for 5 to 6 minutes more. Return rib pieces and cover the pot.
  • Bake in the preheated oven until ribs are tender and wine has reduced, about 3 hours. Let rest for 8 to 10 minutes before serving.

2 tablespoons extra virgin olive oil
4 cloves garlic, peeled and crushed
2 or more dried red chilies, like serrano
3 to 4 pounds spareribs, cut into individual ribs, excess fat removed
Salt and pepper to taste
3 bay leaves
1 head cabbage, savoy (preferred) or white, 1 1/2 to 2 pounds, cored and shredded
1 cup dry white wine
Chopped fresh parsley leaves

Steps:

  • Put olive oil in a large, deep skillet or casserole that can be covered, and turn heat to high. A minute later, add garlic and chilies. When they sizzle, add ribs, meatier side down; sprinkle with salt and pepper, and add bay leaves. Cook, adjusting heat so the meat browns, 5 to 10 minutes. Turn ribs, and brown again. Remove ribs to a plate.
  • Pour off excess fat, and add cabbage and some more salt and pepper. Cook, stirring occasionally, until cabbage browns. Add wine, and stir to release any brown bits stuck to bottom of pan. Return ribs to pot; adjust heat so mixture simmers steadily but not violently, and cover.
  • Cook, checking occasionally to be sure the mixture does not dry out. (If it does, add more white wine or water.) When ribs are tender and cabbage is very soft -- this will take at least 45 minutes -- uncover. If mixture is soupy, turn heat to high, and cook, stirring occasionally and carefully, until it is more of a moist stew. Garnish with parsley and serve immediately, or cover and refrigerate for up to a day before reheating.

This is a classic French fricassee, a Provençal dish popularized by Richard Olney, James Beard and other great cookbook writers of the postwar generation. An immense amount of garlic cooks slowly alongside the chicken, reducing the pungency of the cloves and replacing it with a thrumming sweetness and intensity. Eat the chicken in its sauce, then spread the softened garlic on bread and dip it in the remaining juices.

2 medium-size onions, coarsely chopped
6 sprigs parsley

Tuck the garlic around and between the chicken pieces.

All seasons are beautiful here, but I especially like fall so I can serve more hearty fare like this. Served with mashed potatoes and pumpkin pie, these ribs soothe the soul.

3 to 3-1/2 pounds country-style pork ribs
1 teaspoon canola oil
1 can (32 ounces) sauerkraut
2 cups applesauce
2 cups thinly sliced onion
3/4 cup chicken broth
3/4 cup apple juice

Steps:

  • In a large skillet over medium-high heat, brown ribs in oil. Arrange ribs in an ungreased 13-in. x 9-in. baking dish. Rinse and squeeze sauerkraut; layer the sauerkraut, applesauce and onion over ribs. Combine broth and apple juice; pour over all. , Cover and bake at 350° for 1-3/4 hours; uncover and bake 15 minutes longer or until onion begins to brown and meat is tender.
