MILK AND COOKIES FUDGE



Milk and Cookies Fudge image

1 cup chocolate chip cookie dough, homemade or prepared
Nonstick cooking spray, for the baking dish
One 14-ounce can sweetened condensed milk
Two 12-ounce bags white chocolate chips
8 ounces cream cheese, at room temperature
1/4 teaspoon kosher salt
1 pound confectioners' sugar, sifted
2 tablespoons red sprinkles
2 tablespoons green sprinkles

Steps:

  • Preheat the oven to 350 degrees F. Line a baking sheet with parchment.
  • Divide the cookie dough between 2 pieces of parchment or wax paper. Spread out the dough lengthwise across the paper, then roll the paper to cover it and use your hands to roll the dough pieces into 14-inch logs about 1/2-inch thick. Slice into 1/4-inch rounds and place on the prepared baking sheet about 1 inch apart. Bake until golden brown, 8 to 10 minutes. Remove to a cooling rack.
  • Spray an 9-by-13-inch baking dish with nonstick cooking spray, then line with parchment, leaving a 2-inch overhang.
  • Crumble half of the cookies into small pieces, reserving the rest whole for topping. Heat the sweetened condensed milk in a large saucepan over low heat. Add the white chocolate chips, cream cheese and salt and cook, stirring, until melted and smooth. Slowly add the confectioners' sugar, stirring it in vigorously.
  • Remove from the heat and stir in the crumbled cookies and red and green sprinkles. Spread into the prepared baking dish. Arrange the whole cookies on top of the fudge sticking upright at different angles. Freeze for 1 hour or until firm.
  • Cut into 1-inch squares. Serve chilled or at room temperature.

1/2 cup butter, softened
1/2 cup creamy peanut butter
1/2 cup sugar
1/2 cup packed light brown sugar
1 large egg
1/2 teaspoon vanilla extract
1-1/4 cups all-purpose flour
3/4 teaspoon baking soda
1/2 teaspoon salt
FUDGE FILLING:
1 cup milk chocolate chips
1 cup semisweet chocolate chips
1 can (14 ounces) sweetened condensed milk
1 teaspoon vanilla extract
Chopped peanuts

Steps:

  • In a large bowl, cream butter, peanut butter and sugars until blended. Beat in egg and vanilla. In a small bowl, whisk flour, baking soda and salt; gradually beat into creamed mixture. Refrigerate, covered, 1 hour or until easy to handle., Preheat oven to 325°. Shape into forty-eight 1-in. balls. Place in greased mini-muffin cups. Bake 14-16 minutes or until light brown. Immediately press a 1/2-in.-deep indentation in center of each cookie with the end of a wooden spoon handle. Cool in pans 5 minutes. Remove to wire racks to cool completely., For filling, in a microwave, melt chocolate chips; stir until smooth. Whisk in milk and vanilla until smooth. Fill each cookie with filling; sprinkle with peanuts. (If desired, refrigerate remaining filling; serve warm with ice cream.)

3/4 cup granulated sugar
1/2 cup butter or margarine, softened
1/2 cup shortening
1 teaspoon vanilla
2 eggs
2 oz unsweetened baking chocolate, melted, cooled
2 1/4 cups Gold Medal™ all-purpose flour
1 teaspoon baking soda
2 packages (4.67 oz each) foil-wrapped rectangular créme de menthe thin chocolate mints, unwrapped, coarsely chopped
1 1/2 cups semisweet chocolate chunks

Steps:

  • Heat oven to 350°F. In large bowl, beat brown sugar, granulated sugar, butter, shortening, vanilla and eggs with electric mixer on medium speed until smooth. Beat in melted baking chocolate. On low speed, beat in flour and baking soda until well blended. Reserve 1 cup of the chopped mints. Stir remaining mints and the chocolate chunks into dough.
  • On ungreased cookie sheets, drop dough by 1/4 cupfuls 2 inches apart.
  • Bake 11 to 15 minutes or until centers of cookies no longer look moist (do not overbake). Immediately sprinkle with reserved mints. Cool 1 minute; remove from cookie sheets to cooling racks.

1/2 cup butter, softened
2 large eggs, room temperature
1 tablespoon water

  • Preheat oven to 375°. In a large bowl, mix cake mix, butter, eggs and water to form a soft dough. Shape dough into 1-in. balls; roll in confectioners' sugar. I used an existing Jello gelatin recipe and changed it up to come up with this recipe. I added my favorite things and took out things I didn't like. I love Jello Pudding and you can make this recipe in any flavor pudding that you like. I added protein powder and used soy flour because I am always trying to cut back on carbs. You can use regular flour in place of these if you like. These cookies are also very good frozen. These are not quite as tasty as regular cookies but hit the spot if you are looking for a protein enriched dieter's cookie.

1/4 cup applesauce
1/4 cup Splenda sugar substitute
1 ounce Jell-O pudding mix (Sugar Free Fat Free Jello Instant Pudding small package)
1 egg
1/4 cup whey protein (powder form)
1/4 cup soy flour
1 teaspoon vanilla
1 teaspoon mint extract
1 teaspoon baking powder
1/2 cup semi-sweet chocolate chips (optional)

Steps:

  • Preheat oven to 350 degrees.
  • Stir all ingredients together in a bowl until batter forms a dough like consistency. Batter will be very sticky.
  • Spoon dough onto a greased and floured cookie sheet or spoon into a mini muffin tin filling each slot halfway full.
  • Bake about 8-10 minutes at 350 or until tooth pick comes out mostly clean. These cookies will stay very moist and cake like inside but will firm on the outside.
