JAPANESE-INSPIRED BEEF TENDERLOIN



Japanese-Inspired Beef Tenderloin image

This is a delicious, exciting new way to make your favorite beef tenderloins, marinated in garlic, rice wine vinegar, soy sauce, and sesame oil, and served over cooked spinach, carrots, bean sprouts, mushrooms, and snow peas.

4 (6 ounce) beef tenderloin filets
2 tablespoons salt-free seasoning blend
2 tablespoons soy sauce
2 tablespoons rice wine vinegar
2 tablespoons sesame oil
2 tablespoons ground allspice
1 tablespoon minced fresh ginger
1 tablespoon minced garlic
2 tablespoons extra virgin olive oil, divided
2 cups shredded napa (Chinese) cabbage
1 cup chopped shiitake mushrooms
1 cup chopped cucumber
1 cup bean sprouts
½ cup fresh snow peas, trimmed
1 tablespoon chopped green onions
2 cups chopped fresh spinach leaves
1 cup chopped fresh parsley

Steps:

  • Rub seasoning blend into both sides of filets and place in a large, resealable plastic bag. In a medium bowl, stir together the soy sauce, rice wine vinegar, sesame oil, allspice, ginger, and garlic. Pour marinade into the bag and shake gently to ensure it coats the meat. Refrigerate filets for at least 3 hours or overnight.
  • Preheat oven to 350 degrees F (175 degrees C).
  • Remove filets from plastic bag and reserve marinade. Use a paper towel to pat the meat dry. Heat 1 tablespoon olive oil in a large skillet over medium-high heat. Brown the filets on all sides, about 5 minutes. Place filets onto a baking sheet and bake in preheated oven until they reach an internal temperature of 140 degrees F (60 degrees C) for medium, about 10 minutes.
  • Meanwhile, in a large skillet over medium heat, heat the remaining olive oil. Stir-fry the cabbage, mushrooms, cucumbers, bean sprouts, snow peas, and green onions until tender, about 4 minutes. Stir in the spinach, parsley, and reserved marinade; cook another 5 minutes.
  • To serve, divide the vegetables between four plates; cut the filets into thick slices and place on top of vegetables.

12 small scallions, trimmed to 6-inch lengths
1 lb flank steak (roughly 6 to 7 inches square)
1/4 cup sake
1/4 cup mirin
3 tablespoons soy sauce
1 tablespoon sugar
1 tablespoon vegetable oil

Steps:

  • Prepare scallions: Blanch scallions in a pot ofboiling salted water 45 seconds, then transfer with a slotted spoon to a bowl of ice and cold water to stop cooking. Transfer scallions to paper towels to drain and pat dry.
  • Prepare beef: Cut flank steak with the grain holding a large knife at a 30-degree angle to cutting board into 12 (1/8-inch-thick) slices (1 1/2 to 2 inches wide).
  • Arrange slices 1 inch apart on a very lightly oiled sheet of parchment paper or plastic wrap, then cover with another very lightly oiled sheet of parchment or plastic wrap (oiled side down) and pound slices with flat side of meat pounder until about 1/16 inch thick.
  • Assemble rolls: Arrange 3 beef slices side by side on a fresh sheet of plastic wrap, overlapping slices slightly to form a 6-inch square with short ends of slices nearest you.
  • Sprinkle square lightly with a pinch of salt, then lay 3 scallions (with some white parts at both ends) across slices at end closest to you and tightly roll up meat around scallions to form a log, using plastic wrap as an aid.
  • Tie log with kitchen string at ends and where meat slices overlap. Make 3 more negimaki rolls in same manner.
  • Marinate rolls: Stir together sake, mirin, soy sauce, and sugar in a small bowl until sugar is dissolved.
  • Put rolls in a small baking dish and pour marinade over them, turning to coat. Marinate, loosely covered with plastic wrap, turning occasionally, 15 minutes.
  • Cook rolls: Heat a 10-inch heavy skillet over moderately high heat until hot, 1 to 2 minutes. While skillet is heating, lift rolls out of marinade, letting excess drip off, and pat dry. (Save marinade.)
  • Add oil to skillet, swirling to coat bottom, then cook rolls, turning with tongs, until well browned on all sides, 4 to 5 minutes total for medium-rare. Transfer rolls to cutting board.
  • Add marinade to skillet and boil until slightly syrupy, 1 to 2 minutes, then remove from heat.
  • Cut off and discard strings, then cut each roll crosswise into 6 slices. Pour sauce into a shallow serving dish and arrange negimaki in sauce.

1 cup sherry or reduced-sodium beef broth
1/2 cup reduced-sodium soy sauce
1 envelope onion soup mix
1/4 cup packed brown sugar
1 beef tenderloin roast (2 pounds)
2 tablespoons water

Steps:

  • In a large bowl, combine the sherry, soy sauce, soup mix and brown sugar. Pour 1 cup into a shallow dish; add tenderloin and turn to coat. Cover and refrigerate for 5 hours or overnight. Cover and refrigerate remaining marinade., Preheat oven to 425°. Drain and discard marinade. Place tenderloin on a rack in a shallow roasting pan. Bake, uncovered, 45-50 minutes or until meat reaches desired doneness (for medium-rare, a thermometer should read 135°; medium, 140°; medium-well, 145°), basting often with 1/3 cup reserved marinade. Let stand for 10-15 minutes., Meanwhile, in a small saucepan, bring water and remaining marinade to a rolling boil 1 minute or until sauce is slightly reduced. Slice beef; serve with sauce.

1/2 pound beef top sirloin steak, cut into 1/4-inch strips
2 green onions, thinly sliced
1/4 cup reduced-sodium soy sauce
3 tablespoons sugar
2 tablespoons white wine or unsweetened apple juice
4 garlic cloves, minced
1 tablespoon sesame seeds
1 teaspoon sesame oil
1/4 teaspoon pepper
Hot cooked rice, optional

Steps:

  • Flatten each strip of steak to 1/8-in. thickness. In a large resealable plastic bag, combine the onions, soy sauce, sugar, wine, garlic, sesame seeds, oil and pepper; add the beef. Seal bag and turn to coat; refrigerate for at least 1 hour. Drain and discard marinade., Place beef on a small broiler pan. Broil 3-4 in. from the heat for 2-3 minutes on each side or until meat reaches desired doneness. Serve with rice if desired.

1 lb beef tenderloin
3 tablespoons sherry wine
1 1/2 tablespoons soy sauce
2 teaspoons oyster sauce
1 teaspoon sugar
1 teaspoon cornstarch
1/2 teaspoon baking soda
1/4 teaspoon salt
1 garlic clove, crushed
1 1/2 tablespoons vegetable oil
2 medium onions, thinly sliced

Steps:

  • Remove and discard fat from meat. Cut meat across the grain into thin slices.
  • Combine next 8 ingredients. Mix in meat. Cover and refrigerate 3 hours.
  • Heat oil in wok over high heat. Stir-fry onions in the oil until golden, 3 to 5 minutes. Transfer onions to serving plate. Keep warm.
  • Add about 1/3 of the meat to wok, spreading out slices so they do not overlap. Cook slices on each side just until lightly browned, 2 to 3 minutes. Remove meat from pan and arrange over onion slices. Repeat twice to cook remaining meat.
