TRADITIONAL CHILAQUILES



Traditional Chilaquiles image

This is a traditional recipe that is good to eat as breakfast with fried eggs or as a dinner main course with a salad.

8 fresh tomatillos, husks removed
1 white onion, coarsely chopped
1 poblano pepper, peeled and seeded
1 jalapeno pepper, seeded
¾ cup chopped cilantro
4 cloves garlic
2 leaves fresh mint
salt to taste
3 cups shredded cooked chicken
¼ cup vegetable oil
12 (6 inch) white corn tortillas, cut into 3 strips
¾ cup shredded pepperjack cheese
¾ cup shredded Monterey Jack cheese

Steps:

  • Preheat oven to 375 degrees F (190 degrees C).
  • Blend tomatillos, onion, poblano pepper, jalapeno pepper, cilantro, garlic, mint, and salt in a blender until smooth. Transfer mixture to a saucepan and bring to a gentle boil. Reduce heat to medium-low and simmer until thickened, stirring often, about 10 minutes. Add chicken to tomatillo sauce and continue to simmer until chicken is heated through, about 5 minutes more.
  • Heat vegetable oil in a large skillet over medium heat. Fry tortilla strips in batches until crisp and lightly browned, 5 to 7 minutes. Drain on a paper towel-lined plate.
  • Layer about half the fried tortillas in a 2-quart baking dish; spread half the tomatillo sauce over tortillas. Mix pepperjack cheese and Monterey Jack cheese in a bowl; sprinkle half over tomatillo sauce. Repeat layers.
  • Bake in preheated oven until cheese is golden and bubbly, 30 to 35 minutes. Allow to cool 5 minutes before serving.

5 tablespoons corn oil
8 (8 inch) corn tortillas, cut into triangles
6 eggs
1 cup chipotle salsa
1 cup shredded pepper Jack cheese
salt and ground black pepper to taste

Steps:

  • Heat oil in a large skillet over medium-high heat and pan-fry tortilla triangles until they are just starting to turn golden brown and crisp, 3 to 5 minutes. Add salsa, reduce heat to medium-low, and carefully mix tortillas and salsa with a spatula. Cook for 5 minutes.
  • Beat eggs, salt, and pepper in a small bowl. Add eggs to tortillas and increase heat to medium-high. Scramble eggs gently until just set. Top with pepper Jack cheese, cover, and turn off the heat. Let sit for 3 minutes until cheese is melted.

This recipe is a gift to my husband. We took our first vacation ALONE without kids in over 10 years to the Riveria Maya in Mexico this November. We had an amazing time! Mexican food has always been our favorite but we were delighted to have an authentic Mexican breakfast for the first time. Every morning we had omelettes made to order with everything else you could imagine on the side. The new big thing for us was Chilaquiles...It was the best addition to our breakfast! So, the weekend after we came home, I went to work. Amazingly, I think I perfected it right away. I just took what I thought I tasted and went with it. Pair this with eggs 'your style' and whatever else your heart desires, and you will be glad to make it again and again. I also found out while in Mexico, apparantly this is THE BEST hangover fix known to man...just to let you know...Also, when I was looking for the perfect Mexican tomato sauce, I stumbled upon El Pato Brand Tomato Sauce (Mexican Hot Style) and it is perfect for this dish!!!! Please look for it when trying this for the first time. (It's a yellow can with a duck) If you can't find it, I'm sure your favorite salsa will work. This was originally created by using leftovers, so use what you have!

6 -8 corn tortillas, stale and torn in pieces
1/4-1/3 cup olive oil (I use the least amount possible)
7 3/4 ounces el pato tomato sauce (yellow can with duck, can use more if needed)
1/3-1/2 cup chihuahua cheese, grated (or queso blanco)
1/2 red onion, sliced thin
1/4 cup cilantro, chopped
salt

Steps:

  • Heat olive oil in large skillet. Oil is ready when small piece of tortilla thrown in bubbles. Fry tortillas in batches, until crisp and golden. Remove and drain on paper towels. Drain oil, reserving enough to leave a nice residue in pan.
  • Add tomato sauce to pan and stir over medium heat until warm. Add tortillas and stir together until warm. Add salt to your liking. Top with cheese. Take off heat. Once cheese melts, add onions, then top with cilantro. Serve with eggs, refried beans, breakfast potatoes, whatever you like.

¼ pound chorizo
2 skinless, boneless chicken breast halves, cut into 1-inch cubes
½ (10 ounce) bag tortilla chips
1 cup frozen corn kernels
1 (19 ounce) can green enchilada sauce
½ cup sour cream
2 cups shredded Monterey Jack cheese

Steps:

  • Preheat an oven to 400 degrees F (200 degrees C).
  • Cook the chorizo in a skillet over medium heat, stirring to break it into tiny pieces. Place the raw chicken into the skillet with the chorizo; cook and stir the meats together until the chicken is no longer pink in the center, about 10 minutes.
  • Spread half of the tortilla chips over the bottom of a casserole dish; top the chips with the cooked chorizo and chicken mixture. Sprinkle the corn evenly over the meats and layer the remaining chips over the top. Whisk together the green enchilada sauce and sour cream in a mixing bowl; pour over the top of the casserole. Top the casserole with the shredded Monterey Jack cheese.
  • Bake the chilaquiles in the preheated oven until the casserole is bubbly and the chips begin to brown, 15 to 20 minutes.
