My neighbour Jenn delivered this wonderful dessert to our door last week. Tastes just like the drumstick cones you get at the store. Super easy to make, and wonderful to have on hand when unexpected company arrives...or a spur of the moment treat. :) I made mine in a 9x13 plastic container with a fitted lid. This version is slightly different than those already posted here on Zaar.

2 cups vanilla wafers, crushed (1 box)
1/2 cup peanuts, chopped
1/2 cup butter, melted
2 tablespoons crunchy peanut butter
1 (8 ounce) package light cream cheese, room temperature
1/2 cup sugar
1/2 cup crunchy peanut butter
4 eggs
2 teaspoons vanilla
1 liter fat-free cool whip (large tub)
6 tablespoons chocolate syrup
crushed peanuts, optional for garnish

Steps:

  • Mix together all the ingredients for the bottom layer. (a food processor does the job beautifully) Reserve 1/4 cup for garnish. Press remaining mix into a 9 x 13 container.
  • In a large bowl, mix together cream cheese, sugar and peanut butter until smooth. Add eggs, one at a time. Add vanilla. Fold in Cool Whip. Spread this over the wafer base.
  • Drizzle syrup over top, and sprinkle with reserved crumbs and extra crushed peanuts if using. Freeze for 2 - 3 hours.
  • Cut into 15 serving pieces and return to the freezer -- (supposedly for safe keeping). Freeze overnight.
  • Remove servings as needed, 1/2 hour before serving. Keep unused portions in the freezer.

I make these often it's a wonderful easy recipe and they are very moist! Serving size is only estimated depending on the size you cut the squares. You can even add in nuts in place of the chocolate chips or use about 6 ounces each!

1/2 cup oil
2 cups brown sugar
2 eggs
3 cups flour
1/2 teaspoon salt
1 teaspoon baking powder
1 teaspoon baking soda
1 teaspoon cinnamon
1 teaspoon vanilla (can use 2 teaspoons)
1 cup strong black coffee
12 ounces chocolate chips (or to taste)

Steps:

  • Set oven to 350 degrees.
  • Grease a large cookie sheet.
  • In a bowl combine oil, sugar and eggs, beat until well combined.
  • In another bowl, combine dry ingredients, except chocolate chips, then add to the oil/sugar mixture; mix well.
  • Add the vanilla and coffee; mix until combined.
  • Stir in chocolate chips.
  • Spread on a cookie sheet.
  • Bake for about 35 minutes or until bars tests done.
  • Cool and cut into squares.
  • Delicious!

1 1/2 cups crushed graham wafers
1/2 cup crushed peanuts
1/4 cup melted butter
2 tablespoons peanut butter
8 ounces cream cheese
1/2 cup white sugar
1/2 cup peanut butter
1 teaspoon vanilla
3 eggs
1 (16 ounce) container Cool Whip
8 teaspoons chocolate syrup or 8 teaspoons fudge sundae sauce

Steps:

  • Mix first 4 ingredients and press into a 9x13 pan (Save a few crumbs for top).
  • Cream next 3 ingredients together.
  • Add vanilla, the eggs, and cool whip.
  • Spread filling into crust.
  • Dribble on sauce and marbilize with a knife.
  • Sprinkle remaining crumbs on top.
  • Freeze.
  • Thaw before eating.
  • (1 1/2 hrs).
