JAMIE'S BAKED BRIE
My ex-wife Jamie's been making this savory Brie en croute since way back before we were married. I think she must have gotten the idea from a magazine, but I've never seen the recipe... I just wing it. It can be made with either puff pastry sheets (quick and easy) or phyllo sheets (more work, flakier shell). Serve with fancy table crackers or digestive biscuits.

- Preheat an oven to 350 degrees F (175 degrees C).
- Stir the shallot, garlic, white pepper, and vermouth together in a small bowl; set aside. Cut the rind off the top of the brie cheese, leaving a 1/4-inch lip around the edge. Place the brie cheese onto a baking sheet, and spoon the shallot mixture over top. Fold the phyllo sheets in half to make square pieces. Wrap the brie with the phyllo squares, tucking the edges underneath of the brie cheese. Trim the corners if needed to avoid tucking too much pastry underneath. You want complete enclosure, but without too much overlap. Brush the top with melted butter to make the pastry brown in the oven.
- Bake in the preheated oven until the phyllo has turned golden brown and the brie cheese is very soft, about 20 minutes. Serve warm.

Steps:
- In a small bowl, mix together brown sugar, amaretto, and almonds.
- Place brie on a microwave safe plate.
- Pour amaretto mixture over brie.
- Microwave on high for 30 second intervals until cheese is soft. (You probably need about 60 secs.) Be careful not to microwave too long!
- Enjoy with bread, crackers, or apples.

BABY BRIE CRAB APPETIZERS

Steps:
- Heat oven to 350°F.
- Trim rind from outside edge of cheese.
- Cut crosswise into 6 strips. Trim rind from each strip.
- To form 30 pieces, cut the 4 longest strips each into 6 cubes.
- Cut the 2 shortest strips each into 3 cubes.
- In small bowl, combine crab meat, mayonnaise, pimiento and shallot.
- Arrange tartlet shells on large cookie sheet. Spoon crab mixture evenly into tartlet shells, about 1 teaspoons each. Top with cheese cube.
- Bake 5 minutes or until cheese is soft and melted.
- Sprinkle with chives.

- Spread out the puff pastry and place the jam in the middle. Top with brie cheese. Fold the puff pastry corners over the brie, so that it's neatly wrapped. Gently press the edges together to smooth down the sides. Flip and place on prepared baking sheet.
- Whisk the egg and water in a small ball then brush over the puff pastry until lightly coated (you won't use all of the mixture).
- Bake for 20 – 25 minutes, until puff pastry is golden. Let cool for a few minutes, then transfer to serving plate or tray. Enjoy immediately. Serve with crackers. Although I also like to eat it by itself :)
