JAN'S HAM AND EGG BREAKFAST STRATA



Jan's Ham and Egg Breakfast Strata image

This recipe was first served to me 35 years ago while up North snowmobiling with a number of families. Now it typically gets served Christmas morning and on Memorial Day weekend while up North with friends. This is always a crowd pleaser and makes great leftovers.

18 slices sandwich bread
3 cups bite-sized cooked ham
8 ounces shredded Cheddar cheese
8 ounces shredded Swiss cheese
6 eggs
3 cups milk
½ teaspoon onion salt
½ teaspoon dry mustard
3 cups crushed corn flakes
½ cup melted butter

Steps:

  • Grease a 9x12-inch baking pan with butter. Combine Cheddar cheese and Swiss cheese in a bowl.
  • Remove and discard bread crusts. Arrange 1/2 the bread on the bottom of the pan. Top evenly with 1/2 the ham and then 1/2 the cheese mixture. Repeat layers of bread, ham, and cheese mixture.
  • Combine eggs, milk, onion salt, and dry mustard in a bowl. Pour over layers in the baking pan, cover, and refrigerate strata 8 hours to overnight.
  • The next morning, preheat the oven to 375 degrees F (190 degrees C). Remove strata from the refrigerator and uncover.
  • Combine corn flakes and melted butter in a bowl and pour evenly over strata.
  • Bake in the preheated oven until set, 50 to 60 minutes. Remove from the oven and let strata sit for 10 minutes before serving.

12 slices white bread, crusts removed
1 pound fully cooked ham, diced
2 cups shredded cheddar cheese
6 large eggs
3 cups whole milk
2 teaspoons Worcestershire sauce
1 teaspoon ground mustard
1/2 teaspoon salt
1/4 teaspoon pepper
Dash cayenne pepper
1/4 cup finely chopped onion
1/4 cup finely chopped green pepper
1/4 cup butter, melted
1 cup crushed cornflakes

Steps:

  • Arrange six slices of bread in the bottom of a greased 13x9-in. baking dish. Top with ham and cheese. Cover with remaining bread. , In a bowl, beat eggs, milk, Worcestershire sauce, mustard, salt, pepper and cayenne. Stir in onion and green pepper; pour over all. Cover and refrigerate overnight. , Remove from the refrigerator 30 minutes before baking. Pour butter over bread; sprinkle with cornflakes. Bake, uncovered, at 350° for 50-60 minutes or until a knife inserted in the center comes out clean. Let stand 10 minutes before serving.

This breakfast strata is great for brunches, holidays, or a yummy family breakfast!! With buttery layers of bread, ham, cheese, and egg, this Ham and Cheese Strata is guaranteed to please any crowd! Better yet, it only takes a short time to prepare.

12 slices white bread (broken up - I cut mine into 12 squares each)
1 lb ham (cooked and cubed)
2 c shredded Monterrey Jack cheese
2 c shredded cheddar cheese
6 eggs
1/2 c butter (melted)
3 c milk

Steps:

  • Grease 9x13 pan.
  • Layer half the bread, half the cheese and then the ham into your pan. Repeat layers.
  • Mix eggs, milk and melted butter in a bowl. Pour over layers.
  • Refrigerate over night or at least for 2 hours.
  • Bake at 350 for 45-50 minutes.

1/4 cup minced fresh parsley
1 green onion, sliced
1 cup cubed fully cooked ham
1 cup shredded Swiss cheese

2 teaspoons Dijon mustard
1/8 teaspoon salt
1/8 teaspoon pepper
1/8 teaspoon hot pepper sauce

Steps:

  • Place half of the bread cubes in a greased 11x7-in. baking dish. Sprinkle with half of the parsley, onion, ham and cheese. A delicious, easy and fuss free breakfast strata made with ham, cheese and egg. It also makes a great brunch or dinner!

8 ounces sourdough bread (cut into ¾-inch cubes (about 6 cups) (I used a whole grain bread, but any version will work))
Cooking spray
8 ounces diced cooked ham (can substitute with an equal amount of cooked bacon or sausage if preferred)
1 cup milk (I used 2% milk, but whole milk would also work. Just don't use skim!)
1/3 cup thinly-sliced green onions
1 ½ teaspoons minced garlic
½ teaspoon black pepper
½ teaspoon grated nutmeg
¼ teaspoon salt
6 large eggs (lightly beaten)
2 ounces cheddar cheese (shredded (about ½ cup))

Steps:

  • Preheat oven to 375°F (190°C).
  • Arrange bread on a baking sheet; coat with cooking spray. Bake for 10 minutes, or until toasted, stirring halfway through.
  • Spray an 8-inch square baking dish with cooking spray.
  • In a large bowl, whisk together milk and next 6 ingredients (through eggs).
  • In bottom of prepared baking dish, toss together toasted bread and diced ham. Pour egg mixture over top. Sprinkle with cheese.
  • Bake uncovered at 375°F (190°C) for 25 minutes, or until strata is puffed around the edges and a knife inserted in the center comes out clean.
  • Note: This casserole can be made in advance and kept covered in the refrigerator overnight until ready to bake.
