These flavorful chicken breasts are grilled to perfection, then topped with a sweet and spicy, colorful pineapple salsa. The dish is mildly spicy, however you can adjust the amount of jalapeno to suit your tastes. Use your favorite brand of seasoning and adjust the salt right before serving, as some brands are saltier than others.

4 (6 ounce) boneless, skinless chicken breasts
1 tablespoon olive oil
2 tablespoons Jamaican jerk seasoning
1 cup diced pineapple
¼ cup diced red bell pepper
1 small jalapeno pepper, seeded and minced
2 tablespoons minced red onion
2 tablespoons minced fresh cilantro
1 tablespoon lime juice
¼ teaspoon salt

Steps:

  • Preheat an outdoor grill for medium-high heat and lightly oil the grate.
  • Pound chicken to a 1-inch thickness for even grilling. Brush oil over chicken and sprinkle Jamaican jerk seasoning evenly on both sides. Set aside.
  • Combine pineapple, red pepper, jalapeno pepper, red onion, cilantro, lime juice, and salt in a small bowl for the salsa. Set aside.
  • Place chicken on the hot grill and lower heat to medium. Grill until chicken is no longer pink in the center and juices run clear, 12 to 14 minutes, turning halfway through. An instant-read thermometer inserted into the center should read at least 165 degrees F (74 degrees C). Transfer to a plate to rest for 5 minutes.
  • Top chicken with salsa mixture and serve.

1 tablespoon honey
1 tablespoon lime juice
1 cup finely diced pineapple
1/3 cup finely diced, seeded English cucumber
1 tablespoon chopped fresh mint leaves
4 teaspoons olive oil, divided
4 skinless, boneless chicken breast halves, about 5 ounces each, pounded to 1/2-inch thick
1 cup chopped scallions (about 6 scallions)
1/2 Scotch bonnet or habanero chile pepper, seeded and finely minced (wear gloves when handling)
1 clove garlic, minced
1 teaspoon grated fresh ginger, or 1/4 teaspoon ground
1 teaspoon allspice
1 1/2 teaspoons fresh thyme or 1/2 teaspoon dried
1/2 cup low-sodium chicken broth
2 tablespoons reduced-sodium soy sauce
2 tablespoons lime juice

Steps:

  • In a small bowl whisk together the honey and the lime juice. Combine the pineapple, cucumber and mint in a medium bowl, pour the dressing over and toss to combine. Set aside.
  • Heat 2 teaspoons of olive oil in a large skillet over a medium-high heat. Add the chicken breasts and cook for about 4 minutes on each side, or until browned and cooked through. Transfer the chicken to a plate and cover with foil to keep warm.
  • Add the remaining 2 teaspoons of oil to the pan. Stir in the scallions, pepper, garlic, ginger, allspice, and thyme. Cook for 30 seconds over a medium heat. Add the chicken broth and soy sauce and cook until liquid is reduced by half, about 3 minutes. Stir in the lime juice. Put the chicken back in the pan and coat well with the sauce.
  • Serve with the pineapple salsa.

1 tbsp jerk seasoning
2 garlic cloves , finely grated
thumb-sized piece ginger , finely grated
1 lime , zested
2 tbsp rapeseed oil
4 small or 2 large whole sea bass , gutted and scaled
100g pineapple , finely chopped
½ cucumber , finely chopped
¼ small red onion , finely chopped
3 large tomatoes , finely chopped
½ small bunch coriander , finely chopped, plus extra to serve
2 limes , zested and juiced, plus extra charred wedges, to serve

Steps:

  • Mix the jerk seasoning, garlic, ginger, lime zest and oil in a bowl. Using a sharp knife, cut slits in the skin of the fish and rub liberally with the marinade. Leave on a tray in the fridge for at least 1 hr.
  • For the salsa, combine all the ingredients, cover and leave to marinate at room temperature for up to 1 hr until ready to serve.
  • Put each fish on a sheet of foil, and bring the sides around to make an open-topped boat shape. Cook for 15-20 mins on a barbecue, turning halfway, or until cooked through. Alternatively, heat the oven to 220C/200C fan/gas 7 and bake the fish on a non-stick baking tray for 15-20 mins or until just cooked. Serve scattered with the extra coriander and the salsa on the side.

1 tablespoon olive oil
1/2 lemon, juice of
4 teaspoons caribbean jerk seasoning
2 tablespoons light soy sauce
1 tablespoon honey
pineapple chunk, diced
1/2 red pepper, diced
1/2 red onion, finely diced
1/2 lemon, juice of
1 teaspoon cilantro, chopped
1 teaspoon olive oil
salt and black pepper

Steps:

  • Pre-heat the oven to 425°F
  • Score the flesh of the chicken and place in a shallow dish.
  • Mix together the remaining ingredients and pour over the chicken.
  • Cover and refrigerate. Leave to marinade for at least 30 minutes.
  • Meanwhile, prepare the salsa by simply mixing all the ingredients together in a bowl.
  • Place the chicken on a baking tray and cook in the oven for 25-30 minutes, until cooked through.
  • Serve the chicken with the salsa and rice.

  • Mix together the jerk seasoning: garlic powder, onion powder, coconut sugar, paprika, cumin, thyme, allspice, cinnamon, cayenne pepper, sea salt, and black pepper. Generously rub on both sides of the chicken.
  • Heat a cast iron skillet to medium high heat for three minutes. Once hot, add the oil and warm for 30 seconds.
  • Place the chicken in the hot skillet. Sear for 2 minutes, then flip. If chicken is "stuck" wait another 30 seconds, and try again (it might not be ready to flip!). Now cover with a lid and reduce heat to medium low. Cook for 10-12 minutes, or until internal temperature reaches 165F. Remove chicken from the skillet and let rest on the cutting board for at least 5 minutes until slicing.
  • Meanwhile, make the salsa. Toss together the pineapple, tomatoes, onion, cilantro, lime juice, jalapeno pepper (if using), and sea salt. Spoon on top of the chicken and serve!
