Chicken wings are egged and fried in butter, then baked in a tangy sauce of soy sauce, water, sugar, vinegar, garlic powder and salt. Delicious, sticky chicken wings!

3 pounds chicken wings
1 egg, lightly beaten
1 cup all-purpose flour for coating
1 cup butter
3 tablespoons soy sauce
3 tablespoons water
1 cup white sugar
½ cup white vinegar
½ teaspoon garlic powder, or to taste
1 teaspoon salt

Steps:

  • Preheat oven to 350 degrees F (175 degrees C).
  • Cut wings in half, dip in egg and coat with flour.
  • Heat butter in a large, deep skillet over medium-high heat. Fry wings until deep brown. Place in a shallow roasting pan.
  • In a small bowl combine soy sauce, water, sugar, vinegar, garlic powder and salt. Pour over wings.
  • Bake in preheated oven for 30 to 45 minutes, basting wings with sauce often.

While searching for recipes for the Japan region of our Culinary Quest event, I found this yummy appetizer. It is recipe from Nami, who is the author, cook, and photographer behind "Just One Cookbook". The key is to soak the chicken wings in sake for 15 minutes. You don't have to use expensive sake for this process, but you do need 1 and 1/2 cup sake to make sure all the wings are covered in sake. Sake helps remove the gamey taste from the chicken, and this is extremely important when the seasoning for the chicken is just salt! If you like spicy food, sprinkle Shichimi Togarashi.

- 2 lb (16 pieces) chicken wings (i use mid joints), rinsed
- 1½ cups sake
- sea salt
- freshly ground black pepper
- shichimi togarashi (japanese seven spice) (optional)
- lemon wedges (optional)

Steps:

  • Adjust an oven rack to the middle position. Line the bottom of a broiler pan with aluminum foil and place the broiler rack on top. (I use use our gas grill, so I skip this step and just pre-heat the grill, then I cook them over in-direct heat for about 10 minutes then I move them over direct heat for crisping up the skins.)
  • Soak the chicken wings in the sake for 10-15 minutes (Flip at least once).
  • Pat dry each wing with a paper towel and place the wing, skin side up, on the broiler rack.
  • Sprinkle a GENEROUS amount of salt and pepper, and flip the wings to sprinkle the other side. Keep the skin side down.
  • Turn the broiler on high and place the broiler pan in the oven about 6" (15 cm) away from the heat element. Cook for 15 minutes and flip to cook the other side (skin side) for 10 minutes. We like to grill them rather then using the broiler, so use what works best for you.
  • Serve with shichimi togarashi and lemon wedges on the side.

10 chicken wings
2 tablespoons grated fresh ginger
3 spring onions, finely chopped
3 tablespoons sake
3 tablespoons soy sauce
3 tablespoons mirin
1 lemon, quartered
salt
steamed rice, to serve

Steps:

  • Wash the chicken wings and wipe dry. Cut off the wing tips. Bend each wing until you can see the joint, then cut through with a sharp knife. Rub each piece with salt.
  • Mix the grated ginger and most of the spring onions with the sake, soy and mirin. Toss the chicken wings in the marinade until well coated, cover with plastic film and leave for at least 30 minutes.
  • Heat the grill or a cast-iron griddle. Drain the wings, reserving the marinade, and cook on both sides until half cooked, for around 10 minutes. Coat in the marinade once more, then cook for a further 10 minutes, or until golden and tender (chicken always takes longer to cook than you think), turning once or twice. Scatter with the remaining spring onions and serve with lemon wedges and steamed rice.
